Today I have for you a re-make recipe. I made this once before and it didn’t turn out great, so I asked you for your help!! With your help and the help of Buffalo Wild Wings, I finally made a Black Bean Burger that I can write about!
About two weeks ago, my Husband wanted to go to lunch at Buffalo Wild Wings and I cringed at the thought, knowing that everything on their menu was so good, yet LOADED with calories. But I did notice they had a black bean burger on their menu and was only 300 calories and that included the bun. I tried that and I thought, mmmm this is pretty good. This was the first time I ever ordered a black bean burger at any restaurant. I noticed the burger had corn in it with peppers and I thought I could so make this at home. So the next day I gave it a whirl and I was quite pleased with the outcome. The only thing is, they are still a little delicate, but not like my previous burger that I made that was like baby poop. Yup, that’s how I described it last year in May!! Check it out! This is what the first one I ever made looked like.
It doesn’t look to bad, but it really was mushy. The original recipe came from Woman’s Health Magazine. I had to try this again, my way!! So thank you for all of your opinions and advice on how to make a good black bean burger. Even though this was in May of last year, I didn’t forget. My newest Black Bean Burger is full of corn, sweet bell pepper, jalapenos, onions and panko bread crumbs. I mashed it together with a fork, rather than putting it in a blender. I cooked the burger in a skillet and topped it with my Spicy Chipotli Aiol Sauce, freshly mashed avocado and some homemade picante salsa. I loved it!! I loved it so much I ate it three days in a row!!
To make the picante salsa, all I did was cut up some tomatoes, jalapeno, onion and cilantro. It took a mere few minutes and was a perfect topping for my burger. As you can tell from this last weeks postings, I am not a vegan or vegetarian but I do love to play around with my food and try different things. Plus I have a soft spot in my heart for black beans. I just LOVE them!! My Husband turned his nose up to my burger, his lose and that means more for me! Yah!! I kept the burgers in the fridge, but plan on making a batch of them and freezing them for a quick dinner. The cooking time is about 5 minutes per side. The burgers stay together pretty well, but not perfect. Even the one I had at Buffalo Wild Wings fell apart. So I must have done something right! 🙂
- 1½ cups black beans, canned, drained and rinsed
- ¼ cup corn, frozen, thawed
- ½ cup sweet bell pepper, sliced small
- ⅓ cup onion, sliced small
- 1 jalapeno pepper, roughly chopped
- ⅓ cup whole wheat panko bread crumbs
- ¼ cup egg substitute or 1 egg
- ½ tsp. cumin
- Add black beans in a bowl, and lightly mash them. Add the remaining ingredients. Mix together with a fork; until incorporated.
- Form into 5 patties, approx 4 oz each. I got four 4oz patties and one 3oz patty.
- Place patties on a piece of parchment paper and refrigerate for at least 30 minutes or place in the freezer for a later use.
- To cook:
- To Grill - Spray a piece of aluminium foil with cooking spray and place on grill over medium heat. Cook each side of the burger for about 6 minutes.
- To fry: Place about 2 tsp. of olive oil in a pan over medium heat and cook each side of the burger for 4 - 6 minutes.
Calories per burger, not including toppings: 107.4, Fat: .03, Sodium: 288, Potassium: 114.5, Carbs: 19.7, Fiber: 6.1, Sugar: 1.8, Protein: 6.8

Sunday: Soy, Orange Juice and Red Wine Ribeye Steak – My Husband absolutely loved this dish! I’m not kidding, he was smiling with each bite he took. This marinade is amazing!! I’m going to try it on chicken! I bet that would be so good!!
Monday: Peanut Butter Cookies – Oh man these were good, well, what I had of them. Remember my Husband took them to work. I was so angry!! So I made another batch! I think I’m going to make them again this weekend!! It’s like taking a big spoonful of peanut butter!
Tuesday: Liebster Award and Recipe Recap – I was so honored for Kammie to give me this award. I think it’s fun to learn new things about someone.
Wednesday: Chocolate Mocha Mini Cakes – This recipe is so good and so full of chocolate with just a hint of espresso. I tried it with Chobani’s new Chocolate Coffee Yogurt and I have to admit I really like it. The yogurt wasn’t overly sweet, which I like. I think they have a hit with this one! Oh doesn’t my raspberry look like a little heart?
Thursday: Chocolate Cherry Jubilee Frappe – OMG, this Frappe is friggen delish! I had it three times this week. Rich Chocolate, frozen cherries with a hint of coffee!! I am sooooooooooo loving this frappe!! I have to say I am proud of this one!! It only 46 calories for 2 cups and the recipe makes 4 cups. Give me more, please!!
Friday: Sweet and Spicy Grilled Chicken Wings and Grilled Chicken Breast – I am loving the sauce. I was quite amazed how apple butter and hot sauce go so well together Even my Husband was surprised. This is one BBQ sauce I’ll be making again! If you like sticky, sweet and savory BBQ sauce than you should give this one a try. Plus don’t forget to enter my giveaway!!
I have to tell you I was pretty stoked Friday! HuffPost Taste featured my Buffalo Chicken Wing Dip for their Chicken Wings Recipes: Crazy Creation. That was the first time they ever featured one of my recipes. I’m so proud!
