Hi Everyone,
Happy Sunday! Wow this weekend flew!!! Jenny and I never made our hike, but we did have a nice breakfast, which I’ll be sharing with you this week. We did go to the Farmers Market and to Trader Joe’s. I”m pretty sad that the Farmers Market will be ending soon. It seems there produce is getting smaller. 🙁 They didn’t have butternut squash yet, but I’ll be patiently waiting.
Today I am sharing with you my weekly round ups from this weeks posts. What a difference in comparison to last weeks round up. Last week it was all vegetables and this week it’s all fruit! I guess my taste buds changed this week. It seems with the chiller nights and mornings I have been more on a fall kick!! I am just loving pumpkins, right now!!
Here is this weeks weekly recap!
Monday – Blueberry Banana Zucchini Avocado Bread – I was really impressed with this recipe! I can not get over how moist it is! Matter in fact I am making it again today! I loved the colors and the juicy blueberries and slight hint of banana. My Husbands co-worker loved this bread, she asked for the recipe. I bet she was a little shocked when she saw what was in it!! 😉
Tuesday – Skinny Bitch Tuesday / Crepes with Strawberries – I loved this recipe! The crepes were sweet and the strawberries were a perfect complement to this dish. This was the first time I made crepes and I can’t wait to make them again! That’s one-off my food bucket list!
Wednesday – Chocolate Raspberry Frappe – This is a fantastic drink, especially when your craving chocolate!! I loved this drink and made it a few times this week. Simply delicious!
Thursday – Cheesy Pesto Chicken – I have to tell you this is probably one of my all time favorite chicken recipes. The combination of pesto, ohhhy gooey cheese and tomatoes makes a fantastic combination. Marinating the chicken in yogurt made this chicken so tender that you didn’t need a knife to cut it!! My Husband who doesn’t like pesto, loved it!! Woohoo!! Thats a star for me!
Friday – Pumpkin Spice Frappe and Pumpkin and Cream Frappe – I know I hit you with two coffee drinks this week, but honestly I couldn’t wait to share it with you! This truly tastes like your drinking pumpkin pie! I love both versions of the drink!! I have left over pumpkin so you know I’ll be drinking this a few more hundred times!! If you make it use coconut milk, it makes it so creamy. I tried with non-fat milk and it was good but not as good as with coconut milk!!

Saturday – Blueberry and Cream Shooters – This is a simple smoothie, turned into a dessert! It’s creamy, healthy and just plain yummy! A perfect way to get my family to eat their fruit!!
I thought I would share with you my newest craving this week! I haven’t posted this recipe, but I thought I would share it with you! This is my done up version of a healthy hot dog!
I purchased Trader Joe’s Chicken Hot Dogs and to be honest I was kind of afraid to try them, but I am glad I did. There super duper good and get this, only 60 calories a hot dog! There a normal size hot dog too!!! I topped the dogs with Trader Joe’s Queso Cheese, located in the chip isle (15 calories for 2 tbsp) pickled jalapenos and my homemade mango salsa. Oh my gosh, I loved it! I loved it so much I ate it twice for dinner this week!!! This may sound odd for a hot dog, but it is crazy good!! You must try it!!!
I had one dog with a hot dog bun and I ate the other one on a romaine lettuce leaf. I love both versions. I went back to TJ’s to get more of these delicious dogs and they were out of stock. They better get more in! At 60 calories I can eat two completely guilt-free!! Speaking of guilt-free the calories for this hot dog including a 120 calorie hot dog bun is 215 calories! Not bad for a hot dog!!! You must get the chicken dogs!!!
Here’s the recipe in case your interested!
- 1 Chicken hot dog
- 1 Hot dog bun
- 6 pickled jalapeno slices
- 1½ Tbsp Con Queso Cheese
- 2 Tbsp. Mango Salsa
- Preheat grill over medium heat
- Add hot dog to grill and rotate about every two minutes until hot dog is lightly browned and cooked all the way through.
- Add the hot dog to a bun. Top with cheese, jalapeno and salsa.
Well my Friends, I have such a long post here, so I’m going to wrap it up and spend my Saturday relaxing, doing laundry and maybe a little baking!! I think I’m going to make that blueberry banana zucchini avocado bread again! It’s so darn good!! Yum!
