Pumpkin Apple Bread / Weekly Recap

Hi Everyone,

Today I have for you a recipe remake of my Pumpkin Apple Bread.  I love this bread, but I didn’t like the photos that I took last year, so I decided on remaking it so I can take new photos. The only difference in this bread is I shredded the apples, instead of dicing them up.  You still have the great apple taste without the chunks.  If you like diced apples, by all means dice those babies up!!

This recipe makes for one big loaf or 3 mini loaves.  As you know I like to making mini loaves for sharing.  My Husband likes to take them to work and have them for breakfast.  Me, I love to just eat them fresh out of the oven while there still warm, smeared with pumpkin butter!


This bread is pretty healthy too! it comes in at 80 calories a slice and doesn’t contain oil or butter! To moisten the bread I used applesauce and greek yogurt.  This bread is unbelievably moist!!  Guilt-free and delicious, who could ask for more?

Pumpkin Apple Bread

A moist, healthy quick bread made with pumpkin and apples.
Serves: 15 slices
Ingredients
  • 1½ cup whole wheat pastry flour
  • 1 tsp. baking soda
  • ½ tsp. salt
  • 3 egg whites
  • ½ cup brown sugar
  • 1 cup pumpkin, canned not pumpkin pie filling
  • ¼ cup greek yogurt, plain
  • ½ cup unsweetened apple sauce
  • ½ tsp. cinnamon
  • ¼ tsp. pumpkin spice
  • ½ cup apple – peeled, cored and diced or shredded
Instructions
  1. Preheat oven to 350F
  2. Spray 1 large or three mini bread pans with cooking spray; set a side.
  3. In a large bowl add flour, baking soda and salt; set a side
  4. In a medium bowl, add egg whites and sugar. Mix until incorporated. Add pumpkin, yogurt and applesauce. Mix until incorporated. Add the spices and mix well.
  5. Slowly pour the pumpkin mixture into the flour mixture and mix until combined, but do not over mix.
  6. Fold in apples.
  7. Evenly pour batter into prepared bread pans.
  8. Bake 30 minutes for mini loafs and 50 - 60 min. for large loaf.
  9. Insert a toothpick, if it comes out clean, the bread is done.

This week’s recipe recap:

Sunday, was my weekly recap plus I made Cinnamon and Sugar Lavash Chips.  I love these chips, they are easy to make, delicious, crunchy and low-calorie. I’ll take that!  If you haven’t used Lavash Bread for chips, you should try it!!  The sweetness and crunch are the best!

Monday – Spiced Almonds – These were highly, highly addicting.  I snacked on so many tonight, that I had to go light on dinner.  Not only are they addicting their pretty healthy too. Almonds are a wonderful snack that gives you energy and healthy fats, as long as you can control yourself from eating them.  I need to give them away, because they are dangerous in my house!!

Tuesday – Chili Dogs – I know this isn’t a healthy recipe, but it was something that I made for my Husband.  It is another Emeril Lagasse recipe, and my Husband LOVED them!  Back in Buffalo, he would order these and call them sh!tty canoes.  Don’t ask!  I really do wish I could share the recipe with you.  But I do try to sneak in hints of what is in them in my posts.  Only one more recipe to share with you, and it’s one that is pretty easy to make.  I’ll be sure to give detailed hints in what is in it so you can make it!

Wednesday – Lunch Box for Kids – I had fun with this post and it wasn’t really a recipe, but something that I am proud to be apart of.  It is so important to teach our kids to eat healthy.    33% of kids in the US are at obesity level!  How sad is that? It’s the highest in the world.  In Germany the obesity weight is only 12%.  We need to stop super sizing our meals and eating crap!!  At least limit the crap!  🙂

Thursday – Gingerbread Frappe – Yes this was an early recipe, but being near 100’s this week, I was still craving cold drinks.  This drink is sweet and spicy!  I just loved it and I’m not even a Gingerbread person.  My Husband already told me to start making hot drinks.  They are harder ones for me to make, but I’ll do my best the next couple of seasons.  I already have some recipes in my head, that I want to try out!

Friday – Maple Pumpkin Butter – This pumpkin butter is so darn good!  I have been eating it on pumpkin bread, toast and mixing in my yogurt.  Pumpkin Butter is so easy to make, that you have to try it.  You’ll love it!!  Oh and the aroma of it cooking in your home is wonderful, warm and comforting.  It’s worth making it just for the smell!!

Saturday – Emerils Sandwich Caprese – I love this sandwich, it’s in my top 10 favorite sandwiches of all time.  I don’t know what it is about the combination of tomato and basil, but I can’t get enough of it!!!  Don’t forget to enter the giveaway for Emeril’s Cookbook!  I think you will like it no matter if you are a meat eater, vegan, vegetarian or someone who likes to make breads, dips and spreads!

    I HAVE to try that gingerbread frappe. I didn’t think I was a big gingerbread person either but at this tiny, local coffee shop last year I had a gingerbread latte and it was just like Christmas in a cup. Soooo delicious 🙂 Of course it’s already pretty cold out here in Wisconsin so the timing is perfect

    Holy moly! Those are some good eats! I find myself doing that all the time (re making something for the purpose to taking pics, lol). For awhile, I thought it was insane but quickly realized its a necessary insanity LOL

      When I look back a pictures I think oh my gosh what was I thinking!! I like to doing remakes not only for pictures but I get to try my recipe again! It seems when you blog you make something once and then you forget about it!

Happy Tuesday! One thing you guys know about me is Happy Tuesday! One thing you guys know about me is that I love Target. It’s my happy place. I get so excited each season to see all the new things that come out.

One thing I always love is there faux vase/pot flowers and plants. They are always so pretty and I want to buy them all. But there a couple of things that stops me. The biggest one is that I have no storage for them. Two, they seemed to have gone up in price. They seemed a little pricy to me. 
🌿
For my arrangement, I used one of my canisters for the bathroom. I used floral foam to stick the stems in and I used the paper towel as a filler because I only had very little bit of moss. If I had more moss and I would probably not use the paper towel. This arrangement cost me $5.99.

Tip: If you look at Targets faux foliage stems only, they have a lot that are same of what use in there vases. The one I used was Hearth and Hand and was only $5.99 for a stem. The exact ones they used in there pots.

I’m sharing heart shaped cinnamon rolls that I made this weekend. I got the idea to make them from my friend Heidi @eleanorrosehome. She made the most delicious looking cinnamon rolls, that I couldn’t resist to make. So perfect for Valentines Day and sooooo easy!

I took a can of Trader Joe’s cinnamon rolls and unraveled them, if that makes sense, and rolled them up like a palmier cookie. So fun! You could add food coloring to the frosting to make it pink and add sprinkles. Super cute! You can follow step by step recipe on Heidi’s Instagram page!

I’m sharing with you my corner of my living room. I love how open this space looks. I added greenery to give it a fresh look. I also stuck with mostly natural colors with an exception of some blues to bring my whole living room together.
