Hi Everyone,
It’s a gorgeous Saturday today! They said fog and cold, but the sun has been out all day and it’s a comfortable 80 degrees out! I got up and forced myself to do some strength training and opted out on my weekly Farmer’s Market trip. This is my last week at home before I head to Europe next week, and I figured I better use up all the produce that I have, since I know my Husband won’t eat it. Plus I get another CSA package on Wednesday.
Jenny and I spent our Saturday afternoon having a nice lunch at a local bakery and then seeing Magic Mike. The movie was ok, but definitely a chick flick. Trust me ladies this is a movie you want to see with the girls. The story-line was ok, but the ending kind of stunk. My man Matthew was such a geek in it, but I loved it!!!
I thought today I would do a recap of all my recipes of the week!
I started the week out with Microwavable Corn. This was just amazing, darn You Tube! You have to check it out! No husking, boiling or grilling. Perfect corn every time!
Monday was Strawberries and Cream Frappe. This drink was delish!!! Perfect blend of strawberries and cream. If you’re a fan of the Starbucks version, I think you will love this one!
Tuesday was Skinny Bitch Tuesday and I made Strawberry Biscuits. They may have taken three tries to make, but they turned out wonderful! Kind of look like a roll, but tastes like a biscuit. I’d love for you to try it, to see how your outcome would be.
Wednesday I made Pan Seared Chicken with Cherry Salsa. This was amazing! I will make the cherry salsa again and maybe put it on a nice french baguette with some cheese.
Thursday was Grilled Pork Medallions with Grilled Asparagus wrapped in Prosciutto. My Husband loved the asparagus and he normally wouldn’t eat it, after all it is a vegetable. Ladies, get your man to eat his vegetables by wrapping it with meat!! 🙂 This is a quick dinner, ready in under 30 minutes, more like 20!! Perfect for a weeknight.
Friday was Chocolate Cherry Coconut Bread. Ohhh, so good, just like eating dessert, but low in calories. This is one of my Husbands favorites. The bread is super moist, and very chocolaty with pops of fresh cherries.
Saturday, last but not least, probably one of my favorite recipes of this week is my Orange Creamsicle Frappe. I was amazed on how identical this was to a creamsicle, but with out all the calories and sugar!!! Guilt free, and perfect for the kids. I’m going to try freezing it in a Popsicle mold to see how it comes out.
I hope you enjoyed this weeks recipes. I wonder what next week will be like. I am a wing it kind of girl and I don’t always plan out my meals. But I can tell you that tomorrows recipe will be good!! Something that has been requested by a few readers. I tested it out this weekend and I am very pleased with the outcome and I think you will be too!!

Yum that strawberry and cream frappe looks so good! i just made and devoured my Lean, Green Smoothie…. but this looks like a good alternative 🙂

Yesterday was nice towards the end, but today was horrible where we live-fog all day long yuck! Hopefully tomorrow will be nicer 🙂 I love that you don’t always plan your meals, I used to think planning makes it easier, but it actually makes it MORE stressful for me to stick to a plan rather then just spontaneously use what is in my fridge! I live in the far East Bay and it was sunny all day!! Thats the only thing I don’t like about SF. Darn Fog! Planning meals, can sometimes be more stressful because it’s pressure to use your ingredients.
