Chocolate Cherry Coconut Bread

June 29, 2012 By Jennifer @ PB and P Design 28 Comments

Hi Everyone,

Yah it’s Friday!!!  As a special treat I made the most delectable quick bread for you!  It’s rich, chocolaty, filled with fresh cherries and tastes like your biting into a brownie.  It’s simply delish!!!

I made my normal 3 mini loafs so Hubby can take them to work and I asked him what he thought about the bread and he said ohhh, that was good!  Yah! Another success!  Sometimes I’m bias of my own recipes, because I know of all the thought and care I put into it, that I think they are automatically tasty. Plus I cut back on sugar and now I don’t notice things when there not sweet enough for the average person.  My Husband is one who likes it sweet!  I felt this bread had the perfect balance of sweetness, especially with the cherries.

I will tell you a secret, this past week, I made a Peanut Butter and Jelly Bread.  I thought this is going to be the best thing ever. I had all these grand ideas of creating it and eating it.   Well guess what?  It turned out awful!  Ugh!  What a waste of jam and peanut butter!  When it came out of the oven it tasted good, but a few hours later, it was just horrible.  I didn’t realize how bad it was until my Husband took it to work and he said the bread was terrible.  I felt sad, but I knew it tasted like crap!  Funny how I’m sensitive to things like that, when I knew it didn’t taste good.  Crazy!

So are you getting sick of me posting cherry treats?  Sorry, this is the last cherry recipe I have in my recipe index, but I figured since it’s cherry season, I felt the need to share it with you.  However if you make this bread, you may not want to share it!!  I have to show you how moist it is.

I made this bread using Chobani Greek Yogurt, unsweetened coconut milk and fresh cherries.  This bread does not contain any oil or butter.  I can’t believe how moist it is without oil!  I bet you could heat this bread up in the microwave and top with some vanilla ice cream or whip cream and call it dessert!  I should have done that!

The calories came out pretty low, coming in at 86 calories a slice.  I figured 15 slices to a large loaf or 5 slices per mini loaf.  The slices are pretty thick!  This bread also contains 1 gram of fat and only 16 carbs.  I am pretty happy with the stats of the bread!  Taking a bite of it tastes like I’m having a treat!!  Since I made three mini loafs I froze two of the loaves and kept one out for nibbling on.  I know I mentioned it before but freezing bread is one of the best things ever!  Just take it out the night before or in the morning.  It defrosts pretty quickly.

I was bad and skipped out on exercise yesterday, so I need to do something today, even though it’s getting late, so I’m going to shuffle off.  Oh and my Husband just made a pound of bacon and it smells so darn good that I need to get out of the house fast!  So off for a brisk walk I go.

Have a wonderful weekend!!!

Toodles,

Jen

Hi Jennifer, I love this recipe! I want to send it to my sister; my 2 1/2 year old nephew has gluten intolerance. Would you be able to recommend substituting the flour? Thank you! x

      Hi Jaime,

I am not the best person to ask about gluten free flours, but my guess is that oat flour would work out great in this bread. Maybe even coconut flour. To make oat flour just take old fashion oatmeal and process in your food processor until it turns to a flour texture. Good luck and let me know how it turns out.

It’s nice that your hubby is honest with you. I really appreciate that because so many people will tell you something is good when it’s really not – so you KNOW when he says it’s good, it really is! Of course with cherries, chocolate and coconut, how could you go wrong? Sounds wonderful!

Sometimes my Hubby is a little too honest for me. lol I kow I do not like to hear people say they didn’t like something I made, but I’d rather know that, then to keep serving it, thinking it’s good.

Yum! I made it tonight with a few altercations b/c of what I had! I used 2 flax eggs, 1 T coconut oil because I had no coconut extract and I thought it would be good! Also, I used the Silk carton coconut milk not canned (I wans’t sure which kind to use) and I used regular sugar. So good! Thanks!

It’s time for my annual pumpkin bath picture. I It’s time for my annual pumpkin bath picture. I don’t know what it is, but I love to give pumpkins a bath. Don’t they look cute bathing in the sunlight with bubbles around them? lol
🎃
There are two methods that I have used in the past; the chlorine bath and the dish soap bath. This is what I have learned.
🎃
My favorite and only way I wash pumpkins now is using dish soap. It gets rid of the sap and makes them clean. I soak my pumpkins for about 20 minutes. The pumpkins will last until December. Plus if you keep your pumpkins after the holidays it will decay and grow pumpkins the following year. Plus it’s safe for animals that may nibble on your pumpkin.
🎃
The chlorine bath method will make your pumpkins last possibly up to a year. They take very long to break down and I never got my pumpkins to seed themselves. Plus it is not safe for animals in my opinion. Though Clorox Bleach says it’s safe, they just taste salty.
🎃
The key to washing pumpkins is to make sure that you get the area around the stem dry. You don’t want water around the stem. This could make your pumpkin rot sooner. So after the bath, dry your pumpkins off very good.
🎃
Did you get your pumpkins yet?
.
PS if you are in the Bay Area, I highly recommend going to @threenunnsfarm to get your pumpkins. They have a wide variety and the pumpkins and are .75 a pound. I bought all these pumpkins for $42.

