Spelt Blueberry Pancakes

April 30, 2012 By Jennifer @ PB and P Design 19 Comments

Hi Everyone!

Happy Monday!  Boy today I have a great recipe for you!!  Just look!!

But before I go to my recipe, I want to thank Kristin from Beauty and My Feast for sending me such awesome goodies and being my Foodie Penpal this month.  I made these most delectable, thick, light yummy pancakes with the Spelt Pancake Mix that Kristin sent me.  She gave a great such great gifts, just look!

She gave me Bee Pollen, which is new for me, but I love it.  I have been adding it to my yogurt!  I also got a jar of Italian Salsa, which I can’t wait to dig into. I plan on making bruchetta with it.  A recipe will come later for that!  She also sent me some Maple Syrup, which I just love!  Of course the pancake mix, which I want more of and she even sent doggie treats for my two bad babies.  The treats are from a The Three Dog Bakery, and the flavor is Strawberries and Creme.  They LOVE them!  No, I mean LOVE.  I swear my boy was going to eat my hand right off.  Look!

They wanted me to say thank you!  They really did love them.  Their kind of, well not kind of, upset that they are all gone.  Oh, and she gave me the nicest letter.  She bought all of my goodies at the North Market in Columbus, OH.  She said the Italian Salsa is locally made and so are the other goodies.  Thank you Kristin so much for the wonderful package. I really love everything!!!!  I dedicated my pancakes to you!  Everyone you should check out Beauty and My Feast for some great restaurant reviews, recipes and more.  Thank you again for everything!!!  🙂

I was the Foodie Penpal for Mackenzie of Wealth is Health.  Mackenzie’s Blog is about healthy living, exercising and family.  You should check her blog out and you can see what I sent her.  I swear we need to up the $15.00 that we are limited to spending on our Foodie Penpals.  It’s so hard because there’s so much I want to get!!  So check out Mackenzie’s site!

If your interested in being a Foodie Penpal, click this link and contact Lindsay from the Lean Green Bean.

-On the 5th of the month, you will receive your penpal pairing via email. It will be your responsibility to contact your penpal and get their mailing address and any other information you might need like allergies or dietary restrictions.
-You will have until the 15th of the month to put your box of goodies in the mail. On the last day of the month, you will post about the goodies you received from your penpal!
-The boxes are to be filled with fun foodie things, local food items or even homemade treats! The spending limit is $15. The box must also include something written. This can be anything from a note explaining what’s in the box, to a fun recipe…use your imagination!
-You are responsible for figuring out the best way to ship your items depending on their size and how fragile they are. (Don’t forget about flat rate boxes!)
-Foodie Penpals is open to blog readers as well as bloggers. If you’re a reader and you get paired with a blogger, you can choose to write a short guest post for your penpal to post on their blog about what you received. If two readers are paired together, neither needs to worry about writing a post for that month.
– Foodie Penpals is open to US, Canadian residents & UK residents.  Please note, Canadian Residents will be paired with other Canadians only. We’ve determined things might get too slow and backed up if we’re trying to send foods through customs across the border from US to Canada and vice versa. So, I’m going to keep two separate lists and match US w/ US and Canada w/ Canada!

***If you’re in the UK, please contact Carol Anne from This Is Rock Salt at [email protected] to get involved!

Now back to my Blueberry Pancakes.  You know I normally try to change it up with my pancakes, but what I found funny is I never made traditional Blueberry Pancakes, so this morning I thought I would make some.  I picked up the freshest, plump blueberries from the Farmers Market.  Oh man were they good.  Honestly these are probably one of the best pancakes I have had.  It’s simple, loaded with berries and so dam good!!!  I love the Spelt Pancake Mix.
Now you know me, I didn’t follow the directions on the package.  I took the Spelt Pancake Mix and made my own recipe.  I used, of course Greek Yogurt, egg whites, dash of sugar and vanilla extract.  I’m always trying to find ways to cut calories without sacrificing the flavor.  Three of these pancakes came in at 165 calories.  Nice, huh!  Now don’t worry, you can make these pancakes without the Spelt Pancake Mix.  You could use another pancake mix or make your own, which is basically, flour, baking powder, salt & sugar.  I’ll give you alternative ingredients in my recipe below.

I’ve used spelt oats in granola, but this is the first time I baked with it. It’s good, I didn’t notice to much of a difference and the best part is it’s healthier, more protein!

