Almond and Anise Biscotti

Hello, please come in and have a seat.  I set the table for you!

This past Sunday I woke up craving my favorite breakfast from a little bistro that I love, but I couldn’t go because my Husband was working in the garage and Jenny was at her boyfriend’s house, so I stayed home. After all it’s not fun going to a restaurant by yourself. My favorite thing from the bistro are these little anise biscotti that they bring you with a cup of coffee.  I love those biscotti.  I was really craving them, so I thought why not make some?  After all this has been on my food bucket list for a year now!  Since I was home bound  I decided to throw you and I a little tea party!

These biscotti are crunchy, but not to crunchy and have the slightest flavor of anise and almond.  I added one cup of slivered almonds to them for a little added crunch and flavor.  I am very pleased with the outcome.  I wasn’t sure at first because the dough is a little sticky, but nothing that a little roll in some flour couldn’t fix!


Do you like my fine china ware?  They were my Mom’s.  I always loved them as a kid and before she moved to North Carolina she gave them to me.  I love them so much and they remind me of Thanksgiving.  It was one of the few times of year she would bring them out.   Thanks Mom for giving them to me!  I do love them!!  I thought having a little tea party would be the perfect opportunity to use them.

These little biscotti’s would be wonderful to serve at a brunch or to give as a gift at Christmas time.  Yes I’m already thinking Christmas.  Plus you can freeze them for later!! I debated about adding a lemon glaze to the biscotti to add some more sweetness to them, but as you can tell from this weeks recipes, that I don’t need anymore sugar.  I recommend adding some glaze if you like.  Just take 1/3 cup powdered sugar and mix with a dash of lemon juice until it’s a constancy you like, then drizzle over the biscotti.  I know lemon would just be wonderful on them!!

A crisp and crunchy Italian cookie with the flavors of almond and anise.
Serves: 61 cookies
Ingredients
  • 4 tablespoons butter, softened (Brumble and Brown)
  • ¾ cup sugar
  • 4 large eggs or Substitute (I used 1 cup substitute)
  • 1 teaspoon almond extract
  • ¾ teaspoon anise extract
  • 1½ cups all purpose flour
  • 1¼ cup whole wheat pastry flour
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 1 cups sliced almonds, lightly toasted
Instructions
  1. Preheat the oven to 350F degrees, and position the oven racks in the upper and lower thirds positions.
  2. Line two baking sheets with parchment paper; set a side.
  3. In the bowl of an electric mixer, beat the butter and sugar on medium speed until creamy.
  4. Add the eggs, one at a time, beating well after each. Continue to beat the mixture for 2 minutes more.
  5. Beat in the almond and anise extract.
  6. In a medium bowl, whisk together the flours, baking powder, and salt. Slowly add the flour mixture into the sugar and butter mixture; mix until just incorporated.
  7. Fold in the almonds.
  8. Transfer the dough to a floured work surface, and divide the dough into 3 equal pieces. Shape each piece into a 12-inch log, space two of the logs 2" apart on one of the prepared baking sheets and the third log on the second sheet.
  9. Bake for 15-18 minutes, until golden on top and lightly cracked. Half way through the baking, rotate the baking sheets.
  10. Remove the sheets from the oven and allow to rest for 10 minutes. Reduce the oven temperature to 300F degrees.
  11. Using a serrated knife, cut each log on the diagonal into ¾-inch slices. Lay the slices on their sides and bake in the oven for 10-15 minutes, or until lightly golden.
  12. Turn the oven off and open the oven door to let the biscotti cool in the oven.

P.S.  These little guys would also be perfect as an evening snack served with a cup of chamomile tea just before bedtime!  I think that is what I will do this evening!

    I know what you mean about it being no fun to go to a restaurant alone. I only do it sometimes to get frozen yogurt, but I guess that doesn’t count as a restaurant haha! Your biscotti look amazing! Nice job 🙂

      I don’t mind going fast food or even Panera by myself, but not breakfast or dinner that just seems weird to me.

    I plan on making these this weekend. I made your pumpkin biscotti was a first attempt at biscotti. I didn’t realize they would rise of much and I ended up having a biscotti bread that was quite big and didn’t cook evenly. The flavor was wonderful though. There was too much sugar in there for me. Did you experiment at all with adding applesauce or other sugar alternatives. Thanks so much for insipring me to cook and bake.

It’s time for my annual pumpkin bath picture. I It’s time for my annual pumpkin bath picture. I don’t know what it is, but I love to give pumpkins a bath. Don’t they look cute bathing in the sunlight with bubbles around them? lol

There are two methods that I have used  in the past; the chlorine bath and the dish soap bath. This is what I have learned.

