Skinny Pistachio Thins

Hi Everyone,

Wow, tonight I procrastinated my blog, first time ever.  I had writers block.  You know how you have so many things rushing through your mind, that you don’t even know what to think?  That’s me right now.  So I decided to make a decafe latte and just relax.  Breath!   Being a Monday night, I’m still trying to wined down from my day.  It was a fast and busy Monday, but nothing exciting to report.

Some of you have wondered how my week-long peanut butter strike has gone, well it’s Monday and I did it, one week without peanut butter, except for the peanut butter cookies I got.  So all bets are off, you want to know how much weight I loss?  Ready for this, now remember I exercised quite a bit last week, ate healthy so the scale should be good.  Ok, here we go…  I hopped on the scale Monday morning and I lost….. 3, yup 3, no not pounds, but 3 ounces.  What the heck?  So peanut butter is not sabotaging me!  So I’m back on the bottle, or should I say jar of peanut butter.  lol  I prepared myself Sunday night by making peanut butter balls, so I was set for Monday and yes I ate a few balls!!  That didn’t sound right did it?  So peanut butter is healthy, really it is, it’s a good fat that your body needs.  I’m good with that!!  I guess the whole weight thing is in my head.  I’m just going to keep exercising, eat healthy with little splurges here and there, I’m not going to let this whole weight thing bother me any more.  I just need to make smart choices and keep up on exercising.  So with that all said, lets talk about today’s recipe.

This weekend, I made Skinny Pistachio Thins for celebrating St. Patrick’s Day week!!


I adapted this recipe from my Almond Thin Cookies.  These cookies are slightly soft with a fantastic pistachio flavor and a slight crunch from the pistachios.  These are really addicting.  Not to mention not only are they thin in size, there thin for your belly.  They come in at 43 calories a cookie.  Yup you read that right!  Also, there a normal size cookie, not a miniature.

These cookies are made with egg whites, pistachios, sugar, margarine and a little bit of whole wheat flour.  There fast and simple to make and seem to be a crowd pleaser.  I took them to work and got rave reviews on them.  But because there green, they called them the booger cookies.  I work with a weird bunch!  Booger cookie or not, that didn’t stop them from eating them!

Pistachio Thins

Ingredients:

2 egg whites

1/2 cup sugar

1/2 cup white whole wheat flour

1/2 cup very finely chopped pistachios

3 tablespoons butter, melted (I used Brumble & Brown)

1/2 teaspoon vanilla

4 drops of green food coloring (use to get desired shade)

Directions:

In a medium bowl let egg whites stand at room temperature for 30 minutes.

Preheat oven to 375 degrees F. Line large cookie sheets with foil or parchment paper. If using foil, lightly grease the foil; set aside.

In a small bowl combine pistachios, butter, and vanilla; set aside.

Beat egg whites with an electric mixer on medium speed until soft peaks form (tips curl). Gradually add sugar, beating on high speed until stiff peaks form (tips stand straight). Add food coloring and mix until combined and desired color.

Fold in about half of the flour. Gently stir in pistachio mixture.

Fold in the remaining flour until thoroughly combined.

For each cookie, drop 1 level tablespoon of the batter onto prepared cookie sheet, leaving 2 inches between mounds. Using the back of a spoon, spread each mound into a 2-inch circle. If necessary, coat the back of the spoon with nonstick cooking spray to prevent sticking.

Bake for 6 to 8 minutes or until cookies are just golden brown around edges and centers are set.

Cool cookies completely on cookie sheets; lift cookies off parchment paper or foil and place on wire racks.

Makes 26 cookies

Calorie per cookie:  43,  Fat:  1.7 (mostly healthy fat), Cholesterol:  0,  Sodium:  14,  Potassium:  29,  Carbs:  6,  Fiber:  .06,  Sugar:  4,  Protein:  1.2

Well my friends, I guess my writer’s block is gone and now I must call it a night, I have a jar of peanut butter that has been haunting calling me all week!!!  🙂

    I think my real problem with peanut butter is that I work myself up so much after eating it that I end up stress eating about a gazillion other things! If I’d just let myself have a damn spoonful, guilt-free, then it would all be fine lol!

    Well, I’m glad it’s not the PB because I can’t see you giving it up for more than a week. 😛 These pistachio thins sound delicious!

      I think pistachios are the forgotten nut. I seem to focus on cashews, almonds and pecans that I forget pistachios and to think there my favorite nut to eat raw.

Hello, hello! Long time no see. Life has been busy Hello, hello! Long time no see. Life has been busy the past month or so, and I haven’t really had much to share with you, but this week I am on vacation so hopefully I can get some content to share.

I am sharing with you one last look of my blues in my living room, as I plan on adding some yellow. I’d like to say with the warmer weather it’s time for Summer decor, but it has been unseasonably cool here. We are still in the 70’s and windy. Great for the plants, but not me. I need some 80’s. This is just wacky weather!

