Gingerbread Pancakes

Merry Christmas everyone!!

Still stumped on what to make for breakfast today?  I have for you a simple, holiday breakfast that will please the kids and adults of all ages in your family.

These are my Gingerbread Pancakes made with cinnamon, cloves, ginger and molasses to give it the gingerbread flavor.  These pancakes are not overly sweet, but I found them to be perfect.  They are light, fluffy and healthy for you!!!   It seems whenever there is a holiday, my mind gravitates towards making pancakes.  I think pancakes are a happy food!

This batch makes six scant 1/4 cup size pancakes, but you can always double up the recipe, if your feeding more than two people.  For me, it was just me, so I feed a pancake to each of my dogs and I ate the rest.  I know, I know, feeding dogs people food is bad, but these are healthy and it’s a treat!  Boy, you should have seen their faces light up when I said do you want a pancake?  Too cute!!   I should have taken a picture.

A thick and fluffy pancake made with greek yogurt and tastes like a gingerbread cookie.
Serves: 6 Pancakes
  • ½ cup Greek Yogurt, plain
  • 2 egg whites
  • ½ tsp. vanilla extract
  • 1¼ tsp. molasses
  • ½ tsp. baking soda
  • 1 tbsp. sugar or ¼ tsp. stevia
  • ⅛ tsp. salt
  • ½ tsp. ground cinnamon
  • ¼ tsp. ground ginger
  • ⅓ tsp. ground cloves
  • ½ cup all purpose flour
  • 1 tbsp. milk, non-fat
  1. In a medium bowl add greek yogurt, egg whites, vanilla extract and molasses; mix until combined; set a side.
  2. In a medium bowl, add baking soda, sugar, salt, cinnamon, ginger, cloves and flour; whisk until combined.
  3. Add flour mixture to yogurt mixture and mix until combined. If the batter seems thick add 1 tbsp. milk.
  4. Place ¼ cup batter on to a medium hot skillet or griddle, cook until bubbles a pear and flip pancake, approx 2 minutes per side.
  5. To keep pancakes warm, heat oven to 200F and place cooked pancakes onto a baking sheet and place in the oven until ready to eat.

Glad you stopped by to see what I got.  First a little story.  In my backyard, my vegetable garden is fenced in because Sampson (my dog), keeps trying to get to my vegetables.  Well not only does he try to get in, he dug several holes under the fence so he can get in there.  We have sand as our soil, so it’s easy to dig up.  I swear I am always covering the  holes back up.  Well on Christmas Eve, little Jenny yelled at Sampson and told him to get out of the garden.  She said, Jen, he’s eating something orange.  I thought, oh no, the hot peppers!  This is what he was eating, ready???

Yup, those are his teeth marks.  Your probably wondering what that is.  Well remember back when I was growing this in a glass?  You can check the post out here from March.

My Husband said, Jen what are you going to do with that?  Get rid of it, so I did!  I dug a hole in the garden and planted it!  I didn’t think anything of it.  I could see it was growing all over the place, but I never gave it any thought as to it actually growing a potato.  It was an organic sweet potato from Trader Joe’s.  It was getting roots on it so I stuck it in water, just to see if it would do anything and it did, it got more roots.  Put it in the ground, saw leaves and that was it until now.  Thanks to my bad dog Sampson, I or should I say he discovered my sweet potatoes.  Look at how many I got, and there maybe more coming.  This is off one potato I planted.

None of the other ones were as big as the one Sampson was eating (figures, huh), so my guess is that may have been the main potato I planted?  Since I just dug these up like an hour ago, I have no idea how they taste, but I imagine they are going to be great!  Nothing beats an organic sweet potato from your own garden.  I am so proud of myself and I didn’t do a thing!!  🙂  I love when I get good surprises!!!

I just had to share this with you today, since I was excited for my surprise.  Oh and in case you’re wondering, I am not going to eat the potato my dog was chewing on, I just had to show you how big it was and it was the start of my story.