Hello Tuesday! Hope you are doing well. It’s sta Hello Tuesday! Hope you are doing well. It’s starting to feel like Fall here in Northern California. The mornings and evenings are feeling crisp. I can’t get over that we are in the middle of September. Where did the Summer go?

I’m sharing with you the corner of my living room where I store my pumpkins that I grew before I can take them outside. It’s been too warm for them and I want them to last through October. They have been doing well, as they have been here since the middle of August.

Hi, it’s me Samuel!! I am taking over mamas page Hi, it’s me Samuel!! I am taking over mamas page today because I got the best gift in the whole world and it even came in the mail on my birthday. How did @downlitebedding know? They are so good!
🐾
Downlite Bedding sent me the EnviroLoft® Down Alternative PrimaCool™ Cooling Comforter. Isn’t it beautiful? It’s so soft, cozy, hypoallergenic and it makes me so happy.
🐾
The comforter is 400 thread count, it has moisture wicking and cooling technology to help regulate body temperature, which is perfect since I get warm in the summer with all my hair and I like to be cool when I’m sleeping. A big plus is the comforter is white, I hide very well in it. It’s hard to see me. So mama can’t catch me on her bed.
🐾
The EnviroLoft® Down Alternative PrimaCool™ Cooling Comforter also has a Scotchguard stain release fabric and machine wash and dry. It’s truly an amazing comforter.
🐾
Mama let me do this takeover today because she knows that I love @downlitebedding as much as she does. She said she has never seen me get so excited as I do when we get Downlite Bedding and pillows in the mail. How can I not get excited? It’s like sleeping on a cloud!

Downlite Bedding was kind enough to give us a 20% discount: DYGEN20

Happy Thursday! Here is a view of my garden that I Happy Thursday! Here is a view of my garden that I took a couple weeks ago. My garden really overgrew this season. I need to do some major work in it, but with the heat, it’s just unbearable to be out there too long.
🌼
I had a lot of zinnias self-seed this season which is cool, but they kind of took over. They crowded out some plants, so I need to get in there and pull some out. Plus being so crowded, they got powdery mildew. Yuck!
🌼
I’m thinking for the Fall making this area a little harvest pumpkin area. We will see. I have grand ideas in my head, but I don’t always follow through. lol
🌼
How your garden growing? I lost all my potted plants from the heat. 😩

Hello Monday! This weekend I made a little charcut Hello Monday! This weekend I made a little charcuterie setup for my husband and I. This is something that I just love to do. I could just eat this type of meal all day long.

I am sharing the “All White Collection” from @bzaar_wholesale. Each piece to the collection is so elegant and can be used all year round and would be gorgeous around the holidays.

The tray is made of marble with beautiful gold handles. The cheese knives are gold with solid marble handles and compliments the tray perfectly.

I used the marble flower shaped bowl for putting chocolates, but would be so stunning to use on your coffee table, side table and more.

The cake stand is has a marble base with Mother of Pearl edging and has a glass lid to go over the top. I will be putting my cakes and cookies on it in the future, but for now I used it to place my bruschetta.

@bzaar_wholesale has amazing products for your home, great pricing and global shipping. The link is in my bio.

Do you like making charcuterie boards? What do you add to yours?

Hello, hello! It may be 100 degrees outside, but I Hello, hello! It may be 100 degrees outside, but I can’t resist putting out some Fall. Especially when you get new decor from @12timbers. You would laugh if you came into my living-room. Half my room is Fall, the other half is still coastal blues. lol I’ll eventually change it all out.
🍂
Let’s talk the art work. Isn’t it stunning? My husband never says anything about my decor, but he keeps talking about how much he likes the framed art from 12 Timbers. I agree, it’s so beautiful. It reminds me of when I lived back east and we would go to Letchworth Park in NY. The colors are stunning and goes perfectly with the burnt orange color that I’m using this season.
🍂
I just adore the wooden cut out pumpkins from @12Timbers. When I look at them they make me smile. The orange wooden leaf is the perfect piece to bring everything together. This gets me so excited for Fall decorating. Now to finish the rest of the living room.

12 Timbers is so kind to give me a discount code. It’s good until Saturday at midnight. The code is PBANDP15.

Hello Tuesday! One of my favorite summer drinks is Hello Tuesday! One of my favorite summer drinks is a nice cold glass of lemonade. I like it a tad sour over sweet. It gives you the zippys in your mouth. I do love a good homemade lemonade, but once in awhile I like to cheat and just get my favorite store brand and add some freshly cut lemons and a few sprigs of mint. It then looks homemade when it’s not.
🍋
This is my outdoor dining area. I put the tablecloth over the table and have kept it like that all summer. I love my table, but being black, it’s extremely hot when you touch it. Plus it has water spots from last year which is annoying. Not sure how to get rid of them?
