Hamburger Soup

Hi Everyone and Happy Monday,

Wow, I can’t get over the weekend is gone.  I have one more week of work left and then I am on holiday break!  Yah, I can’t wait!!!  I do not have any plans except to catch up on household chores and working on my blog.  Today I have for you a wonderful soup that is so simple to make, filling and a man pleaser!!

This is my Hamburger Soup!  It was so cold out and all I could think about was having a nice hot bowl of soup for dinner, but I wasn’t sure what to make.  So I was digging through my refrigerator and it came up pretty empty, but I saw some ground beef and thought Taco Soup, but my Husband said nah!  So I decided to whip up hamburger soup, because who doesn’t like hamburgers?  My Husband was pretty weary of hamburger soup, but once he had it, he loved it!!  He already told me he wanted left overs for dinner the next night.  Hey, I’ll agree to that, it’s an easy dinner!!  Love it!!


This soup is pretty easy to make too!  One pot is all you need!!!  I cooked my ground beef with onions, garlic and celery and cooked it until no more oil was left in the pan.  I added beef broth, tomato sauce, canned tomatoes, frozen corn and some seasoning   That’s it.  The whole process took about 40 minutes to make.  The soup was perfect!  Thick, hearty, not super high in calories and everyone loved it, including Little Jenny!!  I can guarantee I will be making this soup again!!  By the way sorry for the crocked photos, it seems my soup bowl is not level.  Very odd!  lol

Oh, I almost forgot, for an added heartiness, I used some elbow noodles that I had.  My Husband always loves noodles in his soup.  I wasn’t sure about it, but it was just right!  I only used 3 oz, which was the right amount.  I can guarantee anyone in your family that likes hamburgers will love this soup.  I served mine with a big side salad and of course my Husband used like half a box of oyster crackers.  He drowns every soup in it!!

A thick and hearty soup made with ground beef, tomatoes, corn and seasoning.
Serves: 8 Cups
Ingredients
  • 1 tsp. olive oil
  • ½ cup onions, diced
  • 1 clove garlic, minced
  • ½ cup celery, diced
  • 1 lbs ground beef
  • 1 14oz. can diced tomatoes
  • 1 14oz can tomato sauce
  • 4 cups beef broth, reduced sodium
  • 1 cup corn, frozen
  • ¼ tsp. salt
  • ¼ tsp. parsley
  • ¼ tsp thyme
  • ¼ tsp. oregano
  • 6 oz (1½ cups) pasta, small size such as small shells or elbow
Instructions
  1. In a large pot add olive oil, onion and garlic, saute for about 2 minutes. Add celery and sautee for about another minute.
  2. Add ground beef and cook until no longer pink. Drain the oil out or cook until it evaporates.
  3. Add diced tomatoes, tomato sauce, beef stock, corn and seasoning. Bring to a boil. Add pasta. Cook until pasta is done (about 10 minutes)
  4. Optional: serve with a sprinkle of cheese

Well my Peeps, I must be going.  I have goodies in the oven and I need to make more.  I’m kind of behind on my blog recipes, since I was sick on Saturday.  I ate some old crackers and boy did that make me ill!!  But it’s Sunday now and I feel all better!  Yah!
