Three Pepper Roasted Hummus / Vegas

Hi Everyone,

Oh Monday is going to be tough for me.  After having 9 days off and then going back.  Ugh!  Now don’t get me wrong, I love my job, but it would be so nice to win the lottery and be a stay at home wife!  🙂  Sigh…  For today’s post I have lots of goodies to share with you.  First off I made this!

Your looking at my Three Pepper Spicy Hummus.  This hummus is creamy and only has a slight kick of heat from the jalapeno type pepper I used.  I am growing it in my garden and I don’t recall the name of the pepper.  The heat on it is very similar to a jalapeno, so in the recipe I recommend using a jalapeno.


To make the hummus I also used a small sweet bell pepper and a gypsy pepper from my CSA box.  I decided to roast my peppers on the grill for added flavor.  Have you ever roasted peppers?  It’s so easy.  I cored the peppers, take out the seeds and place directly on the grill.  I roast it until it’s charred turning about every 2  – 3 minutes.  Once the pepper is chard, I place it in a brown lunch bag to steam.  I let it sit for about 30 minutes.  Then I peel the skin off the pepper.  It’s really easy and quick.

I decided to make a healthy hummus with no oil or tahini paste this week because I haven’t had it in so long and I thought it would go great on veggie sandwiches, plus it makes for a great snack for dipping veggies in.  It’s all part of my healthy eating that I plan on doing.  Since I was on the make healthy food for the week, I also grilled 3 chicken breasts for salads, sandwiches other recipes that I may make this week.  I weighed the chicken and placed in ziplock baggies for easy grabbing and portion control.

After I’m done writing this post, I plan on cutting up some strawberries and making a big batch of quinoa for my lunches and breakfast parfait jars.  It’s so nice big batch cooking, it makes for easy breakfast and lunches.  Today, I also did some much-needed vegetable picking from my garden.  It seems my vegetables went crazy while I was gone.  Here is today’s pick, and there are more tomatoes coming.  What should I do with all of these tomatoes?

Three Pepper Roasted Hummus

A creamy, thick, healthy hummus made with three types of peppers and contains no oil or tahini paste, perfect for sandwiches and a vegetable or pita chip dip.
Serves: 1½ Cups (12 servings)
Ingredients
  • 1 15 oz can garbanzo Beans, drained (reserve some of the juice from the beans)
  • 1 small sweet red pepper, roasted
  • 1 small gypsy pepper, roasted
  • 1 small jalapeno, roasted
  • 1 clove of garlic
  • 1 lime, juice only
  • 2 tsp. cumin powder
  • ¼ tsp of onion powder
  • ¼ tsp. salt
Instructions
  1. Add all you ingredients to a food processor. Pulsate until smooth. If the hummus is to thick then add a tsp at a time of the reserve garbanzo beans juice.
Notes
To roast the peppers - I just took out the seeds, place directly on grill grate, and cook until chard. Placed in a brown lunch bag and waited for it to cool. Peel away the skin.

This Sunday I woke up had some yummy Dunkin Donuts K-Cup Coffee.  I didn’t sleep to well, since I picked up a sore throat from Las Vegas.  At least I don’t feel sick.  I did start my 90 day program and I did my morning workout, which made me feel so good that I did it.  After my workout I went to Trader Joe’s for some much-needed groceries.  I didn’t get as many veggies as I wanted to, but that is only because I am getting my CSA box on Wednesday and I’m not sure what will be in it.  Speaking of Trader Joe’s, here is a picture of this weeks buys, oh and speaking of buys there are some new goodies that I picked up.  You’ll have to go to my Trader Joe’s page and look under new items.  There are two I am really excited about.

I thought I would fill you in on more about my Vegas trip.  The first full day that we were there we decided to go to Hoover Dam.  We have been to Las Vegas about half a dozen times and yet we never go anywhere away from the strip.  We decided on this one we should see what Hoover Dam is like.

We thought it was pretty cool!  There was a Memorial Bridge up above and my Husband wanted to walk across it, so we did.

We climbed up some stairs, and died from the heat, it was 116 degrees out at 11am, but we did it!!  The view from the bridge was gorgeous!!!  It was pretty cool to think we walked to Arizona!  🙂

When we left Hoover Dam there was a lookout point of Lake Mead.  I never realized how big Lake Mead was.  But then again I should have known, it’s where they hold the bass fishing tournaments.  Lake Mead I believe is the largest man-made lake there is, but I could be wrong about that.

After we left Lake Mead we decided to head back to the strip for lunch.  We went to one of our favorite cheap spots, Pinks Hot Dogs located at Planet Hollywood.  It’s not healthy, but it’s dam good!  We always stop at Pinks when we are in LA, so it’s a must stop when were in Vegas.

The hot dog in the middle is mine!  So darn delicious!  It was ketchup, mustard, pickles and jalapenos.  Don’t mock it until you try it!!  My Husband had the chili cheese dog with mustard and onions.  It’s the classy version of his shitty canoes, which is a hot dog loaded with chili!!  Blah!!

Well my peeps I have been rambling and it’s getting late and I still need to make that quinoa.  Have a great week!!!!!!!!!!
