Triple Berry Muffins

April 7, 2012 By Jennifer @ PB and P Design 20 Comments

Hi Everyone,

Today I joined the Crazy Cooking Challenge sponsored by Moms Crazing Cooking.  The challenge is for you to pick a recipe from “Blog Land” (any recipe you’d like but MUST be from another blog, not from a celebrity chef like Pioneer Woman, Rachel Ray or Taste of Home, etc), it will be a SPECIFIC recipe, bake it & blog about it.  Today’s recipe challenge was blueberry muffins.  It can be any kind of muffin as long as it had blueberries in it.

I searched high and low on my favorite sites and either I found muffins that had way to much sugar in them or I couldn’t find any recipes at all.  I thought that was kind of strange.  This was a hard challenge and I thought it would be easy. So I went to one of my favorite blogs The Cafe Sucre Farine.  I found a rustic looking Triple Berry Muffin with Lemon Glaze.  Mmmmm, glaze…  I thought would be a perfect fit!  I love mixed berries in a muffin and the glaze on top was a perfect compliment to the muffin.

These muffins remind me of the kind grandma would make.  There a little heavy of a muffin, but soft in the center and it holds up perfect with the glaze without getting soggy.  I even froze the muffins with the glaze on them so my Husband can take them to work and he said they tasted like I just baked them!  Oddly enough I have found glaze to be freezer friendly.  I’ve frozen biscotti with glaze and even re-heated them in the oven and they turned out perfect, and tasted fresh.

The original recipe can be found here. http://thecafesucrefarine.blogspot.com/2011/02/they-say-everything-is-relative.html
Serves: 12 Muffins
Ingredients
  • ½ cup butter, softened
  • ½ cup sugar
  • 1 large egg
  • 2 cups flour (I used ½ WW pastry flour & ½ AP Flour)
  • ½ teaspoon soda
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • ½ cup milk (I used non-fat milk)
  • ½ cup sour cream (I used greek yogurt)
  • 1 teaspoon vanilla
  • 1 cup frozen mixed berries, broken up
  • 2 tablespoons freshly squeezed lemon juice
  • ¾ cup powdered sugar
Instructions
  1. Preheat oven to 400 degrees.
  2. Remove frozen berries from freezer. With fingers break up the raspberries and blackberries into small frozen pieces onto a small plate. If they are frozen too hard to crush let them sit out for a minute or two but do not let them unthaw! Crush while frozen. (I like to run my fingers under warm water if they get too cold while crushing the berries.) Do not break apart blueberries, leave them frozen and intact. Return berries on plate to freezer while preparing batter.
  3. Spray a 12 cup muffin tin generously with cooking spray.
  4. Beat butter and sugar until fluffy with electric mixer.
  5. Add egg and beat well.
  6. Combine milk and sour cream and set aside.
  7. Stir together dry ingredients. Add dry ingredients alternately with milk to buttter mixture, beating with each addition until barely combined.
  8. Gently fold in frozen berries.
  9. Spoon batter into greased muffin pan, dividing between the 12 cups. Don't worry if your muffin cups seem quite full. These muffins will rise up and not "out" like some muffin batters do.
  10. Bake 18 to 20 minutes until springy when gently touched on top. Remove from oven allow muffins to cool slightly, about 2 minutes, before removing from pan to cooling rack.
  11. Allow to cool on rack for 10 minutes then drizzle muffins with lemon glaze*.
  12. Enjoy! - and expect rave reviews!!
  13. * For lemon glaze, mix the lemon juice with the powdered sugar until smooth. If too thick to drizzle, add a bit more lemon juice.

I had such a nice day off on Friday that it put me in a really generous mood!  First let me tell you, the sun was shining, I got to sample chocolates, went to Trader Joe’s and they had my Frozen Yogurt back in stock (that made my day), got a check from the dentist saying I over paid (crazy huh) and with all that excitement, I decided to pick something up for you.  Yup, a giveaway is coming soon and it’s a good one, at least I think so!!  But you’ll just have to wait, so check back.  The giveaway will be either Sunday or Monday.  This is one you won’t want to miss.

