Hi Everyone,
How was your Christmas? Mine was pretty good! I think the best part of the day was when the dogs finally pooped out around noon. I bought them each a Tuffy Dog Toy. Have you ever heard of Tuffy Toy’s? They are the best stuffed dog toys ever. They rate them from 1 to 10, ten being the toughest, and with my babies I need 9 and 10’s. Just look at them on Christmas morning.
They wanted to show you there fanny’s.
Yesterday afternoon Jenny and I went to Trader Joe’s and she asked if Jerry, her boyfriend can come over for breakfast on Christmas. Now normally no one in my house eats breakfast, so I didn’t plan anything. Our normal Christmas tradition, is opening presents and munching on Trader Joe’s croissants while drinking mimosas. This year on the fly, I had to come up with something that everyone would like since I have picky eaters in my family. Plus I didn’t even prepare for setting the table or plan anything for company. I spent my Christmas Eve cleaning the whole house. I woke up at 3:30am Christmas morning to start preparing for breakfast. I think I winged it ok. This is my table.
I made everyone an egg bake. Jenny just had cheese, my Husband Cheese and Ham, Jerry and I had ours Denver Omelet style which is cheese, ham, peppers and onions, of course I added jalapenos and tomatoes to mine. I think everyone was happy with the egg bake. It was the first time my Husband and Jerry ever had baked eggs. They ate it all! Here is my egg bake, not a pretty picture, but it tasets so good! Give me peppers and onions and I am one happy camper!
I also had my Trader Joe’s croissants and to decorate the setting I added some anise cookies I made on Christmas Eve. Trader Joe’s Croissants are the best. They come frozen, and you let them defrost over night and in the morning they are big and puffy; bake for 15 minutes and they taste bakery fresh!
I served the croissants with homemade strawberry and blueberry quick jam. I also made everyone my Super Chocolaty Hot Cocoa, which got lots of ohhh, ahhs and mmmm’s. I even made enough for me to have a cup! 🙂 Plus on Christmas morning I made my Coconut Almond Granola, which I served Chobani Vanilla Greek Yogurt to go with it.
The last side dish I had, was a wonderful fruit salad. Nothing fancy, just cut up pineapple kiwi, raspberries blueberries, grapes and pomegranates arils. I love it, simple and fresh, glad there is a little left over. I love the photo of the fruit, it’s so lively looking.
That’s pretty much my Christmas in a nut shell. Now my Husband is watching tv and I am writing my post. It’s crappy out today, rain and cold. I guess I should be happy with that considering I heard there are tornado warnings in the South and snow in the North. If you live in those areas, please be safe. Since the weather seems to be cold in most parts, I thought I would share with my quicky homemade tomato soup that I made the other night.
This soup is creamy, easy to make and doesn’t take a lot of ingredients, plus it’s guilt-free and low sodium. It’s what I like to think a pure comfort food. Pair it with a grilled cheese sandwich or do what I did and pair it with a pear, cranberry and brie grilled cheese sandwich. So good!!! I honestly can’t think of another soup, that is more comforting and warms you up heart and soul. I can simply take a cup, cozy up in a blanket and watch tv sipping my soup. It takes you to a whole another world and you can forget it’s snowing, raining or simply cold out!
- 1 tbsp. butter
- ½ cup onion, diced
- 1 clove garlic
- 1 28 oz can plum tomatoes, unsalted, undrained
- 4 cups vegetable broth or chicken broth
- ½ tsp. sugar
- ½ tbsp. ground pepper
- 1 tbsp. basil, dried
- In a large pot, add butter, onion and garlic, saute for about 2 minutes. Add remaining ingredients; bring to a boil, cover and simmer for 10 minutes.
- With a hand immersion blender, blend until creamy.
Since it’s Christmas I should get going. I need to clean up and prepare for the rest of my day!! I can guarantee that for the next couple of days I will be baking, cooking and making simply yummy dishes. I need to over stock on recipes, just in case my Husbands starts the re-model and I can’t cook. I figured it’s better to be safe then sorry!

I am all about some easy tomato soup but I will say those Trader Joe’s Croissants & the little sprinkle balls next to them are stealing my heart 🙂

I absolutely love Trader Joe’s crossiants! Probably one of the best gifts I got for Christmas this year was a Trader Joe’s gift card. I will definitely put that to very good use. I know it has been horribly cold here in CA, it’s been in the 30’s at night and morning which is not normal and when it’s this cold I like to make soup. It’s easy and warm!! Stay warm!!
