Chocolate Coconut Mousse

February 13, 2013 By Jennifer @ PB and P Design 33 Comments

Hi Everyone,

Well one more day till Valentine’s Day!  I can’t believe how times flies!  It feels like Christmas was yesterday!  Today I have for you the most creamy, decadent chocolate dessert,  that is no bake, easy to make and is so perfect for Valentine’s Day!  I promise it will please any chocolate lover in your life!

Chocolate Coconut Mousse

This is my Chocolate Coconut Mousse.  Let me tell you, this will satisfy any chocolate craving that you have!  I wasn’t kidding you when I said this is so decadent and rich!   I decided to make a mousse for my Husband for an early V-day treat!  I never saw someone who loved or ate so much chocolate as much as my Husband!  He’s worse than me, and I didn’t think that was possible!!

Chocolate Coconut Mousse

I made this mousse with canned, full fat coconut milk.  I bought it at Trader Joe’s.  What you must do, is take your full fat coconut milk, leave it in the can and put it in the refrigerator for at least 24 hours.  When your ready to use it, carefully open the can and spoon out the solid coconut.  Do not use the liquid at the bottom of the can.  You should have about a half cup of left over coconut liquid. You can discard it or use it in a smoothie.  Just don’t add it to the mousse. I also used 4 oz of fat free cream cheese, which works out nicely, however, since it’s fat free, you tend to get little white specks of cream cheese.  That doesn’t bother me, but if you want it to look perfect, I would recommend 1/3 less fat cream cheese.

Chocolate Coconut Mousse

This dessert would be really easy to make vegan!  I would skip the cream cheese all together or use a vegan cream cheese.  I am amazed how coconut can be whipped up to be like whipped cream!!  I love it!!  I have been just dying to try this kind of recipe!!  I can’t wait for my Husband to come home so he can try it!  I just know he will be tickled pink!!

A rich, decadent, creamy chocolate mousse made with coconut milk and cream cheese.
Serves: 4½ cup servings
Ingredients
  • 4 oz cream cheese, fat free
  • ½ cup NuNaturals PreSweet Tagatose or sugar
  • 1 tsp. vanilla extract
  • 1 14oz can coconut, full fat
  • ⅓ cup unsweetened cocoa powder
Instructions
  1. Place the coconut milk in the refrigerator for 24 hours. Do not open or shake the can. Don't touch it!
  2. The next day:
  3. In a large mixing bowl add cream cheese and sugar; beat until combined. Add vanilla extract and beat until incorporated. Very important; Spoon out the coconut cream and place in cream cheese mixture and beat until light and fluffy. ( NOTE: do not use the liquid coconut milk, you just want the solids from the can. You should have about a ½ cup of liquid coconut milk left over. Discard it or use for another purpose.) Beat in cocoa powder, until light and fluffy. You may have to scrap down the sides of the bowl a few times. Taste to see if you need more sugar or cocoa powder.
  4. Evenly divide into 4 cups and serve! You can also top with fresh berries!

Chocolate Coconut Mousse

I posted this recipe today because you need 24 hours for the coconut milk to be refrigerated  if you decided to make it!  I’m telling you if you are a chocolate lover this is the dessert for you.  Yes I know there is fat in it, but it’s a healthy fat!  A little bit of fat once in a while is ok, just don’t have it for dessert every night!  🙂

Have a great day everyone!

Toodles,

Jennifer

I have never heard of the “presweet” ingredient and have no idea where to get this. I won’t be making this for Valentine’s Day, but I will be making this on Monday with dinner. It’ll be such a great way to start off the week. Also, perfect timing considering I’ll be going to Trader Joe’s on Saturday-I absolutely LOVE Trader Joe’s and all the great products they have!!!!

It’s time for my annual pumpkin bath picture. I It’s time for my annual pumpkin bath picture. I don’t know what it is, but I love to give pumpkins a bath. Don’t they look cute bathing in the sunlight with bubbles around them? lol
🎃
There are two methods that I have used in the past; the chlorine bath and the dish soap bath. This is what I have learned.
🎃
My favorite and only way I wash pumpkins now is using dish soap. It gets rid of the sap and makes them clean. I soak my pumpkins for about 20 minutes. The pumpkins will last until December. Plus if you keep your pumpkins after the holidays it will decay and grow pumpkins the following year. Plus it’s safe for animals that may nibble on your pumpkin.
🎃
The chlorine bath method will make your pumpkins last possibly up to a year. They take very long to break down and I never got my pumpkins to seed themselves. Plus it is not safe for animals in my opinion. Though Clorox Bleach says it’s safe, they just taste salty.
🎃
The key to washing pumpkins is to make sure that you get the area around the stem dry. You don’t want water around the stem. This could make your pumpkin rot sooner. So after the bath, dry your pumpkins off very good.
🎃
Did you get your pumpkins yet?
.
PS if you are in the Bay Area, I highly recommend going to @threenunnsfarm to get your pumpkins. They have a wide variety and the pumpkins and are .75 a pound. I bought all these pumpkins for $42.

Hello Tuesday! Hope you are doing well. It’s sta Hello Tuesday! Hope you are doing well. It’s starting to feel like Fall here in Northern California. The mornings and evenings are feeling crisp. I can’t get over that we are in the middle of September. Where did the Summer go?
🎃
I’m sharing with you the corner of my living room where I store my pumpkins that I grew before I can take them outside. It’s been too warm for them and I want them to last through October. They have been doing well, as they have been here since the middle of August.
🎃
I’m excited because this Saturday our local pumpkin patch will be opening. They have a huge variety of pumpkins and very inexpensive too. I’ll be stocking up. I just love this time of year.

