Berry Cheesy Breakfast Quesadilla

Good morning Sunshine,

Well I had quite a busy Friday!  I woke up and I was tired, lazy and hungry!  I didn’t know what to have for breakfast so I asked on Facebook and majority said to have pancakes.  Now you know I love pancakes, but I was just to lazy to make them.  I thought maybe I’ll just have yogurt, but then I didn’t feel like that either.  I wanted something light and fruity that wouldn’t take to long to make.  Do you have days like that, where you just don’t know what to make or eat?  I dug through the fridge and I an idea popped in my head.  I gathered my goodies and came up with this.

What is that you’re wondering?  I don’t even know how to describe it!  It’s a cross between a crape and a quesadilla.  It was everything I wanted.  Creamy, cheesy, light, warm and chock full of fresh berries.  Not to mention it took like 3 minutes to make.  This would actually make a wonderful dessert, topped with vanilla ice cream and a sprinkle of cinnamon.  Oh boy, I’m thinking of doing that now.


What I did is I took a Flatout Bread and stuffed it with creamy goat cheese, blueberries, raspberries and strawberries.  Folded it like a quesadilla and cooked it in my skillet until it turned lightly brown.   I would have used cream cheese, but I didn’t have any, but I did have a goat cheese cream cheese and it worked out just as good.  Have you ever had Flatout Bread?  There perfect for dishes like this and for making pizza.  Since it was so nice out I decided to eat breakfast outside. I love how the sun is shining on my breakfast.

I topped it with Maple Syrup which was the perfect amount of sweetness that it needed.  This is a fantastic breakfast.  Healthy, low calorie and so full of flavor.  This is a breakfast that I could make at work using my Panini Press, which I plan on doing next week.

I plan on making my creation again and trying it with different kinds of stuffing.  I got a lot of ideas in my head on this one, so you Guys better get some Flatout Breads or start making crapes, because what I create next is going to be good!!!!  I can taste it already!

Speaking of crapes, have you ever had one?  I had one once, in Las Vegas.  My Husband and I were walking around Caesars Palace and we came across a chocolate restaurant, Max Brenners; and my eyes lite up like a kid on Christmas.  Chocolate everywhere!  They had chocolate covered strawberries, chocolate syringes to shoot chocolate into your mouth and chocolate crapes.  We couldn’t walk by and not get any chocolate, so we ordered our first crape, which was Chocolate and Peanut Butter.  Holy amazing!  It was one of the best things I ever eaten.  We had chocolate all over our hands and face, it was wonderful.  It was so rich, a little to sweet, but so darn good.  When we go back to Vegas, I know we will be hitting up that restaurant again!

After breakfast I had more energy and was feeling better so I decided to treat myself to a Pedicure.  That was such a nice treat!  I’ll tell you, you couldn’t pay me enough to give pedicures to people.  Eww, think of all the feet they must touch in a day!  After my pedicure I was so relaxed that I needed a Starbucks to wake me up!  I love my Starbucks!  I swear I can’t go a day without it!!  Than I went shoe shopping and bought these!

I love DSW!  They have the best shoes and prices.  They had a great selection of sandals but the heels were to high.  Since I’m 5’11, it’s hard to find a low heel shoe that’s pretty.  I can’t wear flats, because they bother my feet.  I also bought some Niki walking sneakers to help encourage me to get out and walk and that’s exactly what I did.  By the way the sandals look worn because I wore them right after I bought them. There so comfortable!

I decided to do some clothes shopping to, which was a huge mistake.  I realized I put on a little too much weight and I was up in the next clothing size.  I refused to buy a bigger size! Nothing worse than clothes shopping and nothing fits.  I told myself a few months ago I had to drop 5 lbs in order to buy Spring clothes and I really tried but nothing is happening for me.  I’ll keep trying!!  I wish someone could just tell me what I am doing wrong.  Am I eating too much, am I eating to little?  Am I not exercising enough?  I have no clue what the answer is.  If you know I would love your help!

After dinner I decided to try out my new sneakers and I took Samantha (my dog) for a 3 mile walk.  I would have jogged, but it was still 84 degrees out and I was so full from dinner I swear you could have rolled me down the street.  On our walk, a truck drove by with a lady holding a dog, well I think it was a dog in her lap.  It had the face of a pug, but the hair of Einstein.  The thing looked just like an Ewok!  Remember them from Star Wars?  This thing was ugly!  Black face and gray, fly away hair.  I swear the dog had more hair on its head than I did!

Berry Cheesy Breakfast Quesadilla

A healthy breakfast quesadilla filled creamy cheese and fresh berries.
Serves: 1 serving
Ingredients
  • 1 Flatout Bread
  • ½ oz of creamy goat cheese or cream cheese
  • 3 strawberries, sliced
  • ¼ cup blueberries
  • 5 raspberries
  • cooking spray
Instructions
  1. In a microwave safe bowl add all your berries and microwave for 20 seconds. Than smush them with a fork.
  2. Spray a griddle or skillet with cooking spray and heat on medium.
  3. Spread the cheese on half of the flatout bread and top the cheese with the berry mixture. Fold in half and place on skillet. Cook until bottom side starts to brown, about 2 minutes. Carefully flip and cook other side until lightly golden brown, about one minute.
  4. Serve with extra berries, powdered sugar and maple syrup!

