Portion Control 6 Layer Taco Dip

April 26, 2012 By Jennifer @ PB and P Design 15 Comments

Hi Everyone,

I feel great today! Things are back to normal. Working late hours throws off my whole schedule, but now I am back to my regular routine! For the past couple of days, we had dinner and lunches out and I am so happy to be home and make my own dinner. Funny how you miss cooking! I don’t mind being served food, but I was missing my creative side. So with all that said, I have a wonderful, fun, low-calorie, 6 Layer Taco Dip, just for you!

This dip is full of lots of fun flavors!  I layered with refried beans, my homemade guacamole, which I posted yesterday, Chobani Greek Yogurt, Salsa, Cheese and diced tomatoes.  The flavors come together wonderfully!

Every time I go to Trader Joe’s I see there 7 layer taco dip and I always want to buy it, but I know I couldn’t eat it all, well I probably could, but would feel to guilty, so I thought I’d serve my dip in little ice cream bowls, so it will get eaten and I was right!! Who can resist such a cute colorful dish?

Portioning the dip in glass bowls would be a great idea for a party!  That way everyone has their own portion and they can double dip without getting yelled at or get dirty looks.  Heck they could lick the bowl too!  🙂

I love portion controlling my dip, that way I don’t go overboard on my dipping, you know it can sometimes be too easy to just keep eating it.  This portion makes about a cup, which may not sound like much, but trust me this is pretty filling!!  The calories for one of these little cups of Mexican heaven is under 200 calories!  You have to love that!!!

I also made homemade tortilla chips, which I liked, but to be honest my Husband didn’t like them at all.  I used mission corn tortilla shells, cut them into 6ths, sprayed them with cooking spray and sprinkled with salt and baked them on 400 degree oven for 10 minutes or until crispy.  They tasted good to me, but like I said he didn’t care for it.  However he likes fried tortilla chips and I don’t mind baked ones.

Off the subject of my tasty 6 Layer Taco Dip, today (Wednesday) was the first day I exercised all week, and boy was it hard to get back into to doing it.  I did Jillian Michaels No More Trouble Zone and that workout is so long.  It’s like 50 minutes of working out and 5 minute cool down.  My arms are so sore from it, which is a good thing.  I need a hard workout considering I ate so much bread and even had a chocolate mousse for dinner the other night.  Eck!!!  I have to be extra good this week, which I seem to be doing well so far, but it has only been a day.  I decided last week that I would really cut down on white sugar, which I did!  I didn’t have any added sugar last week!  🙂  Funny I did eat a lot of berries though!!

Guess what, as I am typing this, my Husband is standing over me with a BIG bag of jellybeans telling me here’s the black one you like.  Here’s a coconut one and I’m putting them in my mouth.  I swear he purposely does this to me!  I have no control!  How do people do it?  Oh well, a couple of jelly beans won’t sabotage me!  🙂

I love these single serving fiestas in a bowl! They’re the only way I could exercise any portion control over seven layer dip. 😛

Yay for getting back into your groove! I feel so off when I’m unable to exercise or eat homecooked food for a while…but it feels so great to get back to it when I do!

Okay Jenn, so first of all, you need to tell your husband to put the jelly beans in little glass bowls, THEN you could have some portion control 🙂 – but not me, I would eat all the bowls clean!
I love this dip, so pretty and sounds delish, I think I could eat for a whole meal, YUM! 🙂

Thanks for linking this up to our Super Bowl party. This looks so good. I think the homemade tortilla chips are ok. It certainly works well for portion control. I can’t let an entire bag of those chips go to waste by not eating them.

It’s time for my annual pumpkin bath picture. I It’s time for my annual pumpkin bath picture. I don’t know what it is, but I love to give pumpkins a bath. Don’t they look cute bathing in the sunlight with bubbles around them? lol
🎃
There are two methods that I have used in the past; the chlorine bath and the dish soap bath. This is what I have learned.
🎃
My favorite and only way I wash pumpkins now is using dish soap. It gets rid of the sap and makes them clean. I soak my pumpkins for about 20 minutes. The pumpkins will last until December. Plus if you keep your pumpkins after the holidays it will decay and grow pumpkins the following year. Plus it’s safe for animals that may nibble on your pumpkin.
🎃
The chlorine bath method will make your pumpkins last possibly up to a year. They take very long to break down and I never got my pumpkins to seed themselves. Plus it is not safe for animals in my opinion. Though Clorox Bleach says it’s safe, they just taste salty.
🎃
The key to washing pumpkins is to make sure that you get the area around the stem dry. You don’t want water around the stem. This could make your pumpkin rot sooner. So after the bath, dry your pumpkins off very good.
🎃
Did you get your pumpkins yet?
.
PS if you are in the Bay Area, I highly recommend going to @threenunnsfarm to get your pumpkins. They have a wide variety and the pumpkins and are .75 a pound. I bought all these pumpkins for $42.

🦇
To add Fall or Halloween you don’t need to add a lot, just a few touches here and there. I will give a full tour in stories and tag a few items. Majority of the decor came from @krumpetshomedecor and the towels and bat banner from @theblessedpeach

Hello Tuesday! Hope you are doing well. It’s sta Hello Tuesday! Hope you are doing well. It’s starting to feel like Fall here in Northern California. The mornings and evenings are feeling crisp. I can’t get over that we are in the middle of September. Where did the Summer go?
🎃
I’m sharing with you the corner of my living room where I store my pumpkins that I grew before I can take them outside. It’s been too warm for them and I want them to last through October. They have been doing well, as they have been here since the middle of August.
🎃
I’m excited because this Saturday our local pumpkin patch will be opening. They have a huge variety of pumpkins and very inexpensive too. I’ll be stocking up. I just love this time of year.

