Chocolate Peppermint Loaf Bread

Howdy Partners,

I told you I’d be back with another peppermint recipe!!  I am officially addicted to peppermint.  It’s horrible!!  No it’s not, who am I fooling?  I love peppermint!!  And I love peppermint with chocolate even more!!!

This bread is amazing!!  It’s sweet, chocolaty and has little surprises of mint chocolate chips in it!!  It’s like eating a big chocolate brownie, just a tad healthier!!   During baking, the smell of my house was like Christmas, it smelled like a big mug of hot chocolate with a slight aroma of candy canes.  Oh man, I couldn’t wait for the bread to be done.  My Husbands friend came over and I told him if he waited 10 minutes, I’d give him some bread.  He did, I gave it to him while it was still hot and soft.  He smelled it and was like OMG!  He said I shouldn’t eat this.  I told him go ahead.  It’s not to bad for you.  I don’t like to tell people something is healthy, otherwise they won’t want to eat it!  Strange I know!


About 15 minutes after my Husbands friend left our house, my Husband and I were walking to the store and my Hubby got a text message from his friend.  His friend said “tell Jen the bread is excellent ”  Yah!!!  I told my Husband he just left our house, the bread was still hot!  lol, I guess he couldn’t wait! This bread is really delicious.  I can see heating it up in the microwave and putting a dollop of vanilla ice cream on it and maybe some peppermint whip cream.  This bread would make such a great dessert!!

My Husband took the bread to work, and I asked him what he thought, and he loved the chocolate chips in it.  He said they were little bites of pudding.  I was a little unsure if the bread would be chewy, but he said it wasn’t.  He said he loved it.  I asked if he shared him mini loaf, he said nope!  I told him I have one more mini loaf left and I was going to take it to work, he said, NO!  It’s mine!  I guess he really did like it.  One thing about my Husband is he is brutally honest about something that he does’t like and I always share his opinion with you, so when I say he liked it, he really did like it!!

Chocolate Peppermint Loaf Bread

A rich, chocolaty, peppermint flavored quick bread filled with mint chocolate chips.
Serves: 15 slices
Ingredients
  • 1 cup greek yogurt, non-fat, plain
  • ½ cup granulated sugar
  • 2 eggs or egg substitute
  • 1 tbsp vanilla extract
  • ¼ tsp. peppermint extract
  • ¼ cup milk, non-fat
  • 1 cup whole wheat pastry flour
  • ½ cup unsweetened cocoa powder
  • 2 tsp. baking powder
  • ½ tsp. baking soda
  • ½ tsp. salt
  • ⅓ cup dark chocolate and mint chocolate chips (Nestle)
Instructions
  1. Preheat oven to 350°
  2. In a medium bowl, mix yogurt,sugar, eggs, vanilla extract, peppermint extract and milk; until blended.
  3. In a separate bowl add flour, cocoa powder, baking powder, baking soda sand salt. Mix together.
  4. Make a well in the center of the flour mixture and slowly incorporate the yogurt mixture, be careful not to over mix.
  5. Fold in chocolate chips
  6. Spoon batter into a greased and floured 9- x 5-inch loaf pan or 3 mini loafs.
  7. Bake for 50 minutes to 1 hour for 1 large loaf or 30 – 35 minutes for 3 mini loafs, or until a wooden pick inserted into center comes out clean, shielding with aluminum foil after 50 minutes to prevent excessive browning. Cool in pan on a wire rack 10 minutes; remove from pan to wire rack.

Well that’s it for me to go!  It’s getting late and I still have to pack lunch!  I hate packing lunch, normally it’s a salad and I that means cutting veggies!!  Maybe I should have a PBandJ sandwich?  I haven’t had one of those in a while.

    That looks delicious! I am addicted to Trader Joe’s Chocolate Peppermint loaf cake, (a new mix) and now thanks to you I can make a healthier version 🙂 Do you think vanilla Greek yogurt would be okay to use instead of plain? Also, could I substitute white whole wheat flour for the whole wheat pastry flour? I have both those items on hand now 🙂 I saved some mint chocolate chips from Xmas last year..Thank you!

      If you sub vanilla yogurt I think it would taste wonderful. I don’t see any issues with subbing the flour either. I saw TJ’s loaf cake, but was to afraid to try it! I heard it tastes amazing!

        Thank you! Yes, the Trader Joe’s mix is fantastic and addictive 🙂 I made a loaf for a friend, and he said he finished half of it in one day!

    Is the calories for 15 slices based off each mini loaf having 15 slices, or one big loaf having 15 slices?

      Good morning! Its 15 slices for the whole recipe. If you make mini loafs, it is 5 slices per loaf or if you make a big loaf, its 15 slices. If you make it let me know what you think of it.

    Looks fantastic!! Are your nutritional values calculated using whole eggs or egg substitute? How much difference does that make? I’ve never used the egg substitute, so I don’t have any idea of how it compares to eggs.
    Can’t wait to try this one.

      I used egg substitute which is 25 calorie per serving, which is one egg. The brand I used is Reddi Egg. which I purchased at Trader Joe’s. I use it all the time in my cooking and no one notices the difference. Matter in fact my picky step-daughter loves cheesy egg omelets but we were out of eggs, so I told her to use the egg substitute and believe me she didn’t want to, and after she tried the first bite, she said it tastes the same as an egg. I was skeptical at first, but I love egg substitute. If you try the bread, let me know what you think!

    So, is that 1/3 cup each dark chocolate chips and mint chocolate chips, or a total of 1/3 of MIXED dark chocolate chips and mint chocolate chips?

      Hi Brenda! I got the Tollhouse mix of dark chocolate chip with mints in it, so a 1/3 cup total. 🙂

    Looks wonderful–I’m going to make this tonight. But one question: a *tablespoon* of vanilla? That’s a LOT of vanilla for one loaf.

Happy Thursday! A couple weeks ago I was inspired Happy Thursday! A couple weeks ago I was inspired to clean under my kitchen sink from my friend Claire @huntersridge_designs. Let me tell you I couldn’t be happier.

When I opened my cabinets, everything fell out. I had like 10 million Target bags jammed in the back, sponges everywhere and 1/2 empty bottles of cleaners.

I measured my space in the cabinet and was lucky enough that the items Claire purchased for her under the sink were the exact fit for my cabinet. 
🧽
The drawers are a game changer. Highly, highly recommend the drawers. I filled them with sponges, and dishwasher tabs. Now they are not lost and easy to grab.

Happy Tuesday! One thing you guys know about me is Happy Tuesday! One thing you guys know about me is that I love Target. It’s my happy place. I get so excited each season to see all the new things that come out.

One thing I always love is there faux vase/pot flowers and plants. They are always so pretty and I want to buy them all. But there a couple of things that stops me. The biggest one is that I have no storage for them. Two, they seemed to have gone up in price. They seemed a little pricy to me.

For my arrangement, I used one of my canisters for the bathroom. I used floral foam to stick the stems in and I used the paper towel as a filler because I only had very little bit of moss. If I had more moss and I would probably not use the paper towel. This arrangement cost me $5.99. 
🌿
Tip: If you look at Targets faux foliage stems only, they have a lot that are same of what use in there vases. The one I used was Hearth and Hand and was only $5.99 for a stem. The exact ones they used in there pots.