My favorite and only way I wash pumpkins now is using dish soap.  It gets rid of the sap and makes them clean. I soak my pumpkins for about 20 minutes. The pumpkins will last until December. Plus if you keep your pumpkins after the holidays it will decay and grow pumpkins the following year. Plus it’s safe for animals that may nibble on your pumpkin.

The chlorine bath method will make your pumpkins last possibly up to a year. They take very long to break down and I never got my pumpkins to seed themselves. Plus it is not safe for animals in my opinion. Though Clorox Bleach says it’s safe, they just taste salty.

The key to washing pumpkins is to make sure that you get the area around the stem dry. You don’t want water around the stem. This could make your pumpkin rot sooner. So after the bath, dry your pumpkins off very good.

PS if you are in the Bay Area, I highly recommend going to @threenunnsfarm to get your pumpkins. They have a wide variety and the pumpkins and are .75 a pound. I bought all these pumpkins for $42.

I’m sharing with you the corner of my living room where I store my pumpkins that I grew before I can take them outside. It’s been too warm for them and I want them to last through October. They have been doing well, as they have been here since the middle of August.

I’m excited because this Saturday our local pumpkin patch will be opening. They have a huge variety of pumpkins and very inexpensive too. I’ll be stocking up. I just love this time of year.

Happy Monday! I want to thank those who have reach Happy Monday! I want to thank those who have reached out to me asking if I am okay. I am doing just fine. I’ve taken a little break from posting here because I have been busy on the dogs Instagram page. It’s hard to keep up on both. The dog page is so busy with birthdays, events and engagement. They have a busier social life than me.

I am sharing with you the last view of my kitchen before it is filled with Halloween. I spent 6 hours yesterday cleaning all the cabinets, appliances, sink and floor. I even did the windows. It sure tired me out. I’m not as young as I used to be. But it is so sparkly clean. I did put up my Halloween and I can’t wait to share with you. The dining room is the next room to conquer.

Happy Thursday! Here is a view of my garden that I Happy Thursday! Here is a view of my garden that I took a couple weeks ago. My garden really overgrew this season. I need to do some major work in it, but with the heat, it’s just unbearable to be out there too long.

I had a lot of zinnias self-seed this season which is cool, but they kind of took over. They crowded out some plants, so I need to get in there and pull some out. Plus being so crowded, they got powdery mildew. Yuck!

Hello Monday! This weekend I made a little charcut Hello Monday! This weekend I made a little charcuterie setup for my husband and I. This is something that I just love to do. I could just eat this type of meal all day long. 

I am sharing the “All White Collection” from @bzaar_wholesale. Each piece to the collection is so elegant and can be used all year round and would be gorgeous around the holidays.

The tray is made of marble with beautiful gold handles. The cheese knives are gold with solid marble handles and compliments the tray perfectly.

I used the marble flower shaped bowl for putting chocolates, but would be so stunning to use on your coffee table, side table and more.

The cake stand is has a marble base with Mother of Pearl edging and has a glass lid to go over the top. I will be putting my cakes and cookies on it in the future, but for now I used it to place my bruschetta.

You would laugh if you came into my living-room. Half my room is Fall, the other half is still coastal blues. lol I’ll eventually change it all out.

Let’s talk the art work. Isn’t it stunning? My husband never says anything about my decor, but he keeps talking about how much he likes the framed art from 12 Timbers. I agree, it’s so beautiful. It reminds me of when I lived back east and we would go to Letchworth Park in NY. The colors are stunning and goes perfectly with the burnt orange color that I’m using this season.

Look at this friends! It’s my first Fall vignett Look at this friends! It’s my first Fall vignette. Notice anything that seems a tad early? It’s my first pumpkin from my garden. Can you believe it? They started to grow early this season so it’s time to start picking. Unfortunately the massive one I showed you a couple weeks ago didn’t make it. It collapsed in the middle. Hello Tuesday! One of my favorite summer drinks is Hello Tuesday! One of my favorite summer drinks is a nice cold glass of lemonade. I like it a tad sour over sweet. It gives you the zippys in your mouth. I do love a good homemade lemonade, but once in awhile I like to cheat and just get my favorite store brand and add some freshly cut lemons and a few sprigs of mint. It then looks homemade when it’s not.

This is my outdoor dining area. I put the tablecloth over the table and have kept it like that all summer. I love my table, but being black, it’s extremely hot when you touch it. Plus it has water spots from last year which is annoying. Not sure how to get rid of them?