Well my friends, I have been writing and re-writing for a couple of hours now and its way past my bed time.  So it’s time for me to hit the sackaroo!  I need to get a good nights sleep since I plan on getting up early and heading to the Farmers Market.  I need to get there early so I can get the best pick of fruit and flowers!

    Wow! What a fun day and I love your new sandles! The breakfast sounds amazing and I’m going to try that for sure and I think I will makes crepes today and use those, they are so easy to make and will keep in the fridg and you can freeze them using parchment between each one then put in a zip lock baggie and I close it all but a tiny bit of the corner suck out the air and wa-la you have an air tight seal! I love to make fried ice cream using crepes, so so good! Anyway I hope you have a great Saturday and happy farmer marketing!!

    Wow! What a fun day! I love your sandles!! This breakfast looks and sounds fabulous and I’m going to try it but I think with crepes. I’ll just make some today, they freeze beautifully all you do is put parchment paper between each one and put into a zip lock Baggie.
    I like to make fried ice cream using the crepes, oh so good! Have a awesome Saturday and Happy Farmer Marketing!!

    Hey Jennifer! This looks fantastic! Do you think it would be good stuffed with cottage cheese instead of the goat cheese? In terms of your weight loss struggle, are you tracking your calories or counting points? It’s hard, but I think diligence and the consistency found in those techniques is important.

      Hi, Cottage Cheese should work fine in this dish! I count my calories. The whole thing is, how many calories do you really need? I wasn’t losing weight a couple of years ago because I was eating to low, so I ate more and lost weight. I have stuck to the same thing and now I’m gaining weight. I don’t get it? I work out 5 to 6 times a week and I eat about 1400 – 1600 calories a day. It’s so frustrating.

        Have you checked out sparkspeople.com or caloriecount.com? You enter your information and weight loss goals and it spits out a rough outline of what your intake should look like. Additionally, you may want to look into the Weight Watchers point plus system, as it’s a fantastic lifestyle, not diet, that allows you to eat balanced meals and develops/incorporates sustainable habits.           Hi, I am currently following Sparks people, I have for two years and with there help I lost 10lbs, but now I gained almost all of it back. I have religiously stuck to there recommendations and I track my workouts and rarely ever go over my calories. One thing I need to do is fix my heart rate monitor. That really gave me the push to workout harder. Thank you for your help! I’m following you on Twitter!!

    This looks deLISH! I wish I had all the ingredients to make it. Will have to put it on the list!
    as for the weight loss, I’m sorry you’re struggling. The only thing I can think of is that your body is too used to you doing the same things. Doing the same workout. Eating the same amount of calories. Maybe do a week or so of really high intensity workouts and up your calories by 100-200. I’m not an expert by any means, I just know that our bodies get in the groove of the same routine, so you have to switch it up in order to get it working. Kinda like when you drive the same way to work every single day. You’re able to do it in somewhat of a daze. but when you go a different way, you pay a little more attention than you normally would. Same concept. New and harder workouts for a week and up your calories a bit. My suggestion 🙂

      Hi Holly! You right I probably should push myself a little harder with my workouts and switch it up. I have gone to heavier weights this year, and hoping in a month or so I can move up to 12lbs hand weights! Our bodies are so funny! I’m thinking of getting the PX90 workouts because I heard those are intense and they will definitely be a switch up from Jillian Michaels and Jackie Warner workouts that I do. Thank you for your help! I’m going to try your suggestion for next week!! Have a great Saturday and thank you so much!!! 🙂

I was gifted this beautiful table cloth by @cottonprintclub. It’s 100% cotton, comes in several sizes and colors, doesn’t bleed or shrink when washed. I love the shade of green and it is so beautiful that you can use it all year.

Happy World Kindness Day! This weekend I made my a Happy World Kindness Day! This weekend I made my annual snow jar to place on my shelf in the kitchen. You get a tiny sneak peak of my shelves at the end of the reel. The snow jars are so easy to do and you probably have most of the items on hand.

For the snow, I used blanket snow. You could also use, sugar or Epsom salt. I like the blanket snow because it’s not messy and it hides the fairy lights battery pack.

The houses are ornaments that I bought at Target. I thought they were Perfect for my pink kitchen. Of course you can use whatever you have on hand. It doesn’t have to be a house and tree.

If you buy fairy lights, make sure they have a timer on them. Trust me that will make life easier. If you don’t like fairy lights, you can use a faux candle. 
Ohhh and have a stack of batteries. I go through more batteries in the month of December then I do the rest of the year!

Happy Monday! Sorry I haven’t been on in awhile. Happy Monday! Sorry I haven’t been on in awhile. My husband was sick with the flu, then he passed it on to me. My dog even had an upper respiratory infection. Ugh! It was a rough 2 weeks. Then on Friday I had surgery to remove skin cancer on my chest. I’m sore and I can’t lift or exercise. Anyway, that’s why I have not been on.
