Blueberry Muffin Smoothie

Hi Everyone and Happy Saturday!

I wanted to have dessert after my wonderful dinner that I will share with you later this week, and I reached for my Chocolate Coconut Banana Cream Parfait only to find they were gone!  They didn’t last very long in my house.  So what is a girl to do when she wants a dessert NOW and there isn’t any left?  Well make a quick guilt-free healthy smoothie!

I have been on a major blueberry craze, so I decided to try to re-create a blueberry muffin in a smoothie form.  I will tell you it tastes darn good!!  It’s creamy, smooth, has a hint of cinnamon and is perfect for cooling off on a hot day.


When making this smoothie I used frozen coconut milk, blueberries, stevia and vanilla extract.  I tasted it and it was missing something, so I decided to add 1/4 teaspoon of cinnamon and a 1/4 cup of Chobani plain greek yogurt.  Presto, perfecto!!  It turned out to be just what I was hoping for.  Now of course I had to top it with some whip cream because whip cream is good on almost everything!!

This recipe makes about 2 cups, but being the selfish dessert girl that I am, I decided to make this one serving because I didn’t want to share.  Somethings just taste to good to share.  I know, you know what I am talking about.  I did give a sip to my Husband to see what he thought.  He said it was good, but different.  He’s not used to all these crazy recipes that I make.  I love this smoothie!!!

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

If you don’t have frozen coconut milk, you can switch up this recipe by using non-frozen unsweetened  coconut milk and frozen blueberries instead of fresh.  The flavor and texture should be the same.  If your a blueberry muffin fan, you must make this recipe.

Blueberry Muffin Smoothie

A creamy, sweet smoothie that tastes like a blueberry muffin.
Serves: 2 cups
Ingredients
  • 1½ cups unsweetened coconut milk, frozen
  • ½ cup blueberries
  • ¼ cup greek yogurt, plain (I used Chobani)
  • 1 tsp.vanilla extract
  • ¼ tsp. cinnamon, ground
  • ½ tsp. stevia
Instructions
  1. In a blender add all the ingredients and process until smooth.
Notes
Note: You can also use non-frozen coconut milk and frozen blueberries.

My Husband is out of coffee, so I made a deal with him, if he does the dishes, I’ll go to Target with him.  Who really needs to make a deal to go to Target?  I would have went even if he didn’t do the dishes.  Don’t tell him that.  lol
