Mini Chocolate Chip Blondies

Hi Everyone,

I’m going to be upfront with you, I am not a good cookie!

I was given the assignment from DailyBuzz Food to have a cookie exchange or a cookie sale to help raise money for Cookies for Kids with Cancer, but I failed at my assignment.  I didn’t have the resources to have either.  I didn’t know where to turn, I cried and was devastated.  I didn’t want to let the kids down.  So I contacted DailyBuzz Food and told them my dilemma, they understood, but we agreed that I would still do a post for Cookies for Kids with Cancer because it is such a wonderful and worthy cause.  Since I couldn’t have a cookie sale, I am personally donating $100.00 to Cookies for Kids Cancer.


Cookies for Kids’ Cancer, a 501(c)3 non-profit, was founded by parents inspired by their son Liam’s battle with cancer. They were shocked to learn that the main reason over 25% of kids diagnosed with cancer do not survive is because of a lack of effective therapies. And the reason for the lack of therapies was very simple: lack of funding. They pledged to support the development of new and better treatments by giving people a simple way to get involved.  So what Gretchen (Mom) did was bake 96,000 cookies, yes 96,000!!!!  She sold them all within 3 weeks with the help of 250 volunteers and raised $400,000 to support Children under the age of 18 with Cancer.

Facts about Kids’ Cancers:
Cookies for Kids’ Cancer is not about one child or one type of pediatric cancer. It is about changing the facts of pediatric cancer  for the better, forever. Important statistics to know:
  • Cancer claims the lives of more children annually than any other disease ” more than asthma, muscular dystrophy, multiple sclerosis & AIDS combined.
  • 46 children per day are diagnosed with cancer totaling nearly 13,000 new cases per year.
  • Cure rates have improved dramatically and advances in childhood cancer research has provided seminal insights into the cancer problem in general. Today, 4 out 5 children diagnosed with cancer can be cured.
  • While long-term goals for the pediatric cancer community will focus on securing more federal funding for childhood cancer research (more than the 1-2% of the National Cancer Institute budget that is current expended), philanthropy plays a critical and essential role in the ongoing battle against childhood cancer.

GLAD has teamed up with Cookie for Kids Cancer by having a virtual cookie exchange.  It’s free and all you have to do is donate a virtual cookie and every virtual cookie that is created GLADE will donate .55 cents to Cookie for Kids with Cancer.  It’s simple and fun!!  Please donate a virtual cookie, it only takes a second and you could help a kid with cancer.      As I am writing this, so far they have sent 3861 virtual cookie.  If we make it to 6500 cookies, glad will up their donation to .65 cents.  Plus GLAD is having a sweepstakes and you could win Sweet Baking Kits!  How cool is that.  All you have to do is go here and make a virtual cookie!!!  I made mine, and it’s cute!  It’s a Snowman Cookie with Holly’s decorated on the GLAD container!

The cookies I chose to make for Cookies for Kids Cancer is Mini Chocolate Chip Blondies!  I thought that most people and kids all love chocolate chip cookies, they are my personal top two favorite cookie, next to Peanut Butter.  But I didn’t want to make a traditional chocolate chip cookie, but I wanted to make one more like a little muffin!

The cookies are very simple to make.  I melted butter in a pot, and then added the rest of the ingredients to the same pot.  Gave it a good mixing and scooped the batter into a mini muffin tin.  I popped them in the oven for 10 minutes and out came these adorable little cookies.  To give them a little more holiday pizzazz, I decided to use holiday color chocolate chips, because it’s more festive!!

The cookies turned out wonderful!  They are crispy on the outside and soft and chocolaty on the inside.  These would make a fabulous cookie for shipping, which is what I plan to do.  If your inclined you could also make these in a standard muffin tin and when they are still warm, top one with a little bit of ice cream and have it as a dessert!!  I will tell you, when making the cookies, be sure to spray your tin or muffin liners with lots of cooking spray, they tend to stick.  I used a butter knife to get the out and a bang on the counter and they popped out.  Just be sure to let them completely cool in the pan before trying to remove the cookie.

Mini Chocolate Chip Blondies

This mini chocolate chip cookie is sweet, crispy on the outside and soft and chocolaty in the center and is made on the stove top and baked in a muffin tin.
Serves: 24 Mini Chocolate Chip Blondies
Ingredients
  • 1 cup whole wheat pastry flour
  • 1 tsp. baking powder
  • ¼ tsp. salt
  • 8 tbsp (1 stick) unsalted butter
  • ½ cup light brown sugar
  • ¼ cup egg substitute or 1 large egg
  • 1 tsp. vanilla extract
  • ½ cup milk chocolate chips (I used Holiday Semi-Sweet Chocolate Chips)
Instructions
  1. Preheat oven to 375°F.
  2. Generously spray mini muffin tin or paper muffin cups with nonstick cooking spray.
  3. In a small bowl, mix flour, baking powder and salt; stir; set aside
  4. Melt butter in a medium saucepan over low heat. Remove from heat and stir in brown sugar. Let cool slightly, then stir in egg and vanilla until smooth. Stir in flour mixture, then chocolate chips.
  5. Portion out about 2 tablespoons of batter into each muffin cup and smooth tops with a small spatula or back of spoon. Bake until just set, 10 minutes. Let blondies cool completely on a wire rack before removing from pan.

    My daughter and I just made these together and they are so delicious. Great cause!!!
    My batch didn’t make 24 and it only fit 1 tablespoon in the tin making 20. Just wanted to share 🙂

Even though it may not feel like Spring,  there is no reason why we can’t start prepping for it. It’s going to be time soon to plant flowers, add a floral wreath to the front door and of course a welcome mat to invite everyone to your home.

I did have a very hard time taking my sink tray off the counter. I’ve had the tray there for years, so I thought I would change it up. Don’t be surprised if the sink tray makes its way back. 😂 I may add some herbs to my window sill for some fresh green color.

I used @cloth.bristle to clean my kitchen counters and sink. I love cleaning my sink with it. It makes it so sparkly and smells good too! Love that it’s all natural.

Happy Friday! Our next winter storm is here! It is Happy Friday! Our next winter storm is here! It is just awful out there. Heavy rain, high winds and hail. This is not a winter that we are used to in California.

My husband and I are not fancy when it comes to eating dinner. Since it’s just the two of us, we never use the dining room table, but always eat at the kitchen counter.

There is no reason why we can’t eat fancy at the kitchen counter. I am using my new placemats that I got from @vmathome. They are thick, water, stain resistant and can handle heat up to 350F degrees. I love the color and style of the placemats. They have a wide variety of styles and colors, along with matching table runners.

I styled my table with bright spring colors that I was inspired by carrots. I still have bunnies on the brain. lol I had fun with this place setting, it’s so nice to have dinner with a little style then having it on a plain plate and paper napkins.
