Hi Everyone!

Happy National Nutella Day!  You know I had to participate in this wonderful day!  After all it’s Nutella!!  I don’t know if you recall, but I fell in love with Nutella when I was in Europe this summer.  I never had it before, until one day I was at my hotel and I wanted peanut butter for my yogurt parfait.  There was no peanut butter to be found.  At that time I already used my stash of Justin’s Nut Butter, so for a creamy desperateness I decided to try Nutella!  Oh man, the creamy hazelnut spread won my heart, until…

Nutella Truffles

I discovered Nutella was made with stuff I didn’t know and it is far from natural.  Plus you Guys informed me that Nutella isn’t healthy.  I thought I was getting a nice chocolate nut butter but come to find out it’s loaded with sugar!  So what does one do when they now have a Nutella addiction?  Make your own!  So I did, you can find the recipe here.

Homemade Nutella


Since I started making Nutella a month or so ago, I have been a happy little camper!   So with my homemade creamy, drippy sweet homemade Nutella I decided that I would make Nutella Truffles!!  Man, big mistake!  These truffles are so good, but at least they are pretty healthy for you too!!

These truffles are made with my Nutella, ground gluten-free oats that I got from Trader Joe’s, maple syrup, vanilla extract and some adorable Valentine’s Chocolate Covered Sunflower Seeds that I picked up at Tj Maxx.  I got the idea to add the sunflower seeds from Jessica over at How Sweet It Is.  She made some cookie balls and threw in some sunflower seeds and I thought that was such a cute idea!

These truffles are quite amazing and so addicting!!  A perfect little treat to give a loved one at Valentine’s Day!  They are soft and is totally Nutella!  I swear it’s like your almost eating it by the spoonful!!  I am loving these truffles!!  As I sit here and write this, I want to run to my fridge and have another, but I’m trying to be good, since I already ate two and it’s not even noon yet!!

I bet your curious to what one looks like when you take a bite of this little chocolaty goodness?

Yah pure yumminess!  I almost forgot to tell you, I decided to roll my little truffles in a mixture of powdered sugar and unsweetened cocoa powder to give it more of a chocolate candy taste!  I’m telling you to pack these little guys in a box and give to someone!  They will be sure to put a smile on their face!

A healthy, sweet raw chocolate truffle made with Nutella, Oats and powdered chocolate.
Serves: 20 Truffles
Ingredients
  • 1 cup oat flour (ground oats in food processor)
  • ⅓ cup Nutella (Homemade)
  • 1 pinch salt
  • ¼ tsp. vanilla extract
  • 2 tbsp. maple syrup
  • 2 tbsp. chocolate covered sunflower seeds
  • 1 tbsp. unsweetened cocoa powder
  • ½ tbsp. powered sugar
Instructions
  1. In a bowl, add oat flour, nutella, salt, vanilla extract, maple syrup and sunflower seeds. Mix until combined. If mixture seems dry, add a pinch more maple syrup.
  2. On a shallow plate add cocoa powder and powdered sugar; mix until combined.
  3. To make; take about 1 tbsp of nutella oat mixture and form into a ball with your hand. I squeeze it tight. Than roll into cocoa powder mixture. Store in the refrigerator.
Notes
To make oat flour, take one cup oats and place in a mini food processor and process until flour constancy. About a few pulses.

    I think I would be fine with just having that big bowl of homemade nutella and calling it a day 🙂 I love the idea of the added texture with the sunflower seeds. I never to think to add little things like nuts and such when I’m baking unless they’re already in a recipe

        Ughhh really?! I have had no luck so far with foodgawker…but then again I just got me a DSLR for Christmas and discovered the splendor is shooting in natural light, LOL! The funny thing is a took photography in high school and college, you’d think I would know about that! LOL! Chin up, your recipes look AMAZING and I like your style! Being healthy can taste good!

    Those little sunflower seeds are from Kimmie Candies in Reno. We were there the other day and our guide told us that they had product in TJ Maxx/Home Goods. You can order them online if you can’t get them at TJs.

Happy Wednesday. I am sharing with you my little o Happy Wednesday. I am sharing with you my little outdoor space with our lounge chairs. Truthfully I wanted to get rid of the lounge chairs as they take up so much room and we never lay on the chaises. However, over the winter my husband made new cushions for the them and I didn’t have the heart to get rid of them. He made the cushions for our dog Samantha who passed away this winter. She loved laying on the lounge chairs. The boys don’t like to sit on them, unless you are on them too.

