NY Deli Rye Bead – 5 Minutes A Day

December 19, 2012 By Jennifer @ PB and P Design 23 Comments

Hi Everyone,

My Friend Marty at work loves rye flour and I mean loves it.  He swears he lost 5lbs eating it.  I don’t know how true that is, but hey if it works for him, that is awesome!  I’ll eat rye if I were to lose weight from it, but I don’t see that happening.  lol  Matter in fact he loves rye flour so much that he bought me some and told me to use it in everything I make.  So I decided as a Christmas present I would make him some homemade rye bread.

NY Deli Rye Bead – 5 Minutes A Day

This bread by far exceeded my expectations!  It has the perfect Artisan Crust and a soft center.  I have made rye bread before, which I love, but the crust on this one is out of this world!!  The best part of this recipe besides the bread it’s self, is no kneading!!!  I got this recipe from Artisan Bread in Five Minutes a Day.

NY Deli Rye Bead – 5 Minutes A Day

The recipe makes for 4 loaves of bread, at first I thought no way!!  I pulled off pieces a little bigger then I should have, so my first two loaves turned out pretty large and the second two ended up a little smaller.  I was stunned by how much the bread rose.  I made 3 oval shape loaves as you see in the photo above and then I made one round loaf, which is the one I’m giving my friend.

NY Deli Rye Bead – 5 Minutes A Day

The basic instructions for this bread is mix the yeast, water, caraway seeds and salt.  Then add 1 cup of rye flour and 5 1/2 cups of all-purpose flour.  Give it a mix and let it sit out for two hours.  That’s easy!  The next step is to proceed in baking the bread or placing it in the refrigerator for up to two weeks.  I thought that was pretty nice.  When you want bread for dinner, just pull off a chunk and prepare the next steps.

NY Deli Rye Bead – 5 Minutes A Day

I let it sit in the refrigerator for about 6 hours before I used it.  Then you divide the dough into 4 equal parts.  Flour a surface and shape the dough into a round loaf shape or an oval shape.  Place the dough on corn meal and cover it and let it rise for 40 minutes.  Mean while get ready to prepare for baking.  Preheat oven to 450F, place a pizza/baking stone on the middle shelf and an oven safe dutch oven on the bottom shelf.

NY Deli Rye Bead – 5 Minutes A Day

For easy movement of the dough  I took a baking sheet; placed it upside down and put a piece of parchment paper on it.  Sprinkled with cornmeal and let the dough rest and rise on it.  Then I brushed the dough with a cornstarch and water mixture.  Sprinkle with caraway seeds.  Slide the parchment paper with the dough on it, right onto my baking stone.  I quickly threw in 1 cup of water into the dutch oven and closed the oven door.  The water makes steam, so the bread stays moist.  Bake the bread for 30 minutes and you have a gorgeous loaf of bread!!!

A no kneed, traditional deli rye bread with a crusty top and soft center.
Serves: Four 1 lbs. loaves (48 slices)
Ingredients
  • 3 cups lukewarm water
  • 1½ tbsp yeast
  • 1½ tbsp salt
  • 1½ tbsp caraway seeds, plus more for sprinkling
  • 1 cup rye flour
  • 5½ cups all purpose flour
  • cornmeal for dust
  • ½ tsp. cornstarch
  • ½ cup water
Instructions
  1. In a large bowl add yeast, salt, caraway seeds and water; mix. Add the rye and all purpose flour; mix well. Cover the dough with a tea towel and let it rest for two hours.
  2. Next you can refrigerate the bread for up to two weeks and then follow the next steps.
  3. Prepare a baking sheet or pizza peel with a sprinkle of cornmeal, set aside. (I lined the underside of a baking sheet with parchment paper and then sprinkled cornmeal on it)
  4. Lightly flour working surface and take off ¼ of the dough. If the dough is sticky add a little more flour. Shape dough into an oval shape or round loaf. Place on top of cornmeal sprinkle and cover with plastic wrap; let it rest for 40 minutes. This where it will rise.
  5. Meanwhile; add pizza stone(if using) or the backside of a baking sheet onto middle shelf of the oven. Place a dutch oven onto bottom shelf. Preheat oven to 450 degrees.
  6. To make cornstarch mixture add ½ tsp. of cornstarch and ½ tsp water to make a paste. Add ½ cup of water to cornstarch mixture and microwave for 60 seconds. With a pastry brush, add cornstarch mixture to the top of your loaves. Sprinkle with caraway seeds. With a sharp knife add 3 or 4 slashes to the top of your loaves.
  7. Slide the loaves onto baking stone and add 1 cup water to the dutch oven and quickly close the oven door. You want to create steam.
  8. Bake the bread for 30 minutes or until golden brown. Allow bread to cool, if you can before slicing.