I’ve taken a little break from posting here because I have been busy on the dogs Instagram page. It’s hard to keep up on both. The dog page is so busy with birthdays, events and engagement. They have a busier social life than me.

I am sharing with you the last view of my kitchen before it is filled with Halloween. I spent 6 hours yesterday cleaning all the cabinets, appliances, sink and floor. I even did the windows. It sure tired me out. I’m not as young as I used to be. But it is so sparkly clean. I did put up my Halloween and I can’t wait to share with you. The dining room is the next room to conquer.

Hi, it’s me Samuel!! I am taking over mamas page Hi, it’s me Samuel!! I am taking over mamas page today because I got the best gift in the whole world and it even came in the mail on my birthday. How did @downlitebedding know? They are so good!
🐾
Downlite Bedding sent me the EnviroLoft® Down Alternative PrimaCool™ Cooling Comforter. Isn’t it beautiful? It’s so soft, cozy, hypoallergenic and it makes me so happy.
🐾
The comforter is 400 thread count, it has moisture wicking and cooling technology to help regulate body temperature, which is perfect since I get warm in the summer with all my hair and I like to be cool when I’m sleeping. A big plus is the comforter is white, I hide very well in it. It’s hard to see me. So mama can’t catch me on her bed.
🐾
The EnviroLoft® Down Alternative PrimaCool™ Cooling Comforter also has a Scotchguard stain release fabric and machine wash and dry. It’s truly an amazing comforter.
🐾
Mama let me do this takeover today because she knows that I love @downlitebedding as much as she does. She said she has never seen me get so excited as I do when we get Downlite Bedding and pillows in the mail. How can I not get excited? It’s like sleeping on a cloud!
🐾
Downlite Bedding was kind enough to give us a 20% discount: DYGEN20

Happy Thursday! Here is a view of my garden that I Happy Thursday! Here is a view of my garden that I took a couple weeks ago. My garden really overgrew this season. I need to do some major work in it, but with the heat, it’s just unbearable to be out there too long.
🌼
I had a lot of zinnias self-seed this season which is cool, but they kind of took over. They crowded out some plants, so I need to get in there and pull some out. Plus being so crowded, they got powdery mildew. Yuck!
🌼
I’m thinking for the Fall making this area a little harvest pumpkin area. We will see. I have grand ideas in my head, but I don’t always follow through. lol
🌼
How your garden growing? I lost all my potted plants from the heat. 😩

Hello Monday! This weekend I made a little charcut Hello Monday! This weekend I made a little charcuterie setup for my husband and I. This is something that I just love to do. I could just eat this type of meal all day long.

I am sharing the “All White Collection” from @bzaar_wholesale. Each piece to the collection is so elegant and can be used all year round and would be gorgeous around the holidays.

The tray is made of marble with beautiful gold handles. The cheese knives are gold with solid marble handles and compliments the tray perfectly.

I used the marble flower shaped bowl for putting chocolates, but would be so stunning to use on your coffee table, side table and more.

The cake stand is has a marble base with Mother of Pearl edging and has a glass lid to go over the top. I will be putting my cakes and cookies on it in the future, but for now I used it to place my bruschetta.

@bzaar_wholesale has amazing products for your home, great pricing and global shipping. The link is in my bio.

Do you like making charcuterie boards? What do you add to yours?

Hello, hello! It may be 100 degrees outside, but I Hello, hello! It may be 100 degrees outside, but I can’t resist putting out some Fall. Especially when you get new decor from @12timbers. You would laugh if you came into my living-room. Half my room is Fall, the other half is still coastal blues. lol I’ll eventually change it all out.
🍂
Let’s talk the art work. Isn’t it stunning? My husband never says anything about my decor, but he keeps talking about how much he likes the framed art from 12 Timbers. I agree, it’s so beautiful. It reminds me of when I lived back east and we would go to Letchworth Park in NY. The colors are stunning and goes perfectly with the burnt orange color that I’m using this season.
🍂
I just adore the wooden cut out pumpkins from @12Timbers. When I look at them they make me smile. The orange wooden leaf is the perfect piece to bring everything together. This gets me so excited for Fall decorating. Now to finish the rest of the living room.
🍂
12 Timbers is so kind to give me a discount code. It’s good until Saturday at midnight. The code is PBANDP15.

They started to grow early this season so it’s time to start picking. Unfortunately the massive one I showed you a couple weeks ago didn’t make it. It collapsed in the middle. That makes me sad, but at least I have more pumpkins growing.

I really had fun bringing out some Fall decor. Fall is not my favorite season, as I love Spring and Summer, but Fall is my favorite to decorate for.
🎃
I wanted to share with you my new reversible blocks from @krumpetshomedecor. Aren’t they cute. They would look so pretty on a shelf. The one side says Fall and the other side says Boo! The two wooden pumpkins are also from Krumpets Home Decor.

Hello Tuesday! One of my favorite summer drinks is Hello Tuesday! One of my favorite summer drinks is a nice cold glass of lemonade. I like it a tad sour over sweet. It gives you the zippys in your mouth. I do love a good homemade lemonade, but once in awhile I like to cheat and just get my favorite store brand and add some freshly cut lemons and a few sprigs of mint. It then looks homemade when it’s not.
🍋
This is my outdoor dining area. I put the tablecloth over the table and have kept it like that all summer. I love my table, but being black, it’s extremely hot when you touch it. Plus it has water spots from last year which is annoying. Not sure how to get rid of them?