I hope you all have a great day, I know I will!!  Happy Saturday my friends, now go out there and enjoy it!!

It’s time for my annual pumpkin bath picture. I It’s time for my annual pumpkin bath picture. I don’t know what it is, but I love to give pumpkins a bath. Don’t they look cute bathing in the sunlight with bubbles around them? lol
🎃
There are two methods that I have used in the past; the chlorine bath and the dish soap bath. This is what I have learned.
🎃
My favorite and only way I wash pumpkins now is using dish soap. It gets rid of the sap and makes them clean. I soak my pumpkins for about 20 minutes. The pumpkins will last until December. Plus if you keep your pumpkins after the holidays it will decay and grow pumpkins the following year. Plus it’s safe for animals that may nibble on your pumpkin.
🎃
The chlorine bath method will make your pumpkins last possibly up to a year. They take very long to break down and I never got my pumpkins to seed themselves. Plus it is not safe for animals in my opinion. Though Clorox Bleach says it’s safe, they just taste salty.
🎃
The key to washing pumpkins is to make sure that you get the area around the stem dry. You don’t want water around the stem. This could make your pumpkin rot sooner. So after the bath, dry your pumpkins off very good.
🎃
Did you get your pumpkins yet?
.
PS if you are in the Bay Area, I highly recommend going to @threenunnsfarm to get your pumpkins. They have a wide variety and the pumpkins and are .75 a pound. I bought all these pumpkins for $42.

To add Fall or Halloween you don’t need to add a lot, just a few touches here and there. I will give a full tour in stories and tag a few items. Majority of the decor came from @krumpetshomedecor and the towels and bat banner from @theblessedpeach

Hello Tuesday! Hope you are doing well. It’s sta Hello Tuesday! Hope you are doing well. It’s starting to feel like Fall here in Northern California. The mornings and evenings are feeling crisp. I can’t get over that we are in the middle of September. Where did the Summer go?
🎃
I’m sharing with you the corner of my living room where I store my pumpkins that I grew before I can take them outside. It’s been too warm for them and I want them to last through October. They have been doing well, as they have been here since the middle of August.
🎃
I’m excited because this Saturday our local pumpkin patch will be opening. They have a huge variety of pumpkins and very inexpensive too. I’ll be stocking up. I just love this time of year.

I’ve taken a little break from posting here because I have been busy on the dogs Instagram page. It’s hard to keep up on both. The dog page is so busy with birthdays, events and engagement. They have a busier social life than me.

I am sharing with you the last view of my kitchen before it is filled with Halloween. I spent 6 hours yesterday cleaning all the cabinets, appliances, sink and floor. I even did the windows. It sure tired me out. I’m not as young as I used to be. But it is so sparkly clean. I did put up my Halloween and I can’t wait to share with you. The dining room is the next room to conquer.

Hi, it’s me Samuel!! I am taking over mamas page Hi, it’s me Samuel!! I am taking over mamas page today because I got the best gift in the whole world and it even came in the mail on my birthday. How did @downlitebedding know? They are so good!
🐾
Downlite Bedding sent me the EnviroLoft® Down Alternative PrimaCool™ Cooling Comforter. Isn’t it beautiful? It’s so soft, cozy, hypoallergenic and it makes me so happy.
🐾
The comforter is 400 thread count, it has moisture wicking and cooling technology to help regulate body temperature, which is perfect since I get warm in the summer with all my hair and I like to be cool when I’m sleeping. A big plus is the comforter is white, I hide very well in it. It’s hard to see me. So mama can’t catch me on her bed.
🐾
The EnviroLoft® Down Alternative PrimaCool™ Cooling Comforter also has a Scotchguard stain release fabric and machine wash and dry. It’s truly an amazing comforter.
🐾
Mama let me do this takeover today because she knows that I love @downlitebedding as much as she does. She said she has never seen me get so excited as I do when we get Downlite Bedding and pillows in the mail. How can I not get excited? It’s like sleeping on a cloud!
🐾
Downlite Bedding was kind enough to give us a 20% discount: DYGEN20
🐾
Have a great day and happy napping!

