Today I have for you my second post from Emeril Lagasse’s new cookbook Kicked-Up Sandwiches. Emeril’s book isn’t just sandwiches, but he has cake! Yes cake!! This is a delicious Almond-Poppy Seed Pound Cake with Lemon Neuchâtel. As Emeril would say, Oh babe this is good!!
This cake is a nice firm pound cake, yet soft on the inside. Emeril made this into a sandwich by adding a lemon cream cheese frosting to be sandwiched together. I haven’t had a pound cake like this in years, and I am just loving it!!! My Husband went fanatic when I gave him a pound cake sandwich, talk about a treat for him. Now this isn’t the healthiest cake around, but it sure is good!!!
The recipe said to make one pound cake, but I made it into two mini pound cakes, so I could freeze them. That way my Husband can take them to work. Believe me, he was tickled pink to take them; he eats a whole cake for his breakfast!! The man loves his sweets!!! He already asked me to make this cake for him again!! I will once the weather cools a bit.
I can’t share this recipe with you, but I didn’t read any rules that I can’t share a similar recipe on Emeril’s website. I found a pound cake which is made very close to this one. If you want to make the cake, you just have to make some adjustments, hint: poppy seeds. I think you’ll be very pleased with the outcome, even if you don’t get this cake!! I have to tell you, I am really enjoying this cookbook! There are so many varieties of sandwiches, it’s crazy! How does the man think of all of these? One of my favorite parts of the book is that he has recipes for homemade bread (mmm bread), dips, spreads, dressings, hummus and more. He certainly pleases everyone’s pallets with the variety. I’ll tell you my Husband is loving this book! Next week I’ll be posting for you one of his favorite sandwiches, with a recipe! 🙂 His eyes lite up when he saw it and when he took that bite, I think he was in some kind of Emeril heaven!! lol

All I can say is Yum! Pound cake with lemon and poppy seeds. I like poppy seeds but I never think about putting them in my breads or cakes til now.
