I am so excited for today’s post! I joined the Great Food Blogger Cookie Swap! I love this swap. Last year I did the swap too and it was the first time I actually felt apart of the food blogging community. So this event is near dear to my heart! I met some wonderful food bloggers last year and I did the same this year! Not only do you get great cookies, but you also get to met great people!
For the swap this year I made Reese’s Monster Cookies which is filled with what else? Reese’s pieces and for an added kick I added crunch I added crushed cashews to it! These cookies were hard to giveaway, but I managed to keep 5 of them to myself. I sent my cookies to Melanie from Melanie in the Middle, Sarah at Little Kitchen Lovely Food and Nikki at Pennies on a Platter. Hope the ladies enjoyed the cookies!
I received 3 fabulous cookies in return! The first one I got was from Rachel from Teacher by Day – Chef by Night. They were a Snickerdoodle Molasses Cookie. Yummy! These cookies were chewy and delicious! I woke up in the morning and my family ate half the batch! Glad I got my photo in!
The second cookie I got was from Jill from Goodbye Fat, Hello Jill. Jill made a wonderful Vegan Thumbprint with Black Berry Jam! These cookies are fabulous and so creative. I had one every morning while I ran off to work. I just love that this was a healthy cookie! It gave me energy and kept me full for a couple hours! I can’t wait for the recipe!
The 3rd cookie I received was from Jenni at the Gingered Whisk! Oh my gosh, Jenni’s cookies melted in my mouth!! They are a Citrus Butter Cookie! Matter in fact I’m eating one right now!! When they arrived, my friend was over and when we took a bite we were in cookie heaven!!! I’m telling you, they really do melt in your mouth and the lemon flavor is so perfect int his cookie!
I just love all of the cookies I received! Thank you so much ladies for brightening my day with these super delicious cookies!!! I wish we could do this cookie swap all of the time, because they are so good and it’s so fun to get a cookie surprise in the mail.
I didn’t tell you in my cookie I also added peanut butter chips for a little extra peanut butter flavor. The cookies turned out fat, full of peanut butter flavor and an added crunch from the Reese’s pieces. They were fun to make!! The batter was really good too!
Reese’s Monster Cookies
Ingredients:
1 cup butter
3/4 cup brown sugar
1/2 cup granulated sugar
1/2 tsp. baking soda
1/2 tsp. salt
2 eggs (I used 1/2 cup egg substitute)
1 tsp. vanilla extract
2 3/4 cup all purpose flour
1 cup Reese’s Pieces
1 Cup Reese’s Peanut Butter Chips
1 Cup cashews, chopped
Directions:
Preheat oven to 350 degrees
Line two baking sheets with parchment paper; set a side
In a large bowl beat butter on high speed for 30 seconds. Ass brown sugar, granulated sugar, baking soda and salt. Beat until combined.
Beat in eggs and vanilla extract until combined. Beat in as much flour as you can with the mixer. Stir in any remaining flour.
Fold in Reese’s pieces, peanut butter chips and cashews.
Drop the dough by a cookie scoop and place 2″ apart in baking sheet.
Bake in oven for 10 – 13 minutes, until the bottom is lightly golden. Let cool on cookie sheet for 2 minutes then transfer to a cooling rack; cool completely.
