Hi Everyone!
Today was just one of those days that I’m undecided about everything. I spent an hour staring into my cupboard and refrigerator debating on what to make for dinner. I didn’t have any defrosted meat, so I had to come up with a vegetarian dish everyone would love. Still I couldn’t decide. My Husband has been eating left over lasagna just about all week, so pasta was out. Little Jenny doesn’t like beans. I didn’t have any regular bread, I just didn’t know what to do. So I sat at my computer thinking, as I ate away a half bag of Bob Mills Granola. Than I realized I’m not that hungry any more, but I’m still under calories for the day, so I should still eat. Lucky for me, my Husband called and said he was at the grocery store and asked if we need anything. I said with a big smile, get something for yourself. He was happy with that. So he had what he calls Shitty Canoes, which is grilled hot dogs with canned chili and onions, blah! And I made myself this!
What is that you’re wondering? It’s tomato, basil and cheese frittata. I figured I LOVE the combination of tomatoes and basil, why not try it with eggs? Honestly I wasn’t sure if I’d like it, but guess what I did!! It’s so good. The combination of tomatoes and basil with melted mozzarella cheese surrounded by puffy eggs, its perfect! So glad I made it, and I think you should too! Just look at the inside!
It is filled to the rim with tomatoes! I served it with two small pieces of Seeded Oat bread that I made over the weekend. I never understood why people eat all the bread but leave the ends. I think that’s the best part, especially when you have seeded bread!! I love that bread! I topped it with Honey Apple Butter that I bought from Trader Joe’s. Right now as we speak I feel like my stomach is going to explode. Don’t eat a half a bag of granola before dinner! I hate to even know what the calories I racked up on snacking on it!
Not the prettiest picture above, but that is what it looked like when I took it out of the oven. Look at all that basil! Yum!!! I can’t wait to grow it in my garden this year. Just hope the weather warms up enough so I can do some gardening. My yard is in need of some major help! The weeds are getting bigger than the plants!!
- 1 Plum Tomato, diced
- 5 Basil leaves, sliced
- ½ oz mozzarella cheese shredded
- ½ cup egg substitute or two eggs
- 2 tbsp. milk, non-fat
- 1 dash of black pepper
- cooking spray
- Preheat oven to 350
- In a 10 oz ramekin or oven safe baking dish, spray with cooking spray.
- Add tomatoes and basil into prepared baking dish.
- In a small bowl add egg, milk, cheese and pepper. Stir until combined.
- Pour egg mixture over tomatoes and basil.
- Bake for 30 minutes or until center of eggs is firm.
It’s going to be a short post tonight! My Husband is cleaning the pool, and I am going to see, if my stomach can handle about 20 minutes of kickboxing. I’ve kind of slacked on exercising this week, but I have been eating good! Eggs and fruit for breakfast and salads for lunch. Dinners have been healthy too!! So I’m doing good! My only set back this week was the dam granola! I better take it to work and share it!!! I’m best off not having it in the house. That’s why I haven’t made any.
