Happy National Nutella Day! You know I had to participate in this wonderful day! After all it’s Nutella!! I don’t know if you recall, but I fell in love with Nutella when I was in Europe this summer. I never had it before, until one day I was at my hotel and I wanted peanut butter for my yogurt parfait. There was no peanut butter to be found. I discovered Nutella was made with stuff I didn’t know and it is far from natural. Plus you Guys informed me that Nutella isn’t healthy. I thought I was getting a nice chocolate nut butter but come to find out it’s loaded with sugar! So what does one do when they now have a Nutella addiction? Make your own! Since I started making Nutella a month or so ago, I have been a happy little camper! So with my homemade creamy, drippy sweet homemade Nutella I decided that I would make Nutella Truffles!! Man, big mistake! These truffles are so good, but at least they are pretty healthy for you too!!
These truffles are made with my Nutella, ground gluten-free oats that I got from Trader Joe’s, maple syrup, vanilla extract and some adorable Valentine’s Chocolate Covered Sunflower Seeds that I picked up at Tj Maxx. I got the idea to add the sunflower seeds from Jessica over at How Sweet It Is. She made some cookie balls and threw in some sunflower seeds and I thought that was such a cute idea!
These truffles are quite amazing and so addicting!! A perfect little treat to give a loved one at Valentine’s Day! They are soft and is totally Nutella! I swear it’s like your almost eating it by the spoonful!! I am loving these truffles!! As I sit here and write this, I want to run to my fridge and have another, but I’m trying to be good, since I already ate two and it’s not even noon yet!!

Yah pure yumminess! I almost forgot to tell you, I decided to roll my little truffles in a mixture of powdered sugar and unsweetened cocoa powder to give it more of a chocolate candy taste! I’m telling you to pack these little guys in a box and give to someone! They will be sure to put a smile on their face!
- 1 cup oat flour (ground oats in food processor)
- ⅓ cup Nutella (Homemade)
- 1 pinch salt
- ¼ tsp. vanilla extract
- 2 tbsp. maple syrup
- 2 tbsp. chocolate covered sunflower seeds
- 1 tbsp. unsweetened cocoa powder
- ½ tbsp. powered sugar
- In a bowl, add oat flour, nutella, salt, vanilla extract, maple syrup and sunflower seeds. Mix until combined. If mixture seems dry, add a pinch more maple syrup.
- On a shallow plate add cocoa powder and powdered sugar; mix until combined.
- To make; take about 1 tbsp of nutella oat mixture and form into a ball with your hand. I squeeze it tight. Than roll into cocoa powder mixture. Store in the refrigerator.
Calories per truffle: 68.9, Fat: 3.2, Cholesterol: 0, Sodium: 11.5, Potassium: 8.4, Carbs: 8.6, Fiber: 1.5, Sugar: 2.4, Protein: 2

I think I would be fine with just having that big bowl of homemade nutella and calling it a day 🙂 I love the idea of the added texture with the sunflower seeds. I never to think to add little things like nuts and such when I’m baking unless they’re already in a recipe

Ughhh really?! I have had no luck so far with foodgawker…but then again I just got me a DSLR for Christmas and discovered the splendor is shooting in natural light, LOL! The funny thing is a took photography in high school and college, you’d think I would know about that! LOL! Chin up, your recipes look AMAZING and I like your style! Being healthy can taste good!

Those little sunflower seeds are from Kimmie Candies in Reno. We were there the other day and our guide told us that they had product in TJ Maxx/Home Goods. You can order them online if you can’t get them at TJs.
