Pina Colada Green Monster

Hi Everyone,

Today I am part of the Mom’s Crazy Cooking Challenge!  This month, what we had to do is find a smoothie recipe from another blog, make it and share it.  Easy right?  Not for me!  I saw so many recipes that I wanted to make, but I couldn’t narrow it down.  Than when I decided on what I wanted to make, I was out of milk!  I hate when that happens!!  Arrr!  I had to search again!!  So with much searching I found the Pina Colada Green Monster Smoothie by Elise’s Kitchen.

I thought this smoothie was perfect!!  It has coconut milk, frozen pineapple, frozen banana and some spinach!  Yes spinach!!   The reason I made this smoothie was because I never had spinach in a smoothie.  I hear that you can’t taste it.  Well I thought, I’ll be the judge of that!!  Sure enough I whipped everything together and bam no spinach taste.  I got more vitamins and minerals and no extra taste.  Now I see why everyone makes green monster smoothies.  You should try it, it’s not that scary!!


This smoothie is creamy, only a slight hint of banana and a blast of pineapple and I can’t forget my favorite part, the coconut milk!  I really enjoyed this smoothie!  What a healthy treat!!  Perfect for an afternoon snack!

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

This recipes makes about 2 1/4 cups, so I drank one cup and put the rest in a freezer bag for another time.  It’s nice to freeze your smoothies so can just grab, blend and drink!  Talk about a time saver!

Rich Creamy Coconut Smoothie with a hint of banana and a pop of pineapple. Perfect for a hot summer day!
Serves: 2 cups
Ingredients
  • 2 cups unsweetened coconut milk
  • 1 small banana, frozen
  • ¾ cup pineapple, frozen
  • 1 handful of spinach
  • ½ tsp. stevia
Instructions
  1. Place all ingredients in a blender and process until smooth!
