Hi Everyone!!
Woohoo, we made it to Friday! I am so happy for that!! The weather is supposed to be poopy, but I’ll just be happy to be home. I plan on doing kitchen clean-up, meaning cleaning the freezer, cupboards and more. I am starting to become an unorganized mess!! I start to get anxiety when it gets to messy, especially the kitchen. It just makes me cranky!
This is my 3rd month of being part of the Foodie Penpal program sponsored by Lindsay from Lean Green Bean. Every month we are given someone to send a foodie gift to and this month I had Laura from Sprint 2 the Table. I can’t tell you what I sent, but if you see what to see what I sent her, just go here.
For me, I got my foodie gift from Kim from Living Domestically. She gave me a wonderful little package. I got a scone mix from Stonewall Kitchen with two jams from Stonewall Kitchen. I LOVE scones, and now I have no excuse not to make them. It’s like Kim knows me. Stonewall Kitchen is one of my favorite brands, and I always think of buying their mixes but never have. I am so excited to try it!! The jams are Red Raspberry Jam and the other is Blood Orange Marmalade. I am savoring them! Blood orange is my newest favorite flavor.
She also gave me the most cutest card ever!!! I love my puppies!!! She said she bought these gifts for me while traveling to a business conference. Thanks Kim for thinking of me! I really, really love the gifts. I was planning on making the scones this week and posting them with my Foodie Penpal box, but I ran out of time. 🙁 But when I make them, I will for sure post them!!! If your interested in joining the Food PenPal program (you should join, it’s so fun), here is some information about it.
-On the 5th of every month, you will receive your penpal pairing via email. It will be your responsibility to contact your penpal and get their mailing address and any other information you might need like allergies or dietary restrictions.
-You will have until the 15th of the month to put your box of goodies in the mail. On the last day of the month, you will post about the goodies you received from your penpal!
-The boxes are to be filled with fun foodie things, local food items or even homemade treats! The spending limit is $15. The box must also include something written. This can be anything from a note explaining what’s in the box, to a fun recipe…use your imagination!
-You are responsible for figuring out the best way to ship your items depending on their size and how fragile they are. (Don’t forget about flat rate boxes!)
-Foodie Penpals is open to blog readers as well as bloggers. If you’re a reader and you get paired with a blogger, you are to write a short guest post for your penpal to post on their blog about what you received. If two readers are paired together, neither needs to worry about writing a post for that month.
-Foodie Penplas is open to US & Canadian residents. Please note, Canadian Residents will be paired with other Canadians only. We’ve determined things might get too slow and backed up if we’re trying to send foods through customs across the border from US to Canada and vice versa. So, I’m going to keep two separate lists and match US w/ US and Canada w/ Canada!

Now for today’s recipe. This is the quickest easiest chicken dish ever. I’m almost to embarrassed to share it, but I felt I had to, because I know people look for simple and quick and besides this is one of my favorite ways of having chicken.
I know what your thinking, what the heck is that. Well this my friends this is pure Buffalo heaven!! Yah I agree that it’s a weird picture, but it’s what it look liked when I took a bite of my grilled, moist chicken with dripping Buffalo Wing Sauce topped with my Spicy Chipotle Aiolo Sauce. This is so darn delicious! I made extra to take to work tomorrow!!
Now normally I have this on a hamburger bun, but I’m trying to be better and I opt for romaine lettuce leaves, since I was having a side of Alexia Chipotle Sweet Potato Fries. Have you had those fries? I am not sure what is over the top of them, but there crunchy good!!
I cheated making the Buffalo Sauce. I used Archer Farms Buffalo Wing Sauce. I normally use my precious Franks Hot sauce mixed in with a little butter and that is what they use to make traditional Buffalo Wing Sauce. I know people add spices and stuff to it, but trust me, I’m from Buffalo and I worked in a pizzeria. All Buffalo wings sauce is, is Franks Hot sauce and butter!! Simple! Now Franks does make a wing sauce which is really good to, but for some reason Targets Archer Farms was calling to me and it is really, really good! Just the perfect amount of hotness, not to hot, not to mild, just perfect!!

If you want to make the Spicy Chipotle Aiolo Sauce just go here. You’ll see I use it on a lot of different foods. It takes like a minute to make. The sauce is made of mayo, plain Greek yogurt, lime juice, Adobo Pepper and cumin. Mix together and it’s done. So check out my recipe, you’ll love it and you can control how hot you want it. (Last minute update: The recipe is included below).
- 8 oz boneless chicken breast
- salt & pepper
- 4 Tbsp. Buffalo Wing Sauce
- 4 Tbsp. Spicy Chipotle Ingredients: Recipe Below
- 4 Romaine Lettuce Leaves
- **Spicy Chipotle Aiolo Sauce Ingredients:**
- 3 tablespoons fat free mayonnaise
- 3 tablespoons non fat plain Greek Yogurt
- 2 teaspoons chopped chipotle chiles in adobo
- 1 teaspoon minced garlic
- ½ teaspoon cumin
- 4 teaspoons fresh lime juice
- Heat grill on medium heat
- Split Chicken breast to become two 4oz pieces and sprinkle salt & pepper chicken
- Place buffalo wing sauce in a small bowl. Brush one side of each chicken breasts with 2 tbsp. of buffalo wing sauce and place the sauced side down on the grill. Top with remaining hot sauce.
- Cook chicken about 5 - 7 minutes per side.
- Place chicken on romaine lettuce leaf , top with Aiolo Sauce and place other lettuce leaf on top.
- Eats and Enjoy!!
- **Spicy Chipotle Aiolo Sauce Directions**
- In a small bowl place all the ingredients together and wisk together until combined.

If you’re a Buffalo Wing fan, you will love this recipe! It’s hot, spicy, saucy and out of this world!! I love it!!! I always make left over chicken, so I can make a salad or pizza with the left overs. This would also work out well in making my Buffalo Chicken Wontons.
Well Hubby is in the garage so I have a little bit of time to either squeeze in some kickboxing or I’ll make some peanut butter. I literary cleaned out the jar. I know I said I would make some earlier this week, but I didn’t and today I cleaned the jar clean, I am truly out and it’s the start of the weekend and I can’t start me weekend without peanut butter!