Happy Monday! I’m sharing with you a rare view o Happy Monday! I’m sharing with you a rare view of my kitchen. What’s so rare about it! It’s clean. 🤣
.
So this weekend our refrigerator broke. The freezer no longer works and the fridge is not getting cool enough. Ugh!! We bought our Whirlpool refrigerator about 4 years ago and spent near $3000 for it. It sure didn’t last long.
.
After reading reviews on a million refrigerators, they all seem like crap. I need your help! Do you have a refrigerator that you recommend?
.
I saw a Frigidaire one that we are debating on, but not sure? The reviews are good, but says, they were collected from a promotion. So I’m not sure how much I trust that? Anyway, any recommendations that you have would be great!
.
Have a great day!

🐰
I have been decorating the house for Easter and Spring. I love how this little space turned out. I am loving the bright pastels. I added my new bunny/chick pillow that I got from @12timbers. It matches so perfectly and it’s so cute. I also couldn’t resist the chick pillow from Target.

Hi Everyone! I hope you had a great weekend. I mus Hi Everyone! I hope you had a great weekend. I must say I was disappointed in the Super Bowl. I really wanted the 49ers to win. Anyway, this weekend I refreshed my guest bathroom.
🐰
I have to say my new favorite item is the towel holder. It’s so cute and practical. I don’t have a hand towel rack and I hated leaving my towels on my counter. I saw the towel holder from Target and had to get it. It’s the Hearth and Hand brand.
🐰
I added some bunnies for Spring and a touch of pink for some color. The hand towels are from Homegoods. They have so many bunnies and Easter decor. I had to control myself because I was with my husband. I may go back.
🐰
Have a great day!!

Happy Monday!! I have to confess to you. I still h Happy Monday!! I have to confess to you. I still have Christmas in my kitchen.😳 I don’t know where to put it, so I haven’t taken it down. It’s not a lot, but just enough to where I can’t fit it. Ugh! Please tell me I’m not the only one.
💕
I did do one little spot for Valentines, which I think is so cute. I love decorating with Valentines candy. I can’t resist the pinks and the conversation hearts. I do not plan on going all out decorating this season, as time is going so fast, but I may add some hearts here and there.
💕

Hi Everyone! With spring around the corner, now is Hi Everyone! With spring around the corner, now is the time to get your chores done, so when the warmer weather arrives you can enjoy it. My goal is to refresh my bedroom. I am slowly getting rid of stuff that I no longer need and slowly adding new decor. So hopefully in a few weeks it will be done. #twopageshome
♥️
The first thing I added are these stunning customized curtains that I was gifted from @twopagescurtains. Guys, I’m in love! The curtains are just so pretty! I am loving the way it shades the sun, but still lets the light in. Exactly the look I was going for.
♥️
The curtains I chose are the “Liz Linen Drape Soft”. They are a linen curtain that is environmentally friendly, hypoallergenic, long lasting, dust preventative, and breathable. They are also wrinkle free. I didn’t have to steam them. They came right out of the package ready to hang. They also come in 38 colors and 7 shadings to choose from. There is an option for everyone.
♥️
I’ll be honest I was intimidated on ordering custom curtains. I was so afraid I would order them wrong, but I didn’t. Two Pages has a measurement finder that asks you a few easy questions and boom you have your custom curtain size. It was so simple.
♥️
If you are looking for some new curtains or shades for your home, I highly recommend Two Page Curtains. I absolutely love them. They were kind enough to give my followers an 8% discount code: PBANDP. Link in bio
♥️
Are you planning on refreshing any spaces?

Happy Friday! Hope you had a wonderful holiday sea Happy Friday! Hope you had a wonderful holiday season. I am slowly working on taking my Christmas decor down. I still have my tree up, but I love the twinkling lights, and the real reason is I need my husband to get the box out of the garage. lol
💙
I am going with blues in the living room. I just find blue calming and peaceful. The first area I styled is the coffee table. Sorry about the views. I have a small, thin living room.
💙
I decided to go light on the decor and add some fresh faux greenery. I hate leaving the remote controls out, so I decided to store them in a decorative box. Everything here, but the white box was bought at Target.
💙
Have a wonderful weekend!

Hi Everyone! Hope you had a wonderful Christmas. I Hi Everyone! Hope you had a wonderful Christmas. It was low key for us, as it was just my husband and I. We had dinner at my daughters house on Christmas Eve. That was nice.
🎄
I am sharing my last view of my living room before I take down my Christmas decor. I will leave some of the winter type greens, but I think I’m going to add some blues. I have always liked blue after the holidays. It just gives the room a light and clean look.
🎄
I want to say sorry for lack of posting. It’s just so time consuming engaging. I hate spending countless hours on my phone. It has made me physically lazy and it hurts my eyes. I have put on so much weight because all I do is sit. I really need to change this habit. Anyway! I hope you have a wonderful day!!!
