I have a recipe that is not glamorous, it’s not sexy, it’s not beautiful, but it is easy, kid friendly, dog friendly (yes my dogs have their say) and Husband approved! It is my combination between a baked burger and a meatloaf!
I make these burgers, or um meatloaf, quite a bit. I have taken pictures of them and they never turn out, I gave up and decided to show you anyway. Sometimes it’s nice to have a simple recipe that will please any pallet in your home!! I always try to show you something different and maybe a little more work or complicated, ok not so complicated, but I thought I would show you a dinner that takes like 5 minutes to throw together and then just pop it in the oven. This is basically my portion control meatloaf, however they are more like a hamburger.
I basically start with the same recipe, which is lean ground beef, Worcestershire sauce, ketchup, seasoning and an egg, mix it all together and portion it out and place into a 10oz ramekin. Bake in the oven for 30 minutes and then the fun begins!! I add the toppings to what my family members like. Jenny loves extra cheese, my Husband likes the crispy onions and extra cheese and me, I like chipotle ketchup and jalapenos. I love that you can make one main recipe and top it to what you like. Cooking it in ramekins leaves room for you to pile high your add on’s without it falling off, like you would grilling a burger.
I always crave burgers and with the rainy and cold weather, I do not have any desire to stand outside in front of a grill and cook. That is what is so great about this recipe. I have to tell you my Husband shocked me, almost fall off my chair in shock, he said he liked these baked burgers, better than grilled burgers. What? All these years I never knew that! I was floored!!! He said they taste like meatloaf and they are more moist then grilled burgers. Personally I like them both, but I really never met a burger I didn’t like. However I do like this better than traditional meatloaf. I was never a meatloaf fan. But if you want more of a meatloaf consistency, bake these in 4 or 6 oz ramekins and they puff up like meatloaf. I have done that too!!
- 1lbs. lean ground beef (96%)
- 2 Tbsp. ketchup
- 2 tsp. worcesterchire sauce
- 1 egg or substitute
- 1 oz lite cheddar cheese (I used a blend cheddar cheese)
- ¼ tsp pepper
- 1 dash salt
- ¼ tsp. Italian Seasoning
- ¼ cup panko whole wheat bread crumbs
- **Topping**
- 1 Tbsp. ketchup
- **Additional Toppings**
- Cheese
- jalapenos
- spicy ketchup
- crispy onions
- bacon
- Preheat oven to 350F
- Spray four 10 oz ramekins for burger size or four 6 oz ramekins for meatloaf size with cooking spray; set aside.
- In a bowl, mix all of your ingredients (except for the toppings) and mix well until combined. I used my my hands.
- Evenly divide the beef mixture into 4 equal parts and place into ramekins.
- Place in oven for 30 minutes
- Brush remaining ketchup and add any additional toppings at this time.
- Bake for an additional 10 minutes. Once done, let the burger/meatloaf sit for a few minutes.
See what I mean, it’s so simple, but we really love it here and I felt I should share it with you. With the cold weather and the busy days before Christmas, it’s so nice to just make a quick meal and let your oven do all the cooking. I really do love these burgers and I love my toppings!! You didn’t see it in the picture but I also topped mine with some nacho cheese. he he