Happy Thursday! Here is a view of my garden that I Happy Thursday! Here is a view of my garden that I took a couple weeks ago. My garden really overgrew this season. I need to do some major work in it, but with the heat, it’s just unbearable to be out there too long.
🌼
I had a lot of zinnias self-seed this season which is cool, but they kind of took over. They crowded out some plants, so I need to get in there and pull some out. Plus being so crowded, they got powdery mildew. Yuck!
🌼
I’m thinking for the Fall making this area a little harvest pumpkin area. We will see. I have grand ideas in my head, but I don’t always follow through. lol
🌼
How your garden growing? I lost all my potted plants from the heat. 😩

Hello Monday! This weekend I made a little charcut Hello Monday! This weekend I made a little charcuterie setup for my husband and I. This is something that I just love to do. I could just eat this type of meal all day long.

I am sharing the “All White Collection” from @bzaar_wholesale. Each piece to the collection is so elegant and can be used all year round and would be gorgeous around the holidays.

The tray is made of marble with beautiful gold handles. The cheese knives are gold with solid marble handles and compliments the tray perfectly.

I used the marble flower shaped bowl for putting chocolates, but would be so stunning to use on your coffee table, side table and more.

The cake stand is has a marble base with Mother of Pearl edging and has a glass lid to go over the top. I will be putting my cakes and cookies on it in the future, but for now I used it to place my bruschetta.

@bzaar_wholesale has amazing products for your home, great pricing and global shipping. The link is in my bio.

Do you like making charcuterie boards? What do you add to yours?

Hello, hello! It may be 100 degrees outside, but I Hello, hello! It may be 100 degrees outside, but I can’t resist putting out some Fall. Especially when you get new decor from @12timbers. You would laugh if you came into my living-room. Half my room is Fall, the other half is still coastal blues. lol I’ll eventually change it all out.
🍂
Let’s talk the art work. Isn’t it stunning? My husband never says anything about my decor, but he keeps talking about how much he likes the framed art from 12 Timbers. I agree, it’s so beautiful. It reminds me of when I lived back east and we would go to Letchworth Park in NY. The colors are stunning and goes perfectly with the burnt orange color that I’m using this season.
🍂
I just adore the wooden cut out pumpkins from @12Timbers. When I look at them they make me smile. The orange wooden leaf is the perfect piece to bring everything together. This gets me so excited for Fall decorating. Now to finish the rest of the living room.
🍂
12 Timbers is so kind to give me a discount code. It’s good until Saturday at midnight. The code is PBANDP15.

They started to grow early this season so it’s time to start picking. Unfortunately the massive one I showed you a couple weeks ago didn’t make it. It collapsed in the middle. That makes me sad, but at least I have more pumpkins growing.
🎃
I really had fun bringing out some Fall decor. Fall is not my favorite season, as I love Spring and Summer, but Fall is my favorite to decorate for.
🎃
I wanted to share with you my new reversible blocks from @krumpetshomedecor. Aren’t they cute. They would look so pretty on a shelf. The one side says Fall and the other side says Boo! The two wooden pumpkins are also from Krumpets Home Decor.

Hello Tuesday! One of my favorite summer drinks is Hello Tuesday! One of my favorite summer drinks is a nice cold glass of lemonade. I like it a tad sour over sweet. It gives you the zippys in your mouth. I do love a good homemade lemonade, but once in awhile I like to cheat and just get my favorite store brand and add some freshly cut lemons and a few sprigs of mint. It then looks homemade when it’s not.
🍋
This is my outdoor dining area. I put the tablecloth over the table and have kept it like that all summer. I love my table, but being black, it’s extremely hot when you touch it. Plus it has water spots from last year which is annoying. Not sure how to get rid of them?
