Hi Everyone and Happy Monday!!

When is Spring getting here?  This Sunday the weather was crappy!  It was cold and rainy, and just dismo looking.  It has been so long since I have seen the sun.  Sigh…  I miss that big yellow bright light in the sky.  Since the weather was so bad, I got to catch up on some cooking and baking.  I even batch cooked some goodies for this week for easy put together recipes.  I spent 8 hours cooking, crazy, but fun!!  Hubby watched football and there I was with my dog Sampson at my feet.  He kept stealing carrot tops out of the garbage.  That dog loves to eat!!!  I think more than his Mom!

Today I have for you my copycat recipe of Trader Joe’s Roasted Butternut Squash Quinoa Salad with Honey Balsamic Dressing.  I picked up TJ’s salad last week and I fell in love with it.  Their salad has wheat berries in it, but I didn’t have any, so I skipped it and made my salad a little bigger to get a few more calories.  This is salad is so good and full of flavor.  It’s loaded with roasted butternut squash, red quinoa, dried cranberries,  raisins and it lies on a bed of spinach and arugula and then topped with crumbled goat cheese.  It is savory, yet a little sweet from the dried fruit and squash.  It’s perfect!!   And makes for a perfect healthy salad!

I read the label on the package for the dressing and tried to duplicate it, and I think I did a pretty good job of it.  It’s made with canola oil, honey, soy sauce, garlic powder and rice vinegar.  It’s a sweet balsamic dressing.  The recipe makes for 3/4 cups of dressing, and a little bit goes a long way on the salad.  It’s mixes well with the peppery arugula and sweet butternut squash.  I never make to many salad dressings, and I don’t know why?  They are rewarding and easy!  I guess we can just chop it up to me being lazy.

I didn’t put the dressing on the salad to show you because this is my lunch for work, but I loved it so much I had to share it with you!  This salad can be put together pretty quickly if you batch cook your quinoa and butternut squash.  I had the biggest butternut squash to roast, and let me tell you, it took like a half hour to peel and cut it.  The thing was HUGE!!  The quinoa was cooked and cooled by the time the squash was done.  I’m totally telling you, you should spend a couple of hours on Sunday to do some batch cooking.  It makes life throughout the week, so much easier!!  Here are all the goodies I made today.

Batch Cooking

I have my butternut squash, quinoa, lavash crackers, my Jalapeno and Cilantro Hummus, which is a nice treat for an afternoon snack.  Plus I made two batches of cookies, recipe to come later, strawberry quick jam, the Honey Balsamic Dressing and some cut up celery.  I think I’m pretty set for the week, plus whatever I have leftover for dinners throughout the week!!

A sweet and savory salad made with roasted butternut squash, red quinoa, dried fruit and goat cheese, topped with a sweet honey balsamic dressing.
Serves: 1 Serving
Ingredients
  • Salad Ingredients:
  • 1 cup spinach
  • 1 cup arugula
  • ¼ cup quinoa, cooked
  • ½ cup butternut squash, cooked
  • 1 tbsp. raisins
  • 1 tbsp. cranberries, dried
  • ½ oz goat cheese, crumbled
  • Dressing: Makes ¾ cup
  • ¼ cup canola oil
  • ¼ cup rice vinegar
  • 2 tbsp. soy sauce
  • 1 tbsp. honey
  • 2 tbsp. water
  • ¼ tsp. garlic powder
  • ¼ tsp. sugar
Instructions
  1. Place all salad ingredients in a bowl.
  2. To make dressing:
  3. In a small bowl add all the dressing ingredients and whisk together until incorporated. Drizzle 2 tablespoons of dressing over salad.

Butternut Squash and Red Quinoa Salad with Honey Balsamic Dressing

I wanted to let you know I did some research on the nutritional facts on quinoa and after comparing labels at Trader Joe’s, the white, tri-color and red quinoa are the same.  Their wasn’t any different nutritional information, so you can use whatever color quinoa you like or have available.

I thought I would give you an update on my New Years goals.  I exercised 5 days last week and yes I included cardio for each of those days.  I haven’t snacked after dinner and I have even cut back on coffee.  I only went to Starbucks once last week, normally I go everyday.  I’m doing good on my fitness and food goals and I even lost 1lbs!  Yah!!  I really think the nighttime snacking is what did it!  Oh and I barley ate any processed foods!  One week down, the rest of my life to go!!  🙂

Well my Friends, that is it for me today, it’s late on Sunday night and I still need to get ready for work!

    This does sound like my kind of salad. And I totally agree with you on the benefits of batch cooking for the week. I never peel my butternut squash before I roast it because the chewy, roasted skin is my favorite part (plus, it makes my life so much easier).

    Thanks for breaking down the dressing for this salad. I look forward to trying your recipe. I’m not sure why you called it a balsamic dressing since there is no balsamic vinegar. Trader Joe’s salad is delicious! Cheaper will be nice 😉

I’m sharing with you my new dog bone container that I got from @outshine_co. Oh my gosh Sampson loves it! Mom, move out of the way, I’m taking over!!

Hi all! This is Sammy here! I just have to tell you my Mom now has no excuse not to have bones in the house anymore. This beautiful container hold 5 boxes of my favorite Trader Joe’s bones. My Mom also needs to know that carrots, celery or a piece of lettuce doesn’t cut it! Bones is what I must have!

