Half way through the week already. I can’t understand how the days go so fast, yet the work hours go so slow. I am such a clock watcher, it’s a horrible habit. Even when I’m having fun, I watch the clock, knowing that my fun time will be over soon. That is so strange, why do I do that? Right now I am waiting for the weekend because it’s suppose to be nice out and I get to make a new breakfast creation. Ohhh, what should it be? This past Saturday I made one of my best chocolaty pancakes ever!!
These pancakes were like eating a piece of chocolate cake for breakfast, but the only difference is, that these are healthy! Yup, healthy!! Actually I was thinking of making them again and freezing them and having them for dessert topped with just a smidge of ice cream and maybe some berries. Sounds weird doesn’t it? If you make them, you’ll understand.
I made these bad boys with unsweetened cocoa powder, greek yogurt and whole wheat pastry flour and some other good things. When I figured out the calories I couldn’t believe my eyes. These are the lowest calorie pancakes I have made yet! Are you sitting down? You better be because when you find out there 138 calories for THREE of them you may fall over, I almost did, but realized I need to eat them, can’t waste my time laying on the kitchen floor!
To add a little color to the pancakes, I added a few egg-shaped sprinkles that I found in my cupboard. Doesn’t it make them look all festive? There shape looks like the chocolate covered sunflower seeds that I buy from TJ’s. I just think there so cute! he he Don’t they just want to make you smile?
I was amazed of all the fun things I found and threw out this weekend. My Easter was spent cleaning my kitchen and I mean cleaning it! I spent 6 hours cleaning. The stove took forever and then I started cleaning everything off, dusting plants, cleaning appliances, rearranging my cupboards and even cleaning the backside of my microwave. My kitchen is spic and span!! One thing I found, which actually made a lot more room is I had some old spices that I found in the back of my drawer that expired in 2007. I didn’t realize spices had expiration dates, but they do! So I threw a lot of them out. All that means is I can buy more!! Any excuse to go shopping, right? I even moved my counter top appliance around so I can be more efficient in the kitchen. The only problem with that is, I’m not used to it and now my kitchen echos, which I find strange. Have you done any spring cleaning this year? Next is my livingroom, but maybe that will be next Sunday?
- ⅓ Cup of Greek Yogurt
- 2 egg Whites
- ½ tsp. Vanilla Extract
- ⅓ Cup Whole Wheat Pastry Flour
- 2 Tbsp. Unsweetened Cocoa Powder
- ½ tsp. Baking Soda
- ½ tsp. Sugar
- 1 dash salt
- Optional: 1 Tbsp Milk, if needed
- Mix greek yogurt, egg whites & vanilla extract into a small bowl
- In a separate bowl combine flour, cocoa powder, baking soda, sugar, & salt
- Combine and whisk till evenly mixed (If batter seems to thick add 1 tablespoon of milk)
- Heat the skillet on medium heat, once it's hot place ¼-cup batter onto non-stick skillet and cook till bubbles start appearing through the top of the pancake and then flip.
- About 1-2 minutes on each side
- Add sprinkles to make it pretty!
Calorie per serving (3 pancakes): 137.9, Fat: 1.2, Sodium: 229, Potassium: 181.7, Carbs: 23, Fiber: 4.4, Sugar: 3.7, Protein: 11.9
What is your favorite kind of pancake? I honestly couldn’t tell you mine? It’s to hard to decided. I think pancakes are one of those foods that you can create to match your mood. This weekend, because it was Easter, I had chocolate on the brain, even though I didn’t get any! 🙁 But these pancakes for sure make up for that!!
