Apple Maple Glazed Pork Tenderloin


I had quite a busy day today!  I sent my cookies out for the Great Food Blogger Cookie Swap today, yah!!  I’ll tell ya, packaging took me longer than baking the cookies!  The worse part about the swap is shipping the cookies.  I cross my fingers they make it safely, I kind of packaged them tight, so I hope my receivers don’t get mad if they can’t get the box of cookies out of the box.  It was a struggle putting it all together!!  After that I made a frappe and then conquered my front room.  Finally after talking about it for what two or three days?  It was a task well done!!  After that I made this for dinner.

But before I get to dinner, I thought I would share with you my new blogging prop set-up.  I bought this shelf from Target online.  It was only $89.00 and if you have a red card debit card it’s free shipping and 5% off.  I highly recommend if you’re a Target shopper to get the Red Card debit card.  You only need to bring a check with you and they take all your info and in two weeks you get your shiny new card in the mail, oh and there is no charge for the card or credit check.  🙂

The shelf is packed!!!  I still had to find room for my extras, like glasses, but this will do for now.  Here is the top of the shelf.  I put my pizza stone, griddle and tea towels and place mats for easy grabbing.

 The top shelf has all of my bowls and little accessories.  This was a problem area since I have so many little things.  I really need another shelf.

The middle shelf has all of my plates and colorful straws.  I love the straws, they are so pretty.

The bottom shelf has a good portion of my cookbooks.  When I participated in the Emeril Lagasse’s Serious Sandwich group, they sent me all of Emerils Cookbooks.  Score!!!  However, that is a lot of cookbooks.  I know I have other cookbooks hidden throughout my house,

So this is my front room.  It’s a tight squeeze, but eventually I want to get rid of the couch and maybe get a desk so I can work in here instead of at the kitchen table.  It’s looking like I may not have room for a Christmas tree.

After I finished my room, I went out and got the mail.  The box was hard to open and I can see why.  I feel like I won the magazine lottery.  Look at them all. I never get this much mail!  I guess the companies are really gearing up for Christmas.  At least I have some reading material before I go to bed.  Oh and see the little yellow runner next to the magazines?  I got that to!  That was a nice surprise!!

After my busy day the last thing I felt like doing was making dinner!  Blah!  But I promised my Husband Pork Tenderloin for dinner.  I debated on how to make it, but I didn’t feel like baking it because the pan gets so icky, from the glaze sticking to it, so I decided to try making pork a different way.  I seared it first in a pan then added my glaze, covered it and then cooked it for about 7 minutes.  Awesome way to cook pork.  It was so tender and the best part, no mess!!!

The glaze for the pork screams Fall!! It’s so good that you could lick the plate clean!!  I’m not kidding about that!!  The sauce is amazing!!  It’s made with apple cider, maple syrup, onion powder and thyme.  Poured it over the pork and cooked it together.  Then to thicken up the sauce, I removed the pork and added a cornstarch mixture into the sauce and whisked it until it was thick and almost caramelized   Perfection!!!  The sauce was sweet but not overly sweet.  I used spiced Apple Cider that I picked up from Trader Joe’s, but apple juice would work too!!

The pork took about 15 – 20 minutes to make.  Not to bad, quick and easy is how I like it!  My Husband liked it too!!  I have a couple of pieces left and I think I’m going to make a sandwich with it tomorrow.  It’s so tender that I don’t see any reason why it wouldn’t make a great sandwich.  I have a sandwich recipe floating around my head.  If I make it, I’ll share it with you!

Apple Maple Glazed Pork Tenderloin

A quick and easy, sweet and savory pork tenderloin with an apple cider and maple syrup glaze.
Serves: 4 - 4 oz servings
  • 1lbs. pork tenderloin, cut into medallions
  • ¼ tsp salt
  • 1 dash ground pepper
  • ½ cup apple juice or apple cider
  • 2 tbsp. maple syrup, sugar free
  • ½ tsp. onion powder
  • ¼ tsp. thyme
  • 1 tsp cornstarch
  • 1 tsp. water
  1. Sprinkle pork with salt and pepper.
  2. In a large skillet add pork. Sear each side for abut 4 minutes, until all sides are no longer pink.
  3. In a small bowl add apple cider, maple syrup,onion powder and thyme; mix until combined. Pour mixture into skillet with pork and cover. Cook for about 7 minutes.
  4. Meanwhile in a small bowl add cornstarch and water; mix until combined.
  5. Set the pork onto serving plate and add cornstarch mixture to the pan and whisk until thick and bubbly, about 2 minutes.