I’ve taken a little break from posting here because I have been busy on the dogs Instagram page. It’s hard to keep up on both. The dog page is so busy with birthdays, events and engagement. They have a busier social life than me.

I am sharing with you the last view of my kitchen before it is filled with Halloween. I spent 6 hours yesterday cleaning all the cabinets, appliances, sink and floor. I even did the windows. It sure tired me out. I’m not as young as I used to be. But it is so sparkly clean. I did put up my Halloween and I can’t wait to share with you. The dining room is the next room to conquer.

Hi, it’s me Samuel!! I am taking over mamas page Hi, it’s me Samuel!! I am taking over mamas page today because I got the best gift in the whole world and it even came in the mail on my birthday. How did @downlitebedding know? They are so good!
🐾
Downlite Bedding sent me the EnviroLoft® Down Alternative PrimaCool™ Cooling Comforter. Isn’t it beautiful? It’s so soft, cozy, hypoallergenic and it makes me so happy.
🐾
The comforter is 400 thread count, it has moisture wicking and cooling technology to help regulate body temperature, which is perfect since I get warm in the summer with all my hair and I like to be cool when I’m sleeping. A big plus is the comforter is white, I hide very well in it. It’s hard to see me. So mama can’t catch me on her bed.
🐾
The EnviroLoft® Down Alternative PrimaCool™ Cooling Comforter also has a Scotchguard stain release fabric and machine wash and dry. It’s truly an amazing comforter.
🐾
Mama let me do this takeover today because she knows that I love @downlitebedding as much as she does. She said she has never seen me get so excited as I do when we get Downlite Bedding and pillows in the mail. How can I not get excited? It’s like sleeping on a cloud!
🐾
Downlite Bedding was kind enough to give us a 20% discount: DYGEN20
🐾
Have a great day and happy napping!

Happy Thursday! Here is a view of my garden that I Happy Thursday! Here is a view of my garden that I took a couple weeks ago. My garden really overgrew this season. I need to do some major work in it, but with the heat, it’s just unbearable to be out there too long.
🌼
I had a lot of zinnias self-seed this season which is cool, but they kind of took over. They crowded out some plants, so I need to get in there and pull some out. Plus being so crowded, they got powdery mildew. Yuck!
🌼
I’m thinking for the Fall making this area a little harvest pumpkin area. We will see. I have grand ideas in my head, but I don’t always follow through. lol
🌼
How your garden growing? I lost all my potted plants from the heat. 😩

Hello Monday! This weekend I made a little charcut Hello Monday! This weekend I made a little charcuterie setup for my husband and I. This is something that I just love to do. I could just eat this type of meal all day long.

I am sharing the “All White Collection” from @bzaar_wholesale. Each piece to the collection is so elegant and can be used all year round and would be gorgeous around the holidays.

The tray is made of marble with beautiful gold handles. The cheese knives are gold with solid marble handles and compliments the tray perfectly.

I used the marble flower shaped bowl for putting chocolates, but would be so stunning to use on your coffee table, side table and more.

The cake stand is has a marble base with Mother of Pearl edging and has a glass lid to go over the top. I will be putting my cakes and cookies on it in the future, but for now I used it to place my bruschetta.

@bzaar_wholesale has amazing products for your home, great pricing and global shipping. The link is in my bio.

Do you like making charcuterie boards? What do you add to yours?

Hello, hello! It may be 100 degrees outside, but I Hello, hello! It may be 100 degrees outside, but I can’t resist putting out some Fall. Especially when you get new decor from @12timbers. You would laugh if you came into my living-room. Half my room is Fall, the other half is still coastal blues. lol I’ll eventually change it all out.
🍂
Let’s talk the art work. Isn’t it stunning? My husband never says anything about my decor, but he keeps talking about how much he likes the framed art from 12 Timbers. I agree, it’s so beautiful. It reminds me of when I lived back east and we would go to Letchworth Park in NY. The colors are stunning and goes perfectly with the burnt orange color that I’m using this season.
🍂
I just adore the wooden cut out pumpkins from @12Timbers. When I look at them they make me smile. The orange wooden leaf is the perfect piece to bring everything together. This gets me so excited for Fall decorating. Now to finish the rest of the living room.
🍂
12 Timbers is so kind to give me a discount code. It’s good until Saturday at midnight. The code is PBANDP15.

Have the most beautiful day!

Look at this friends! It’s my first Fall vignett Look at this friends! It’s my first Fall vignette. Notice anything that seems a tad early? It’s my first pumpkin from my garden. Can you believe it? They started to grow early this season so it’s time to start picking. Unfortunately the massive one I showed you a couple weeks ago didn’t make it. It collapsed in the middle. That makes me sad, but at least I have more pumpkins growing.
🎃
I really had fun bringing out some Fall decor. Fall is not my favorite season, as I love Spring and Summer, but Fall is my favorite to decorate for.
🎃
I wanted to share with you my new reversible blocks from @krumpetshomedecor. Aren’t they cute. They would look so pretty on a shelf. The one side says Fall and the other side says Boo! The two wooden pumpkins are also from Krumpets Home Decor.

Hello Tuesday! One of my favorite summer drinks is Hello Tuesday! One of my favorite summer drinks is a nice cold glass of lemonade. I like it a tad sour over sweet. It gives you the zippys in your mouth. I do love a good homemade lemonade, but once in awhile I like to cheat and just get my favorite store brand and add some freshly cut lemons and a few sprigs of mint. It then looks homemade when it’s not.
🍋
This is my outdoor dining area. I put the tablecloth over the table and have kept it like that all summer. I love my table, but being black, it’s extremely hot when you touch it. Plus it has water spots from last year which is annoying. Not sure how to get rid of them?
