BBQ Pork Wontons

Today I have for you a recipe that I created by using my left over barbecue shredded pork that I had for dinner.  I decided to make 1 lbs. BBQ pork in the crockpot for dinner one night and oddly enough everyone got busy and no one came home for dinner, but me!!  I love BBQ Pork, but not a pound of it, so that means I had a ton left over and I needed to do something with it.  I decided how cute would it be to make little wonton cups?

I took my BBQ Shredded Pork; added some cream cheese, full fat pepper jack cheese and some barbecue sauce, give it a mix and place it into the center of the  wonton wrappers.  Popped those bad boys in the oven for about 15 minutes and out came some cute little wontons.  But I needed to dress them a little more, so I topped them with some different toppings!!  I left some plain, topped some with my mango salsa, which is my favorite!  One had more barbecue sauce with some diced scallions and the other was plain with a touch of Franks Hot Sauce.  The one with the BBQ sauce and scallions was my Husbands favorite!

These are so simple to make and are a great use for left overs.  You can have shredded pork one night and wonton appetizers the next!!  How nice is that?  I didn’t put any photos of the shredded pork, but I will give you the recipe.

BBQ Shredded Pork



Serves 4 – 4oz each

Calories per serving:  208,  Fat:  .04,  Cholesterol:  75,  Sodium:  252,  Potassium:  0,  Carbs:  18,  Fiber:  0,  Sugar:  15,  Protein:  24  (Please note calories depend on what BBQ sauce you use, the pork is only 130 calories a serving)

You can serve the BBQ Pork on a sandwich, as a taco, or plain.  That night I had it plain with a side salad and a baked sweet potato!  Yum!

I just love little appetizers and I love how quickly these come together!  For the wonton wrappers, I used the round shaped ones that are normally located in the refrigerated section of the produce department of the grocery store.  The small squares ones will also work great if you can’t find the round.

A little wonton wrapper filled with shredded barbecue pork and topped with your favorite toppings.
Serves: 16 wonton wrappers
  • 4 oz BBQ Shredded Pork, cooked
  • 2 oz cream cheese, fat free
  • ½ oz Monterrey Jack cheese, full fat
  • 2 Tbsp. BBQ Sauce (your favorite, I used Kraft BBQ Sauce)
  • 16 wonton wrappers, I used round shaped
  1. Preheat oven to 350 degrees.
  2. Spray a mini muffin pan with cooking spray; set a side
  3. In a bowl, add pork, cream cheese, pepper jack cheese and bbq sauce. Mix until combined.
  4. Evenly divide pork mixture into wonton cups.
  5. Bake in oven for 11 – 15 minutes, until cheese is melted and wontons are lightly golden.

I thought I would give you the recipe for the mango salsa.  It is one of my favorites and goes great with so many dishes and especially topped on coconut chicken!  But sometimes I just eat it plain!  Yum, yum, yum, yum!!

Mango Salsa


Salt and freshly ground black pepper to taste


Serves 4, approx 1/3 cup each

Calories per serving:  39,  Fat:  .02,  Cholesterol:  0,  Sodium:  1.5,  Potassium:  126,  Carbs:  9.8,  Fiber:  1.2,  Sugar:  6.9,  Protein:  .05

Lots of recipes going on here to make such a simple dish, but everything here, you can make into something else.  Makes good for weekend batch cooking!  Plus the pork works great for two meals.  For the pork you could make it a day or two ahead of time and make the wontons just in time for your Super Bowl party or you can be like us and have appetizer night!
