Chocolate Peanut Butter Brownies

Hi Everyone,

I’m not even going to get into small talk, I am just to excited to share with you my newest, latest and greatest recipe.  First let me tell you I am shocked, shocked, shocked on how tasty this is.  I am in pure amazement and if you make this recipe you will be sending me flowers and you’ll love me forever!  I promise!

First this idea came from you!  I was asked to make a recipe using PB2, so after much thought I decided on a brownie recipe.  I’ll be honest with you, once I tried the PB2 I wasn’t all that thrilled about it, but once I put it in my brownies, I changed my mind.  Now I want to buy a case of the stuff.  For some of you who don’t know what PB2 is, it’s a powdered peanut butter that is half the fat and calories of regular peanut butter.  You take 2 tablespoons of the PB2 powder and mix it with 1 tablespoon of water and stir together.  It does taste like peanut butter and looks like it to, but the flavor is not the same.  However you really can’t go by my judgement, I don’t like store bought peanut butter, I only like mine.  So with that said let me show you my creation.

These brownies are the most moist brownies I ever ate.  You really need a cup of milk with them.  There so soft that they were kind of hard to cut, so forgive the pictures, it’s the taste that counts.  They are super fudgy, sweet, moist, light and have a little bit of peanut butter taste to them.  There actually a mix between cake and brownie.  They are friggen unbelievable.  This will cure any chocolate craving you have!!

Now I’m not just saying that there good because I made them.  I tested them out on little Jenny first.  A little background on Jenny, she is so picky and is a major sweet addict that I thought her judgement would be the truthful. So what did Jenny have to say?  The look on her face said everything, but her exact words were “Oh my God, these are so good!”  I’m pretty proud at this moment.  I’m so darn excited over these that I need to grab one more, so hang on…

Ok, I’m back, miss me?  When using the PB2, the texture didn’t turn out like I had planned.  I thought I would be adding a dollop of peanut butter into the brownies but it was more of a drizzle.  I made the PB2, than added melted butter, confectioners sugar and vanilla.  From the PB2 it made it more liquidy, so I was weary on using it, but I think it’s what made these brownies really moist.  I also doubled the mixture from the recipe below because I had half left over, so I cut that in half for you. No reason to waste any ingredients.  When I poured the mixture in, I used a knife to swirl it in and then I smoothed out the top of the batter.  The batter is more like a mousse than a brownie.  I think thats why it’s so light.  If you don’t have PB2, regular peanut butter should work too!!

I guess your probably wondering what the calories are on a moist, chocolaty brownie like this.  Are you sitting down?  Ready for this one?  I will tell you I was shocked when I figured out the calculations, I actually did it twice to make sure I was correct.  71 calories!!!!  With only 2.6 grams of fat and 11.6 carbs.  Can you believe it?  Now you can have two and not feel guilty at all!  See why I said you’ll love me forever.

I can’t wait for my Husband to come home from work to see what he thinks.  One thing that man loves is chocolate.  I never seen anyone eat so much chocolate in one sitting.  I buy him a 1 pounder box of chocolate for Valentine’s Day and he eats the whole box in pretty much one night.  He may leave some of the funny ones, but he pretty much eats it all.  I don’t know how he does it and I don’t know how he stays so skinny.  I look at the box of chocolate and I gain 5 pounds!


Chocolate Peanut Butter Brownies

Serves: 16 brownies
  • ½ cup granulated white sugar
  • ⅓ cup butter or a soft butter spread (I used Brumble & Brown)
  • 1 tsp. vanilla extract
  • 1 large egg or substitute (I used egg substitute)
  • ⅓ cup all-purpose flour
  • ⅓ cup unsweetened cocoa powder
  • 1 tsp. baking powder
  • ¼ cup plain Greek Yogurt
  • *
  • Peanut Butter Mixture
  • 2 Tbsp. PB2 Peanut Butter
  • 1 Tbsp water
  • ¼ cup confectioners’ sugar
  • 1 tablespoons unsalted butter, melted (I used Brumble & Brown)
  • 1 dash salt
  • ¼ teaspoon pure vanilla extract
  1. Preheat oven to 350 degrees
  2. Spray an 8 x 8" baking pan with nonstick cooking spray.
  3. Peanut Butter Mixture:
  4. In a small bowl add PB2 and water, mix until peanut butter texture. Add butter, salt, confectioners sugar and vanilla extract. Whisk together until combined. Set a side. (note this will be liquidy)
  5. Brownie:
  6. In the bowl add butter and sugar and with a hand mixer, beat until creamy. Beat in the vanilla extract and egg.
  7. In a small bowl, whisk together the flour, cocoa powder, and baking powder. Add the flour mixture into the sugar and butter mixture and beat on a low speed. Fold in the yogurt.
  8. Pour into the prepared pan and smooth the top.
  9. Whisk your Peanut Butter Mixture than drizzle the peanut butter mixture over the top of your brownie batter and swirl with a knife. Than smooth the top.
  10. Bake for about 15 - 20 minutes, or until the edges start to pull away from the sides of the pan and the center of the brownies is still slightly soft. Do not over bake.
  11. Remove from oven and place on a wire rack to cool.
The texture of the brownie mix will be like a light mousse and it may seem thin in the pan, but it does rise while baking.

I baked my brownies for 15 minutes.

If you don't have PB2, just use ¼ cup of peanut butter and omit the water from the recipe, you will probably have a little bit thicker of a peanut butter mixture. Just add the dollops into the brownie and swirl with a knife.

I bet you’re wondering what the dessert is that keeps appearing in this post.  Well after I wrote my post for today I had dessert and I had to share it with you because it tastes so good and it’s pretty!  🙂  Not to mention it’s easy, low calorie and fast!

Strawberry Brownie Parfait


2 Strawberries, chopped small

1 Chocolate Peanut Butter Brownie, broken into pieces

1/3 cup Vanilla Greek Yogurt

Time to layer the glass.  First layer 1/2 the strawberries, than half the brownie, 3 tablespoons Vanilla Greek Yogurt than I repeated the layer one more time.

Easy Peasy approx:  145 calories.

This was amazing!!  These brownies are out of this world and mixed with strawberries and Vanilla Greek Yogurt took it up another level.

These brownies will appeal to chocolate fanatics, calorie counters, weight watchers and anyone who loves a good brownie!  I bet you could even make this in a round cake pan and serve it as a cake for your dinner guests.  No one, I’m telling you, no one will ever know that these are low-calorie and when you tell them, they won’t believe you.  I still can’t believe it!  So with all that said you must make these, I am so curious to what you think!

UPDATE:  My Husband had some and he loved them.  The first words out of his mouth, while still chewing a brownie, was “Wow, these are moist”. Needless to say it’s been about 4 hours since I made them and there’s 5 left out of 16.  Jenny took some with her tonight and I only had two!  I guess Hubby liked them a lot!
