Pina Colada Green Monster

Hi Everyone,

Today I am part of the Mom’s Crazy Cooking Challenge!  This month, what we had to do is find a smoothie recipe from another blog, make it and share it.  Easy right?  Not for me!  I saw so many recipes that I wanted to make, but I couldn’t narrow it down.  Than when I decided on what I wanted to make, I was out of milk!  I hate when that happens!!  Arrr!  I had to search again!!  So with much searching I found the Pina Colada Green Monster Smoothie by Elise’s Kitchen.

I thought this smoothie was perfect!!  It has coconut milk, frozen pineapple, frozen banana and some spinach!  Yes spinach!!   The reason I made this smoothie was because I never had spinach in a smoothie.  I hear that you can’t taste it.  Well I thought, I’ll be the judge of that!!  Sure enough I whipped everything together and bam no spinach taste.  I got more vitamins and minerals and no extra taste.  Now I see why everyone makes green monster smoothies.  You should try it, it’s not that scary!!


This smoothie is creamy, only a slight hint of banana and a blast of pineapple and I can’t forget my favorite part, the coconut milk!  I really enjoyed this smoothie!  What a healthy treat!!  Perfect for an afternoon snack!

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

This recipes makes about 2 1/4 cups, so I drank one cup and put the rest in a freezer bag for another time.  It’s nice to freeze your smoothies so can just grab, blend and drink!  Talk about a time saver!

Rich Creamy Coconut Smoothie with a hint of banana and a pop of pineapple. Perfect for a hot summer day!
Serves: 2 cups
Ingredients
  • 2 cups unsweetened coconut milk
  • 1 small banana, frozen
  • ¾ cup pineapple, frozen
  • 1 handful of spinach
  • ½ tsp. stevia
Instructions
  1. Place all ingredients in a blender and process until smooth!

    Oh smoothie by the pool, that is calling my name. And yes I too love to sneak in spinach.     My favorite is the basic version of this – spinach, skim milk and/or yogurt (depending on consistency preferences), frozen banana (cut in chunks), 1-2 tablespoons peanut butter, 1/4-1/2 cup oats. I sometimes add a little ice as well. Love it for breakfast!

    I used coconut milk for the first time a couple weeks ago (made a pineapple/strawberry smoothie with it – amazing!). I can’t wait to try this recipe that you’ve posted! I normally put spinach in any smoothie I make (and sometimes ground flaxseed)…best part is my kids help and don’t even care that there is spinach in them. My kids are almost 4 and just turned 5 – the three of us LOVE smoothies (hubby drinks them sometimes, but not super crazy about them like me and the kids). Some of our favorites are strawberry/banana/spinach/coconut/pineapple; blueberry/banana/peach; peanut butter/banana/honey/oatmeal.

    I love green smoothies these days! Spinach is such a strong veggie when eaten steamed but in smoothies you barely taste it and are able to get in your veggies! Love it 🙂 Your smoothie by the pool looks so relaxing 🙂

      It’s wonderful! I placed it in a zip lock bag, threw in the freezer, took it to work and placed in the fridge and after about 4 hours it was slushy and perfect. Great drink to take to work!

    I love green smoothies, my favorite is banana, peanutbutter, almond milk, and spinach with some honey. Its so good. Sometimes ill even add oats to make it as a meal replacement. Hmmmm

Happy Thursday! It’s been a crazy week over at m Happy Thursday! It’s been a crazy week over at my house this week. I started rearranging things around and left messes throughout my house. I start in one spot and it spread throughout. I need to do some major cleanup before the weekend.

One thing I did was change my table in my dining room. I went more neutral until I start to bring the lemons out. I can’t wait for lemon season. I already have a tablescape in mind.

I got the cute Home Sweet Home sign from my friend Brantley from @thesassyoak. It’s in the perfect spot. When you walk into my house you see the table right away. Isn’t the sign so cute? It matches my home so beautifully.

My Mom got these by saving the stamps you would get from the grocery store with purchase. Each piece of China had a stamp value. So once you collected enough stamps you could pick up another piece of the collection. Needless to say, my Mom collected a lot of stamps and I have the whole set to serve 12 people.☕️

Happy Thursday! I changed up my dining room a lit Happy Thursday! I changed up my dining room  a little bit. I took out my Easter decor and gave it a more neutral look and did some switching around. Plus I added a Samantha Sue, who is laying down in the photo. lol

One of my favorite pieces that I added was my new @krumpetshomedecor sign. I love the style of the sign with the shiplap white wash look and of course the cute strawberry and daisies that add a pretty pop of color.

Hello and happy Wednesday! Thank you for all your Hello and happy Wednesday!  Thank you for all your kind words about the dentist. All he had to do is cement my crown back on. He said your crown has sticky with clear stuff on it. He said I don’t think it’s the old cement?  I told him I ate a white Trader Joe’s jelly bean and I thought I got it all off. He was laughing.

It’s that time of year for house plant care. While your plants are waking from dormancy, it’s time to feed them, repot them if needed and give a trim if applicable.
🌿
I also water my plants about every 7-10 days, depending on the plant. My coffee plant, fern, violet and my mixed plant container needs watering more. The key to know when to water is check the soil. I use a water meter probe and  you just stick it in the dirt. If it’s dry, I water. If it’s moist or wet, I’ll check again in a few days. You can get a water meter at Lowe’s, your local nursery or Amazon. It’s my number 1 garden tool. We use it on outside plants too.

This weekend I’ll be taking a break from IG to work in the yard and to do some decorating so I have some new content to share with you. Though with Easter almost behind us, I’m unsure what I’ll do next? But I do think I’ll stick with the yellows? But we’ll see.

Happy Thursday! I can’t believe March is behind Happy Thursday! I can’t believe March is behind us and now we are in April. March flew by in a blink of an eye.  I can’t get over how fast the month went. It’s crazy.

My excitement for me today is trying to get into a dentist. My crown on my implant fell out yesterday when I was eating a jelly bean. The last place I want to go is the dentist. Yuck!

This is probably my favorite spot to decorate. About a year or so ago, I had no idea what to do in this area. I struggled so much. It’s just an odd space. Then I bought the white bench and it instantly became so much fun to decorate.

I loved the bench so much, I bought a second one to go under the other window. That bench holds my plants. I have other awkward spaces in my home that I would love to add a bench, but my husband would kill me if I got another. I can overdo things when I like something. Like bunnies and pumpkins. lol
