Vegetable Stir Fry with Peanut Sauce

Hi Everyone,

I have to laugh!  The other day I saw a message board and it was titled “Worst Ever Healthy Living Blog Names” and guess what?   I made their message board!  They said “peanut butter and peppers!?  That sounds SO Freaking gross!   Ugh makes me want to vomit!”  I laughed!  My Husband said why are you laughing?  Why aren’t you mad?  Their making fun of your name.  I said all that means is I’m out there and people are starting to know who I am.  I was flattered because I made the list with my fellow bloggers, whom I love, like Oh She Glows, Carrots N’ Cake, Peanut Butter Fingers, My Yogurt Addiction and more.  So what is wrong with Peanut Butter and Peppers together? I actually never had it together!  What does it taste like?  I have had a few readers on Facebook tell me they love jalapeno and peanut butter sandwiches.  That sounds weird, but you know what?  Don’t mock it until you try it!!  So I tried it, well kind of…

I decided to make stir fry vegetables with brown rice and peanut sauce!  I added some sweet bell peppers in my stir fry and made the most easy peanut sauce ever and you know what?  I LOVE it!!  The combination is delicious!!  Jury’s out, Peanut Butter and Peppers do go together!!!  So (I’m sticking my tongue out) BLAH message board people!!!


The peanut sauce is amazing!  I got the recipe from The Kitchn.  They were making spring rolls, but honestly I don’t have patience for that, at least not today. But they served the spring rolls with this wonderful peanut sauce and I just had to try it.  After all it was calling my name (Jennifer, make me…)!!  The sauce is made with natural peanut butter, soy sauce, rice vinegar, sugar and crushed red pepper flakes.  It seems like such an odd combination, but now I am in love!  I am going to be putting this sauce on everything.  It’s sweet, yet savory from the vinegar.  I didn’t find the sauce spicy at all.  But that could be me, since I eat hot foods all of the time, I didn’t notice.

For the vegetables I used onions, peppers, radishes, zucchini, broccoli and cabbage.  Basically it was the vegetables in the fridge that had to be used now or they were going to go bad.  The combination is very nice together.  I wasn’t sure about the radishes, but once you cook them the flavor isn’t so strong.  You can use any kind of vegetables that you like. It’s a perfect recipe to use up what you have so they don’t go bad.  The recipe would also be amazing with chicken or shrimp added to it!!  Yummy!!

Vegetable Stir Fry with Peanut Sauce

Fresh Vegetables served over brown rice and topped with a sweet and spicy peanut sauce.
Serves: Approx 4½ cups
Ingredients
  • **To make peanut sauce**
  • 2 tablespoons creamy organic or natural peanut butter
  • 2 tablespoons rice vinegar
  • 1 tablespoon soy sauce, low sodium
  • 2 teaspoons sugar
  • ½ teaspoon of red pepper flakes
  • 1 to 2 tablespoons water, to thin out the sauce, if necessary
  • **Vegetables**
  • 1 tsp. sesame oil
  • 1 clove garlic, minced
  • ¼ cup onion (42 grams) sliced thin
  • 1 med. (125 grams) sweet bell pepper, thinly sliced
  • 3 radishes, large, diced
  • ½ cup (120 grams) zucchini, diced
  • ½ cup broccoli, diced up
  • 2 cups cabbages, shredded
  • 2 cups brown rice, cooked
Instructions
  1. In a small bowl, whisk all the ingredients for the peanut sauce together until smooth.
  2. In a large skillet add sesame oil, garlic and onions. Cook for about 1 minute.
  3. Add bell pepper and radishes, cook for about 5 minutes.
  4. Add broccoli and cabbage. Cook for about 2 minutes more.
  5. Evenly divide the rice, vegetables and peanut sauce over three plates

Since I made this dinner just for me, I had a ton of it left over, so I decided to make the serving size for three.  I’ll be honest I didn’t measure it out once it was cooked, but I”m pretty good at eyeballing my serving size, since I do weigh out everything.  I also had a ton of rice and peanut sauce leftover which is ok with me!   I’ll be eating this for lunch tomorrow!  I can’t wait!!!  This is a healthy dish!  You have vegetables, and believe me go crazy on the vegetables, you can eat as much as you want!!  Healthy fat from the peanut butter and the brown rice is a good grain!!  So eat up, make leftovers and enjoy!!!

So have you every had peanut sauce?  If you’re a peanut butter fan you must try it!!  So do you think peanut butter and peppers now go together?  I do and I’m glad I tried it together!! I don’t know why I waited so long?

One last thing before I go.  I contacted the most wonderful person to help me about my blog issues and she worked her magic and now it seems to be working great!  I am so happy, thank you Kai for all of your help!!!  You Guys don’t even know how happy this makes me.  Writing my posts was a nightmare!  It took me 5 hours to do the pumpkin puree post!   It seems I was making my photos too big and I had other internal issues, but they are being fixed.  I do hope my site loads faster for you!  Thanks for sticking with me!

    Made this sauce tonight, but didn’t have rice vinegar. Used red wine vinegar with veggies and quinoa and it was delicious! Thanks for the idea!

I was gifted this beautiful table cloth by @cottonprintclub. It’s 100% cotton, comes in several sizes and colors, doesn’t bleed or shrink when washed. I love the shade of green and it is so beautiful that you can use it all year.

I went with a simple tablescape to show off my beautiful plates that I received from @backcountrymercantile. All I added to my table was some garland, candlesticks and of course twinkling lights. Swipe the photo to see my table in the evening.

Happy World Kindness Day! This weekend I made my a Happy World Kindness Day! This weekend I made my annual snow jar to place on my shelf in the kitchen. You get a tiny sneak peak of my shelves at the end of the reel. The snow jars are so easy to do and you probably have most of the items on hand.

For the snow, I used blanket snow. You could also use, sugar or Epsom salt. I like the blanket snow because it’s not messy and it hides the fairy lights battery pack.

The houses are ornaments that I bought at Target. I thought they were Perfect for my pink kitchen. Of course you can use whatever you have on hand. It doesn’t have to be a house and tree.

If you buy fairy lights, make sure they have a timer on them. Trust me that will make life easier. If you don’t like fairy lights, you can use a faux candle. 
Ohhh and have a stack of batteries. I go through more batteries in the month of December then I do the rest of the year!

Happy Monday! Sorry I haven’t been on in awhile. Happy Monday! Sorry I haven’t been on in awhile. My husband was sick with the flu, then he passed it on to me. My dog even had an upper respiratory infection. Ugh! It was a rough 2 weeks. Then on Friday I had surgery to remove skin cancer on my chest. I’m sore and I can’t lift or exercise. Anyway, that’s why I have not been on.
