I thought I would start the year out with a healthy, good for you, low-calorie Chocolate Chip Cookie. This has been an ongoing project for me all last year! I am on the look out for the ultimate guilt-free chocolate chip cookie!! Is this cookie the ultimate? No, probably not, but it’s pretty dam good if you ask me!!
This cookie does not contain dairy, it does not contain flour and it does not contain sugar! Bingo, healthy cookie!! So what is it made of? Poop! Just kidding!! I used gluten-free rolled oats from Trader Joe’s and ground it into flour. If you never ground your own oats you should! Just take a cup of old fashion oats, pop in a mini food processor and a few pulses you have ground oats. Simple!! The cookie also contains coconut oil, unsweetened applesauce, sugar-free maple syrup and 3 Ghirardelli Dark Chocolate Squares from the candy bar. I got 19 cookies out of the batch and guess what? They only have, ready for this? Drum roll please….41 Calories! I never made a chocolate chip cookie this good for this low of calories! Let me tell you, I’ll me making these all of the time!! I think they may even pass the Husband test!!
I got the inspiration for this recipe from my Girl Gina, over at Running to the Kitchen. Gina has some awesome recipes and she made these Paleo Chocolate Chip Cookies that looked amazing. She inspired me to try my own cookies and to see what I can come up with. Thanks to Gina and her fabulous recipes, I made these yummy bad boys!! You should check out Running to the Kitchen! When I took the cookies out of the oven, I thought they were going to be rubbery, but surprisingly enough they weren’t at all. They are soft and the chocolate is gooey. They really do taste like a chocolate chip cookie!! Even though they have oats in them, I didn’t find the taste of the oats to over take the cookie. Now that I completed this part of my chocolate chip cookie mission, my goal is to come up with a flat, crispy chocolate chip cookie that is guilt-free. That is going to be tough because I think, it is shortening and brown sugar that gives it the crispiness But honestly I’m pretty satisfied with these cookies and I think you will be too!!
- 2 tbsp. coconut oil, melted
- ¼ cup unsweetened applesauce
- 2 tbsp. maple syrup, sugar free
- 1 tsp. vanilla extract
- 1 cup oats, ground (I used gluten-free)
- ¼ tsp. baking soda
- ¼ tsp. baking powder
- ¼ tsp. salt
- 3 squares (38 grams) Ghiraradelli Evening Dream Chocolate, chopped
- Preheat oven to 350F
- Line baking sheet with parchment paper or silpat; set a side.
- In a large bowl add coconut oil, applesauce, maple syrup and vanilla extract. Mix until combined. Add oats, baking soda, baking powder and salt; mix until combined.
- Fold in chocolate
- Take a teaspoon size of batter and place on cookie sheet, about 2" apart. The cookies do not spread.
- Bake for 10 - 12 minutes or until bottom is lightly golden. Let them rest on the baking sheet for about 2 minutes and cool on a baking rack.
With the creation of this cookie, I know it’s going to be a good year full of fun recipes!!! Since I have the base down of a healthy cookie, I can just imagine the other creative cookies I can come up with. I already have one in my head, and I think I want to make it right now!!! It’s going to be good!!! It’s going to be fat, it’s going to be good for you! Ok, I’m too excited! I’m going to go bake in my 2′ x 1′ spot! Darn this kitchen !

P.S. The cookies look much better in person than the photo! It really bothers me that I don’t have my photo spot at this time. With the limited sunlight, I just can’t get a good shot in anywhere! Sorry!! This makes me so sad! I’ll have to re-make when I get my spot back.
