Sopressata and Genoa Salami Calzones

Hi Everyone and Happy Tuesday!!

I’m back again with my 3rd sandwich from Emeril Lagasse’s new cookbook Kicked-Up Sandwiches!  I am so enjoying this cookbook!  There are so many things I want to make, I don’t know where to begin!!  I guess I should begin with making my Husband happy!!  A happy Husband makes for a happy wife!  And this calzone got my Husband to do the dishes!  I’m very happy!!  Thanks Emeril!!  🙂

I made this calzone with a store-bought pizza dough, stuffed it with a low-fat ricotta and lite mozzarella cheese.  I added salami and my Husbands favorite pepperoni!!  I think I can make my Hubby do anything if it includes either pepperoni or bacon.   I must take note of that, since I am in desperate need of a new refrigerator!  Hint, hint….

Emeril’s recipe said to make 4 calzones, but I made two massive ones!  I love to freak my Husband out and make things huge!!  You should have seen his face when he saw it!  He munched away while watching the Sunday football game!  This recipe is so versatile that you could add anything in it, like sautéed veggies or you could even make mini calzones to serve at a party!  I guarantee they would be a hit!

Since I made Hubby his calzone, I made myself an Emeril sandwich, but I will share that with you later this week.  I will tell you this sandwich has my name written all over it!!!  Can you guess what my favorite sandwich includes?

I love this calzone with a variety of salami, but this is a recipe where you can safely go in many directions. Change up the cheese, use roasted red peppers or sautéed mushrooms instead of the meat, add Roasted Garlic (page 79) . . . I could go on and on. And you don’t have to eat them right out of the oven, either—they travel well, so pack your picnic basket! - Emeril Lagasse
Serves: 4
Ingredients
  • 1 lbs. Semolina Pizza Dough
  • 1 cup Pizza/pasta sauce
  • 1 cup chopped fresh basil leaves
  • 8 ounces mixed sopressata, hot sopressata, Genoa salami, and/or pepperoni, chopped
  • 1 cup ricotta cheese, drained
  • 8 ounces smoked mozzarella cheese, cut into ½-inch cubes
  • ¼ cup finely grated Parmigiano-Reggiano cheese
  • ½ teaspoon crushed red pepper
  • Flour or cornmeal, for dusting the pizza peel
Instructions
  1. Place a pizza stone in the bottom third of the oven and preheat the oven to 500°F. (Alternatively, place an upside-down rimmed baking sheet on the rack in your oven.)
  2. Halve one of the pieces of dough and roll it out on a lightly floured work surface to form two 8-inch rounds. Spread ¼ cup of the tomato sauce over the bottom half of each round, leaving a 1-inch border. Sprinkle ¼ cup of the basil and one-quarter of the cured meats evenly over each portion of sauce. Sprinkle one-quarter of the ricotta, mozzarella, Parmesan, and crushed red pepper over each portion of meat. Gently fold the top half of the dough over the filling, rolling and pressing the edges together with your fingertips to seal them, and crimping as you go along. Make 2 more calzones with the remaining ingredients.
  3. Depending on the size of your oven, you may be able to bake only 2 calzones at a time. Cut several small slits in the top of each calzone to allow air to escape while baking, and transfer the calzones to a pizza peel that has been lightly dusted with flour or cornmeal (to facilitate moving the dough). Tilt the pizza peel to slide the calzones onto the preheated baking stone. Bake for 16 minutes, or until the top is golden brown and the dough is cooked through. Remove the calzones from the oven with the pizza peel or a spatula, and serve immediately or at room temperature.

    hmm…I feel like your favorite sandwich has chicken in it…maybe some sort of BBQ ranch sauce, like the one you made for the salad the other day…or maybe it’s loaded with peanut butter! mmm 🙂 can’t wait to see!

Happy first day of Spring! Though you wouldn’t k Happy first day of Spring! Though you wouldn’t know it in California. We are still getting rain and it’s in the mid 50’s. We should be in the 70’s by now. I wonder what the summer temps will be like this year?

Even though it may not feel like Spring,  there is no reason why we can’t start prepping for it. It’s going to be time soon to plant flowers, add a floral wreath to the front door and of course a welcome mat to invite everyone to your home.

I wanted to share with you my new welcome mat that I got from @cocomatsnmore. They just had their Spring release and oh my gosh so many cute ones. I love there welcome mats. They are thick, bright colors and fast shipping. I absolutely love the flowers and the saying “Live Life in Full Bloom”. It’s so very true.

Happy Monday! I did a little bit of Spring cleanin Happy Monday! I did a little bit of Spring cleaning this weekend. I wanted to give my kitchen counters the less is more look.

I did have a very hard time taking my sink tray off the counter. I’ve had the tray there for years, so I thought I would change it up. Don’t be surprised if the sink tray makes its way back. 😂 I may add some herbs to my window sill for some fresh green color.

I used @cloth.bristle to clean my kitchen counters and sink. I love cleaning my sink with it. It makes it so sparkly and smells good too! Love that it’s all natural.

Happy Friday! Our next winter storm is here! It is Happy Friday! Our next winter storm is here! It is just awful out there. Heavy rain, high winds and hail. This is not a winter that we are used to in California.

My husband and I are not fancy when it comes to eating dinner. Since it’s just the two of us, we never use the dining room table, but always eat at the kitchen counter.

There is no reason why we can’t eat fancy at the kitchen counter. I am using my new placemats that I got from @vmathome. They are thick, water, stain resistant and can handle heat up to 350F degrees. I love the color and style of the placemats. They have a wide variety of styles and colors, along with matching table runners.

I styled my table with bright spring colors that I was inspired by carrots. I still have bunnies on the brain. lol I had fun with this place setting, it’s so nice to have dinner with a little style then having it on a plain plate and paper napkins.