I do like the color combination of this space. It’s relaxing and I just love the Gerbera flowers. I wish I could keep the pillows on them, but my little Sully 🐶loves to tear apart pillows. So the pillows are living in my living room. I’ll bring them back outside if we have guests.

My patio area is kind  of an awkward space because we used to have a large pool that we took out a few years ago. We built our space around the pool. So we have lots of odd corners, but it works for us. I really like my backyard.

I went with light cool colors for my backyard space because of the heat and sun. I have always loved the coastal look. I do love to add a pop of color with flowers. Give me all the flowers!

Happy Wednesday! My friend Kelly @farmtotablecreat Happy Wednesday! My friend Kelly @farmtotablecreations made a gorgeous DIY Tabletop Firepit and I had to run out and got all the pieces to make one of my own. Kelly’s is so gorgeous and fun. Perfect for evenings outside.

However, when I started to make mine I realized that my dogs are to interested in it, as you can see from the video. I was afraid they would try to get close to the fire and burn themselves. So I came up with another idea, where I could get the same effect without the fire.

A couple weeks ago my friend Claire @huntersridge_designs shared some solar candles that I thought were pretty, and would be great to use on my table. I’m a sucker for anything solar. 😂 So of course I ordered some. I decided to use the solar candles in my pot in place of the tiki fire. I think it turned out great. I just need to add a few more rocks to it, which I’ll get this weekend.

Happy Monday! I’ve had a semi-productive weekend Happy Monday! I’ve had a semi-productive weekend in between the rain and cold. It was pretty chilly to me. I did get some plants planted and my husband added a new drip line in my big garden. Hopefully my flowers will thrive better this year.

On Friday, I watched 3 episodes of Firefly Lane on Netflix. If you like girl type series, I highly recommend. It’s so well written. It’s about best friends growing older together. Unfortunately this is the last of the series. I’ll miss it. I also read that Yellowstone will come back in November and that will be the end of the series. I’ll miss that show. At least I have Virgin River to look forward too. My husband likes Virgin River too.

Anyway, here is a view of my clean kitchen. I put together this little vignette for Mother’s Day inspiration. I love the Italian Soda from Trader Joe’s, but boy does it give me bad heartburn. I always just drink a little. Actually, anything sparkling, except regular soda, gives me heartburn. So strange.

Last week it was 90 and sunny and now back to the 60’s, but we are going to hit 90 by next weekend. I can’t wait. I’m over this wacky weather we are having.

I took down my Easter decor a few weeks ago and went back to using blues and greens in the living room. I think the colors look fresh and clean. Once the weather gets nicer, I’ll start to add in some yellows. I love yellow for the summer.

Happy Monday! This weekend I was finally able to g Happy Monday! This weekend I was finally able to get outside and work on my patio space, but unfortunately I don’t think I’ll be able to enjoy it this week. We are back to winter temps, high winds and rain. They are calling it “May Gray”. Such weird weather this year.

I was able to put out my new rug that you all helped me to pick out. I just love the blue. I decided to go with blues and yellows for my outdoor space. I think the yellow brightens up the space. I just need to get more flowers because after all you can never have too many flowers.

I wanted to also share with you my new side table from @vicllax_outdoor. I love the white color. It really helps to brighten this space. The table is made of metal, comes in 4 colors and is easy to put together. This table is perfect for a small space too. I couldn’t be happier.

Happy Tuesday! This weekend we had amazing weather Happy Tuesday! This weekend we had amazing weather. Sunny, light breeze and in the 70’s. I did a lot of yard clean-up. I just need some dirt and my raised beds will be ready for planting.

I planned on working on the patio area, but time just went to fast. My husband repaired the trellis that fell over from the wind. We had the Morning Glory on it, but we got rid of it because it is highly toxic to dogs. I ordered a climbing rose from Heirloom Roses that will be delivered next week.

I’m sharing with you the Beverage Tub that I bought from Target that I am using as a planter. My husband drilled 1/4” holes 4” apart on the metal insert.  I added a pot to the tub to give the flowers a lift. The handles on the tub are not bendable and I didn’t want to break the flowers and I wanted it to be easier to lift the flowers out, if I decide to change the flowers.

I love the look! Once I work on the patio area, I’ll move the table and flowers to the patio area. So excited to be working outside. Have a beautiful day!
