Hi Everyone,
I figured after all the homemade cookies, boxed chocolates and Christmas parties, it would be time to enjoy a sweet, tangy holiday drink that is completely guilt-free. I know after this past month, I am in need of something good for me! So today I bring you, what I like to call my Christmas Smoothie.
As I am sitting here writing this, I am drinking my smoothie! The best description I can give is that it is creamy, a little sweet and has a slight, very slight pucker from the cranberries. I think it is absolutely a perfect cranberry smoothie! If you like cranberries, then you will like this smoothie!
To make this smoothie I used Ocean Spray Diet Cranberry Juice, which is only 5 calories for a cup!! Crazy!!! Plus I used 1/2 cup plain greek yogurt, unsweetened coconut milk from the carton and I threw in a few fresh cranberries for a little specks of color!! I debated on throwing a frozen banana in it, but I really wanted a light cranberry drink, nothing to crazy!! Something I could have after dinner or work, knowing I am getting a healthy drink that will fill me up and that it will make me in the holiday spirit.
I also think if you don’t have unsweetened coconut milk, that almond milk, non-fat milk or even soy milk would taste great! Get vanilla flavor, that would be fantastic in this drink. Now I always get asked about the coconut milk. I use Trader Joe’s brand, it’s in a carton, located in an aisle with the almond milks, ect… and is only 60 calories a cup. Do not use canned coconut milk, that would be horrible! You’ll just end up with a greasy smoothie!!!
- 1 cup light cranberry juice (I used Ocean Spray Diet)
- ½ cup unsweetened coconut milk (from carton, do NOT use canned)
- ½ cup greek yogurt, plain
- ¼ tsp. vanilla extract
- ⅛ tsp. stevia, to taste
- 5 cranberries
- 5 ice cubes
- Place all your ingredients in a blender and process until smooth.
You probably noticed from the picture that the sprinkles on the glass look funny. You must forgive me, I am so horrible when it comes to decorating cups. I do try, but those darn little candy balls fall off. I poured them in the bowl and they bounced everywhere! I know I”ll be cleaning up white balls for months to come!! lol
I thought I was done with my Christmas shopping, come to find out I forgot one gift so I am off tonight to find something.

I like your recipe. I am going to try it soon. I made one and put it on my blog(its tied to my Fitness Friday post) and called it the same thing – it uses cranberry sauce I had leftover from Thanksgiving and I didn’t use any milk in it.