The container is made of a nice heavy coated carbon steel and holds 12lbs or 54 cups of dog food and bones. 🤩Yes thank you! That is what I’m taking about. The only thing is, the lid is so well fitted and airtight that I can’t get my paws in it. What’s up with that? Not fair! I need access to bones at all times.

My Mom loves the container too because it looks pretty on her counter and even comes with a sticker that she can write my name on. I absolutely love this container! Thank you Outshine Co. for sending this to me, I mean my Mom.

Now that Valentines is over, it’s officially time for spring, at least in my mind. The weather may say otherwise, but I’ve been craving spring colors in my home. I went pretty neutral in my living room for winter, but I think I’m going to add some pastels. Now what color to add?

Last year if you followed me, I spent months trying to decide on what color to use. Ugh, I think I’m in the same boat again this year. I like yellows because it’s a happy color, but I also like pinks and blues. Oh the decisions.

Happy Friday! We did it! Yesterday was a little bi Happy Friday! We did it! Yesterday was a little bit of rough day in my house. Woke up to see my sweet Sampson wasn’t feeling well.  He was just laying around, didn’t get up to greet me, and the biggest sign was he didn’t ask for a bone. You know how he’s obsessed with bones.

Around 9am he perked up and asked for a bone and wanted to go outside to snoop around. He seems to be better, but is still kind of laying around. I just hope he will be okay. He’s 11, and I get so worried. He’s my child.

I’m sharing with you my pretty tulips from Trader Joe’s. They have such a great selection of tulips in array of colors. Though I didn’t see any roses, which is strange. We do not have any plans for the weekend, that I know of, but we have the tendency to wing it.  I’ll keep you posted. Hope you have a wonderful Valentines weekend!

The cutting board is her newest item at her Etsy shop. She engraves different items, like your name, but for me it is flowers. I’ll always keep the cutting board displayed. I think it is far to pretty to use. I’m afraid someone would scratch it.

I wasn’t going to, but I decided to do a small Valentines table setting. I couldn’t resist the small white plates with the little red heart in the middle that I got from @williamssonoma. It was the first thing I bought after my no home decor buying for 30 days.

I love the simplicity of the table. It’s a small space, so I do not like to go to overboard on the decor. I added a little gift of candy hearts to bring together the reds and of course to eat.

It was filling up with daffodils and tulips and my husband said he feels like he’s in a greenhouse. I said they are bulbs, they won’t be there forever. Well they did poop out so I cleaned up my area to make more room for new plants.

You know when you take a photo and you realize something is in the wrong spot, so you fix it and take a photo again? Or maybe you see a crumb, a dog hair tumbleweed and you have to clean up and take a photo again. We’ll here’s my story.

I took a photo of the kitchen sink area and I saw in the photo a smear mark on the dishwasher. So I cleaned the dishwasher. Then I took a photo again and I saw that smear mark again. So I scrubbed the dishwasher and ended up up cleaning all of my cabinets.
😂
I took the photo again and I saw that smear looking mark in my photo. What the heck? I examined the dishwasher and I’m thinking it’s so clean and smooth. I don’t get what that smear mark is. It was driving me crazy!!

Then it hit me. It was the reflection of the dog food dish in the dishwasher. Sigh.... All that scrubbing and I could have just moved the bowl. Well now I have a clean dishwasher and cabinets.

Hello Monday! We meet again!! And hello everyone! Hello Monday! We meet again!! And hello everyone! Hope you had a nice weekend. I took  advantage of the sunshine and 64 degree weather we had. I did some therapeutic yard work and I planted Pansies, Stock and Ranunculus in the garden. It felt so nice to be outside and to see flowers.

This weekend I finally repotted my Coffee Plant and Dracaena plant. They had roots growing out of the pot. I have no idea how the Dracaena (plant on right) plant survived. The roots were so dry and it was in about a 3” container.  I looked up the plant and it can grow to 10’. Not the care I gave mine. That little plant is about a year old.

If your looking for a low light, easy to care for plant that takes neglect, get a Dracaena. I’m proof that it can take neglect.

Basic repotting plant tips
1. Get a pot about 2-4” larger in diameter then the pot your current plant is in. Make sure it has a drainage hole at the bottom.
2. Use indoor potting soil, preferably organic.
3. Carefully take plant out of current pot, check if the roots are root bound, if so, try to untangle a little bit. Just be gentle.
4. Place plant in new pot with fresh indoor potting soil
5. Give a good watering

Did you watch the Super Bowl? I wasn’t a fan of the game, but I enjoyed some of the commercials. The Cheetos one with Ashton Kutcher and Mila Kunas made me laugh. I didn’t care for the Doritos commercial with my man Matthew McConaughey.

It’s finally Friday! Woohoo! I always say to my It’s finally Friday!  Woohoo! I always say to myself, I’m going to sleep in, I never do. I get so excited of all the things I want to do, that I can’t sleep. This weekend I’m hoping to hit the garden store. I really want to plant some Iceland Poppies.

Since Spring is in my head, I created this cute Spring tiered tray. I got all of the gorgeous handcrafted pieces from my friend Brantley @thesassyoak. The workmanship is amazing. They are just happy, cheery pieces.

The love birds sign is my favorite. It reminds me of my two Blue Jays that frequent my yard. They are my favorite birds next to Woody of course.

How cute is that sweet little “BLOOM” banner. Eeeee, It makes me want to plant flowers so bad. Crossing fingers that I get too. You have no idea how I just love Spring!
