How was your Valentine’s Day? I’m writing this in advance so I don’t know how mine went, but I can tell you my Husband and I checked out a new Italian restaurant that opened in our neighborhood. I have to say the prices were great but we were disappointed We both ended up with a stomach ache when we got home. The food was ok, but not great, at least not worth a stomach ache. I can handle a stomach ache if the food was superb! I know how stupid huh? Well I like good food no matter what the consequences are. lol Needless to say, my guess is we won’t be going there anymore. My Husband told me it was my early Valentine’s Dinner. Not fair!!
I have to tell you I am pretty stoked! I got some new cookware that was so needed. You have no idea, how bad I needed a new frying pan! Wait till you see the picture! Your going to laugh and think what the heck! Maybe you have noticed for the past couple of months, I have only baked, grilled and crockpot my meals for you. I refuse to use my frying pan, not only is it gross, its not safe! So I got a Wild Orange 9 1/2″ skillet from Silit! I love my new frying pan! It’s easy to clean, fun color, it’s energy sufficient and Heat-resistant glass lid for water-reduced! I am in love!!! You have to love the orange color, it’s so me!!!
Plus, while I was at it, I got these 5 piece, Crazy Yellow Silit Mini MAX set! I got one 1 – 2qt High Casserole with lid, 1 – 2qt Stockpot with lid, 1 – 6 inch Fry and Serve Pan, and 2 – Glass lids / Universal size. They are so cute and perfect for cooking for my Husband and I. These babies are Nickel-free, anti-bacterial, neutral to taste – for cooking, serving and storing foods the gentle way, Heat-resistant glass lid with high-quality stainless steel rim, energy sufficient, oven proof and easy to clean! You gotta love all of that!!
Plus they stack so nicely in my cupboard!! I was really on a crazy color kick! I love to have fun in the kitchen! Plus with my mini kitchen makeover this gives me more storage space and I need that big time! I still have food in boxes on my counter! I can’t wait for the kitchen to be done!
I bet you’re wondering, what about my pan I was using? I’m a little embarrassed to show you, but hey it’s the truth! This is just one pan, I have two others that look the same way, that made their way into the trash this week!! Believe me, I have not used them in months! I should have gotten rid of them a long time ago!
Now can you see why I needed a nice new frying pan? So gross! So embarrassing ! Now let’s get to some good, healthy food!!! Today I made for you my easy, quick Lemon Chicken with Broccoli. This dish comes together in about 10 minutes!! Perfect for a quick dinner!
My boss gave me a ton of lemons to use, and let me tell you they are the biggest lemons I have ever seen. I know lemons grow big in California but this maybe a little to big! Check out this lemon! I put a regular lemon next to it, so you can see!
Crazy, huh? Have you ever seen such a big lemon? He gave me some lemons that were even bigger!! And oddly enough they tasted good! Plus they were perfect for adding to my dinner! I saved the left over juice for my morning hot water and lemon. I like to drink that every morning before anything else. It cleans and detoxifies your kidneys and liver.
After my trip to Vegas and holiday treats, it was time to get down to a nice healthy meal and I have say, I am very pleased with it. The chicken was tender, with just enough seasoning and has a nice zing to it from the lemons! Plus I love the broccoli with it. It compliments the chicken perfectly. My Husband wasn’t to thrilled with broccoli with our dinner, but hey, it’s good for you and I LOVE it!! I’m a HUGE broccoli fan! though Trader Joe’s could have sold me more green color broccoli, but it still tasted good!
- 8 oz chicken, skinless boneless
- 1 dash salt
- ½ - 1 tsp. pepper (depends how much you like)
- ¼ cups chicken broth
- ¼ cup lemon juice
- 1 tsp dill, dry or fresh
- ¼ tsp. garlic powder
- 2 cups broccoli
- In a skillet add chicken, salt, pepper, chicken broth, lemon juice, dill and garlic powder and cook for about 5 minutes. Flip the chicken and cook for 5 minutes more or until chicken is no longer pink.
- Once chicken is done, add broccoli to the pan and cover with lid; cook for one minute.
- Serve on it's own or over rice or pasta.
It’s time to get healthy! After my Doctors appointment, I kept hearing, well at your age, you need more calcium, at your age you need more fiber! Geez! How old did he think I was? Anyway the good old Doc was right! My goal has been and will be even more to be healthier! I have lots of fruit and vegetables in the refrigerator so I hope you will join me on some healthy eats! I’m really trying and though it can be hard sometimes, I know I can do it and I know you can do it!!! Heck, I want to look semi-normal in my bathing suit this summer! 🙂

I’m from Southern California and those look like good lemons! The joy of living there is that lemon trees grow so well in backyards and the lemons so often grow to gigantic, deformed sizes! Great recipe

I was surprised how good the menons were. Lots of good flavor. I figured they would be bland, but they weren’t. Now I just need to find gigantic oranges! I like lemons, but I am on a major orange kick! 🙂

Wow! Those lemons look amazing. I wish I could have fruit trees, but most die in Michigan durng the winter [and I dont get enough sunlight for any others]. Your new pans look awesome, too! Love the colors.

I made this for dinner tonight and it was outstanding! I added mushrooms and let them cook covered with the chicken and broccoli for 5+ minutes at the end but it came out great! I just sent a bunch of my friends the link 🙂
