Happy St. Patrick’s Day!!! Yesterday I told you a fib. Yes I did, I’m sorry. I told you I wasn’t going to post anymore St. Patrick’s Day recipes, but I lied. See my friend Andrea (Ass!) (that’s a little joke between us) told me, I have to post a St. Patrick’s Day recipe on St. Patrick’s Day. So I am dedicated today’s blog to you. She told me to post something green, even if I have to dye my dinner green, just post something green. Well I decided to go a little better than having green chicken for dinner (blah) I thought I would post an alcoholic drink just for her. I know she would appreciate it. There’s no reason why I couldn’t make myself an special shake on a Friday night. I deserve a treat for being so good this week!
After dinner, Friday night, I went to the store and bought some Breyer’s Fat Free Ice Cream and ran home and made this yummy, delicious treat. I haven’t bought ice cream in well over 6 months. The last ice cream I bought was my beloved Trader Joe’s non-fat frozen yogurt, that is now discontinued! 🙁 I was pleasantly surprised how yummy ice cream is. It’s been so long, since I had this creamy tasty treat. I hope I didn’t create a monster out of myself? You know I’ll be posting ice cream recipes in the next coming weeks. Unless Little Jenny finds out there’s ice cream in the house. Than all bets are off.
It’s also been a very long time since I had alcohol, that my tummy got all warm from the shake. he he giggle, giggle This was so good!!! The flavors together were amazing. I used vanilla ice cream, Bailey’s Irish Cream, coconut milk, coffee and topped with whip cream and chocolate curls. It was heaven in a glass.
Bailey’s Irish Cream Shake
Ingredients:
1.5 oz Bailey’s Irish Cream
3/4 cup coffee, strong, cold
1/2 cup coconut milk, unsweetened
1/2 cup vanilla ice cream, fat free
Directions:
Place all of the ingredients into a blender and process until smooth.
Options: Top with fat free whip cream and chocolate curls
Makes 1 serving
Calories per serving: 265, Fat: 8.5, Cholesterol: 4, Sodium: 123, Potassium: 96, Carbs: 32, Fiber: 3, Sugar: 13.5, Protein: 4.5
This isn’t the healthiest thing I have posted, but it’s not horribly bad for you. Coffee has potassium, ice cream has fiber and protein, coconut milk is a healthy fat and protein and well the Bailey’s is just dam good!!!! Oh and Bailey’s has protein in it to and no sugar!
Since I’m writing this post late Friday night, I need to go and clean up the kitchen and prep it for cooking tomorrow. I hope you have a wonderful and safe St. Patrick’s Day! I won’t be doing too much since it’s suppose to rain all day tomorrow. So I’m going to stay in, get my exercise in, eat healthy and bake up a storm. I’m thinking tomorrow will be a good bread making day and I have a new recipe in mind! We shall see what tomorrow brings. If all else fails, I know I’ll be celebrating with my Bailey’s Irish Cream Shake!

I can’t have any type of Alcohol.. They make a bailey’s Irish Cream, Creamer for coffee.. I wounder if that would work.. instead of the real thing..
