Strawberry Banana Baked Oatmeal

Hi Everyone,

How was your Saturday?  Mine was pretty nice!  I got up early, did a little blogging and then I went to the farmers market to get more strawberries, than to Trader Joe’s to pick up a basil plant and other goodies.  I came home and worked in my vegetable garden.  I was planning on planting my plants, but by the time I amended my soil it was getting to hot out. Actually it was a perfect day to work in the yard because the sun was shining, not to hot to and there was a slight breeze.  So first thing in the morning I plan on getting my plants in the ground.  I just love gardening, it’s so rewarding, if you don’t kill your plants.  I plan on planting Italian Peppers, Roma tomatoes and Heirloom tomatoes, Burpless Cucumber and English Cucumbers, plus some nice herbs, like thyme, basil and parsley.  Oh I can’t wait for 90 days till picking time starts!  Do you garden?  What do you like to plant?  Flowers?  vegetables?  Fill me in on the details!

Today I have for you a Strawberry Banana Baked Oatmeal Recipe that is perfect for breakfast.  I actually made this a while ago, I just didn’t get a chance to post it.  I just started dabbling in baked oatmeal, and I have to say I really love it!!  I think it actually fills me up more than regular oatmeal.


Sorry the pictures aren’t great, that’s one of the reasons I haven’t posted it, but it’s so good, I just had to share.  I have made this about three times in the past month.  This one is loaded with fresh strawberries and I topped it with a little banana.  For the topping, I added some cinnamon and sugar from my Trader Joe’s grinder.  If you haven’t tried their Cinnamon and Sugar grinder yet, you should!  A little goes a long way.  I used it in my coffee, yogurt and ice cream too!

One thing I really love about the weekends is breakfast!  I get so excited, thinking of new creations that I can make.  Right now I’m on a major strawberry kick, so I am sure I’ll be sharing all my strawberry recipes with you, so be prepared.  What I find so weird is my family, doesn’t eat breakfast.  Don’t they know it’s the most important meal of the day?  It gives you energy and speeds your metabolism!  I need all the speeding of my metabolism I can get.

Strawberry Banana Baked Oatmeal

Healthy, filling baked oatmeal, full of fresh strawberries and topped with bananas and cinnamon and sugar. A fun alternative to traditional oatmeal
Serves: 1 10 oz serving
Ingredients
  • ⅓ cup old fashioned rolled oats
  • 1 egg white
  • ¼ tsp pure vanilla extract
  • ¼ tsp cinnamon
  • ¼ tsp baking powder
  • pinch of salt
  • ½ cup non-fat milk
  • ¼ cup fresh strawberries
  • 5 slices banana
  • a dash cinnamon and sugar grinder from Trader Joe's
Instructions
  1. Preheat oven to 350
  2. In a small bowl add oats, spices, baking powder, salt, egg white, vanilla extract and stir. Add milk and strawberries, stir again.
  3. Place mixture into a 8 or 10 oz oven safe dish (I used a 10oz Ramekin)
  4. Top with banana's and brown sugar and place in oven and bake for 15 - 20 minutes, until firm.

Well my friends, I’m making it short tonight.  After looking at this oatmeal, I’m now in the mood to make a little granola, so I want to get it in the oven before it’s to late.