NY Deli Rye Bead – 5 Minutes A Day

I love that this bread is so easy and it is unbelievably good!  Now I can see why 5 minute a day bread is the new way to go!!  I asked for the cookbook for Christmas, I hope I get it!  I can’t wait to try other 5 minute a day breads.  I also need a bigger refrigerator so I can make this dough and store it for dinners throughout the week!  he he BREAD!!

That is it for this carbolious day!!  Let me just tell you, my Husband and I finished one huge loaf with dinner.  It was perfect with my leftover Hamburger Soup!!

Have a great day!

Toodles,

Jen

Your bread looks amazing! I love the 5 minute breads, who would have thought it could be so easy! I do think that this would be quite dangerous to have around. I couldn’t stop at one piece for sure!

Does it matter which yeast you use? Fast active or regular?

I used regular yeast. I am unsure if it will change anything in the recipe.

To add Fall or Halloween you don’t need to add a lot, just a few touches here and there. I will give a full tour in stories and tag a few items. Majority of the decor came from @krumpetshomedecor and the towels and bat banner from @theblessedpeach

Hello Tuesday! Hope you are doing well. It’s sta Hello Tuesday! Hope you are doing well. It’s starting to feel like Fall here in Northern California. The mornings and evenings are feeling crisp. I can’t get over that we are in the middle of September. Where did the Summer go?
🎃
I’m sharing with you the corner of my living room where I store my pumpkins that I grew before I can take them outside. It’s been too warm for them and I want them to last through October. They have been doing well, as they have been here since the middle of August.
🎃
I’m excited because this Saturday our local pumpkin patch will be opening. They have a huge variety of pumpkins and very inexpensive too. I’ll be stocking up. I just love this time of year.

I’ve taken a little break from posting here because I have been busy on the dogs Instagram page. It’s hard to keep up on both. The dog page is so busy with birthdays, events and engagement. They have a busier social life than me.

I am sharing with you the last view of my kitchen before it is filled with Halloween. I spent 6 hours yesterday cleaning all the cabinets, appliances, sink and floor. I even did the windows. It sure tired me out. I’m not as young as I used to be. But it is so sparkly clean. I did put up my Halloween and I can’t wait to share with you. The dining room is the next room to conquer.

Hi, it’s me Samuel!! I am taking over mamas page Hi, it’s me Samuel!! I am taking over mamas page today because I got the best gift in the whole world and it even came in the mail on my birthday. How did @downlitebedding know? They are so good!
🐾
Downlite Bedding sent me the EnviroLoft® Down Alternative PrimaCool™ Cooling Comforter. Isn’t it beautiful? It’s so soft, cozy, hypoallergenic and it makes me so happy.
🐾
The comforter is 400 thread count, it has moisture wicking and cooling technology to help regulate body temperature, which is perfect since I get warm in the summer with all my hair and I like to be cool when I’m sleeping. A big plus is the comforter is white, I hide very well in it. It’s hard to see me. So mama can’t catch me on her bed.
🐾
The EnviroLoft® Down Alternative PrimaCool™ Cooling Comforter also has a Scotchguard stain release fabric and machine wash and dry. It’s truly an amazing comforter.
🐾
Mama let me do this takeover today because she knows that I love @downlitebedding as much as she does. She said she has never seen me get so excited as I do when we get Downlite Bedding and pillows in the mail. How can I not get excited? It’s like sleeping on a cloud!
🐾
Downlite Bedding was kind enough to give us a 20% discount: DYGEN20

Happy Thursday! Here is a view of my garden that I Happy Thursday! Here is a view of my garden that I took a couple weeks ago. My garden really overgrew this season. I need to do some major work in it, but with the heat, it’s just unbearable to be out there too long.
🌼
I had a lot of zinnias self-seed this season which is cool, but they kind of took over. They crowded out some plants, so I need to get in there and pull some out. Plus being so crowded, they got powdery mildew. Yuck!
🌼
I’m thinking for the Fall making this area a little harvest pumpkin area. We will see. I have grand ideas in my head, but I don’t always follow through. lol
🌼
How your garden growing? I lost all my potted plants from the heat. 😩

Hello Monday! This weekend I made a little charcut Hello Monday! This weekend I made a little charcuterie setup for my husband and I. This is something that I just love to do. I could just eat this type of meal all day long.

