Smokey Chipotle Barbecue Sauce

Hi Everyone,

I have had a pretty good Friday so far.  Work was good, we went to lunch to Chili’s which was a treat.  I was even a good girl and didn’t order the Chips and Salas and believe me I thought about it.  I ordered their Grilled Chicken Salad which was excellent.  It was chicken, lettuce, black beans,corn and tomatoes.  I omitted the cheese in the salad.  I was pretty impressed with the salad.  It came in at 430 calories and that’s with cheese, which I didn’t get.  The only thing is I found out there dressing is 250 calories.  Eck!  I should have ordered the dressing on the side, but oh well, next time I will.  I’m spending my Friday night just me and my dogs.  My Hubby called and he is going to the races, so what does that mean for me?  I’m going to go to Target!  I am out of milk and Chobani and I can’t go a Saturday morning without it.  So after my post that’s where I’m heading to.

Today I have for you my Smokey Chipotle BBQ Sauce.  I made this about a month ago and I just had to share it with you.  This recipe makes a lot of sauce and it holds up well in the refrigerator.  So far it has lasted a month and it hasn’t lost the flavor, if anything it has gotten better.


I made this sauce using hickory liquid smoke.  I love the stuff, it’s weird, but I love it.  Who would have ever of thought of liquid smoke?  You can find liquid smoke at your local grocery store near the barbecue sauce.  I also used a little brown sugar, chipotle seasoning, soy sauce and some other goodies to concoct this BBQ Sauce. It has a slight smokey flavor and just a hint of heat.  I used this sauce on my chicken.  I love BBQ Chicken it’s one of my favorites!

The sauce makes about 1 3/4 cups and comes in at 25 calories a tablespoon.  It contains no fat and about 4 grams of sugar.  I don’t think the stats are to bad, plus the flavor, oh the flavor is amazing.  I could eat it cold with a spoon.  Ok, I did do that, but just to test it a few dozen times.  That sounds so weird eating BBQ Sauce, but it’s good, it satisfies my savory craving and you know how a girl gets with cravings!  You don’t even want to go there!

I have a funny story for you.  Wednesday night my Husband came home from the store with one of those big pre-made pizza crusts, two bags of cheese and pepperoni.  He said he was going to make pizza his way, not the healthy way.  I looked at him and was like ok. He made his pizza and said he liked the Flatout Pizza’s I make better.  I was shocked!  He said the pepperoni didn’t get as greasy as Trader Joe’s.  I never thought anythng of it.  The next night I was thinking of his pizza’s so I decided to make a Flatout Pizza and I asked him if he wanted one, and he said yes.  I told him I was using his remaining ingredients.  He agreed! I made his pizza and as I was putting his ingredients away, I noticed that the mozzarella was reduced sodium.  I thought what a good boy,trying to be a little healthier.  Then I looked at the Pepperoni and I almost bursted out laughing.  He bought fat free turkey pepperoni.  I didn’t say anything to him and when he was eating his pizza I asked him how was it?  He said it was good, but the pepperoni still didn’t get greasy.  Then I asked but how does it taste.  He said good.  Then I went to the refrigerator and pulled out his pepperoni and showed him that it was fat free.  He said that explains the no oil on top.  Then he took another bite of his pizza.  I asked him do you like the pepperoni?  He said it’s a little different but not bad.  Then I showed him it was turkey pepperoni and he almost died!  I started to laugh!  He still ate his pizza but said, I knew there was something different.  He bought the wrong pepperoni.  Goes to show, all in all you don’t notice to much of a difference.  I tasted the turkey pepperoni and the flavor wasn’t to bad.  I’d eat it again!

Smokey Chipotle Barbecue Sauce

An easy to make smoky barbecue sauce that has a slight kick from the Chipotle.
Serves: 1¾ Cups
Ingredients
  • 2 cups ketchup (I used Trader Joe's Organic Ketchup)
  • 5 tbsp. Worcestershire sauce
  • 1 tbsp. low sodium soy sauce
  • 2 tsp. dijon mustard
  • 2 tbsp. packed brown sugar
  • ½ tsp. chipotle seasoning
  • ½ tsp. onion powder
  • 2 tbsp. apple cider vinegar
  • 4 tsp.liquid smoke, I used a hickory flavored
Instructions
  1. In a medium saucepan, combine all ingredients. Bring to a boil over high heat, stirring occasionally. Reduce heat to low. Simmer 20-25 minutes, stirring occasionally until thickened. Makes 1¾ cups. Can store in refrigerator up to 1 month.

I hope you have a wonderful weekend!  I’m going to head to Target now; then come home and force myself to workout and then do some cooking!!  I figured while my Husband was out I can turn on the AC and the oven and he can’t yell at me.  ha ha