I am sharing the “All White Collection” from @bzaar_wholesale. Each piece to the collection is so elegant and can be used all year round and would be gorgeous around the holidays.

The tray is made of marble with beautiful gold handles. The cheese knives are gold with solid marble handles and compliments the tray perfectly.

I used the marble flower shaped bowl for putting chocolates, but would be so stunning to use on your coffee table, side table and more.

The cake stand is has a marble base with Mother of Pearl edging and has a glass lid to go over the top. I will be putting my cakes and cookies on it in the future, but for now I used it to place my bruschetta.

@bzaar_wholesale has amazing products for your home, great pricing and global shipping. The link is in my bio.

Do you like making charcuterie boards? What do you add to yours?

Hello, hello! It may be 100 degrees outside, but I Hello, hello! It may be 100 degrees outside, but I can’t resist putting out some Fall. Especially when you get new decor from @12timbers. You would laugh if you came into my living-room. Half my room is Fall, the other half is still coastal blues. lol I’ll eventually change it all out.
🍂
Let’s talk the art work. Isn’t it stunning? My husband never says anything about my decor, but he keeps talking about how much he likes the framed art from 12 Timbers. I agree, it’s so beautiful. It reminds me of when I lived back east and we would go to Letchworth Park in NY. The colors are stunning and goes perfectly with the burnt orange color that I’m using this season.
🍂
I just adore the wooden cut out pumpkins from @12Timbers. When I look at them they make me smile. The orange wooden leaf is the perfect piece to bring everything together. This gets me so excited for Fall decorating. Now to finish the rest of the living room.
🍂
12 Timbers is so kind to give me a discount code. It’s good until Saturday at midnight. The code is PBANDP15.

Look at this friends! It’s my first Fall vignett Look at this friends! It’s my first Fall vignette. Notice anything that seems a tad early? It’s my first pumpkin from my garden. Can you believe it? They started to grow early this season so it’s time to start picking. Unfortunately the massive one I showed you a couple weeks ago didn’t make it. It collapsed in the middle. That makes me sad, but at least I have more pumpkins growing.
🎃
I really had fun bringing out some Fall decor. Fall is not my favorite season, as I love Spring and Summer, but Fall is my favorite to decorate for.
🎃
I wanted to share with you my new reversible blocks from @krumpetshomedecor. Aren’t they cute. They would look so pretty on a shelf. The one side says Fall and the other side says Boo! The two wooden pumpkins are also from Krumpets Home Decor.

Hello Tuesday! One of my favorite summer drinks is Hello Tuesday! One of my favorite summer drinks is a nice cold glass of lemonade. I like it a tad sour over sweet. It gives you the zippys in your mouth. I do love a good homemade lemonade, but once in awhile I like to cheat and just get my favorite store brand and add some freshly cut lemons and a few sprigs of mint. It then looks homemade when it’s not.
🍋
This is my outdoor dining area. I put the tablecloth over the table and have kept it like that all summer. I love my table, but being black, it’s extremely hot when you touch it. Plus it has water spots from last year which is annoying. Not sure how to get rid of them?

Happy Monday! Now I know what you are thinking, Ha Happy Monday! Now I know what you are thinking, Halloween and Fall decor in July? Have I lost my mind? Nope, I haven’t, but on Saturday @krumpetshomedecor launched their Fall and Halloween! Soooooooo many cute pieces, I’m obsessed!
🎃
It’s hard to imagine Fall in a couple of months when the temps have been in the 100’s, but it will be here soon. Time to start planning!!!
🎃
How I styled my bar cart is just an idea. Once I pull out my Fall/Halloween bins you will see these pieces in other parts of my home. The black wooden witches books will go in my kitchen to go with my black and white kitchen that I do every Halloween. The witches broom will also go on my shelf in the kitchen as my boys 🐶🐶 have been eyeing it up. I need to keep it away from them.
🎃
The beautiful reversible art work will go in my living room, as I like to do oranges and neutrals for fall. The 3 wooden pumpkins will go on my console table. I have it all planned out in my head. I’m kind of excited, but I will enjoy summer a little while longer.