My patio area is kind  of an awkward space because we used to have a large pool that we took out a few years ago. We built our space around the pool. So we have lots of odd corners, but it works for us. I really like my backyard.

I went with light cool colors for my backyard space because of the heat and sun. I have always loved the coastal look. I do love to add a pop of color with flowers. Give me all the flowers! 

I hope you check out everyone’s outdoor space. I love this time of year and I can always use more outdoor inspiration.

Happy Wednesday! My friend Kelly @farmtotablecreat Happy Wednesday! My friend Kelly @farmtotablecreations made a gorgeous DIY Tabletop Firepit and I had to run out and got all the pieces to make one of my own. Kelly’s is so gorgeous and fun. Perfect for evenings outside.

However, when I started to make mine I realized that my dogs are to interested in it, as you can see from the video. I was afraid they would try to get close to the fire and burn themselves. So I came up with another idea, where I could get the same effect without the fire.

A couple weeks ago my friend Claire @huntersridge_designs shared some solar candles that I thought were pretty, and would be great to use on my table. I’m a sucker for anything solar. 😂 So of course I ordered some. I decided to use the solar candles in my pot in place of the tiki fire. I think it turned out great. I just need to add a few more rocks to it, which I’ll get this weekend.

Happy Wednesday! I have spent so much time working Happy Wednesday! I have spent so much time working outside that I have not worked on decorating my dining room for Mother’s Day or Spring. Happy Monday! I’ve had a semi-productive weekend Happy Monday! I’ve had a semi-productive weekend in between the rain and cold. It was pretty chilly to me. I did get some plants planted and my husband added a new drip line in my big garden. Hopefully my flowers will thrive better this year.

On Friday, I watched 3 episodes of Firefly Lane on Netflix. If you like girl type series, I highly recommend. It’s so well written. It’s about best friends growing older together. Unfortunately this is the last of the series. I’ll miss it. I also read that Yellowstone will come back in November and that will be the end of the series. I’ll miss that show. At least I have Virgin River to look forward too. My husband likes Virgin River too.

Anyway, here is a view of my clean kitchen. I put together this little vignette for Mother’s Day inspiration. I love the Italian Soda from Trader Joe’s, but boy does it give me bad heartburn. I always just drink a little. Actually, anything sparkling, except regular soda, gives me heartburn. So strange.

Happy Saturday! Wow I haven’t shared on a Saturd Happy Saturday! Wow I haven’t shared on a Saturday in forever. Today we are getting rain again. Last week it was 90 and sunny and now back to the 60’s, but we are going to hit 90 by next weekend. I can’t wait. I’m over this wacky weather we are having.

I took down my Easter decor a few weeks ago and went back to using blues and greens in the living room. I think the colors look fresh and clean. Once the weather gets nicer, I’ll start to add in some yellows. I love yellow for the summer.

Happy Monday! This weekend I was finally able to g Happy Monday! This weekend I was finally able to get outside and work on my patio space, but unfortunately I don’t think I’ll be able to enjoy it this week. We are back to winter temps, high winds and rain. They are calling it “May Gray”. Such weird weather this year.

I was able to put out my new rug that you all helped me to pick out. I just love the blue. I decided to go with blues and yellows for my outdoor space. I think the yellow brightens up the space. I just need to get more flowers because after all you can never have too many flowers.

I wanted to also share with you my new side table from @vicllax_outdoor. I love the white color. It really helps to brighten this space. The table is made of metal, comes in 4 colors and is easy to put together. This table is perfect for a small space too. I couldn’t be happier.

Happy Tuesday! This weekend we had amazing weather Happy Tuesday! This weekend we had amazing weather. Sunny, light breeze and in the 70’s. I did a lot of yard clean-up. I just need some dirt and my raised beds will be ready for planting.

I planned on working on the patio area, but time just went to fast. My husband repaired the trellis that fell over from the wind. We had the Morning Glory on it, but we got rid of it because it is highly toxic to dogs. I ordered a climbing rose from Heirloom Roses that will be delivered next week.

I’m sharing with you the Beverage Tub that I bought from Target that I am using as a planter. My husband drilled 1/4” holes 4” apart on the metal insert.  I added a pot to the tub to give the flowers a lift. The handles on the tub are not bendable and I didn’t want to break the flowers and I wanted it to be easier to lift the flowers out, if I decide to change the flowers.

I love the look! Once I work on the patio area, I’ll move the table and flowers to the patio area. So excited to be working outside. Have a beautiful day!

Happy Wednesday! I am sharing with you my garden f Happy Wednesday! I am sharing with you my garden from last year. I’m gearing myself up to start working in the garden this weekend. It’s supposed to be mid 70’s. So if all goes planned you will be seeing quite a few gardening posts.

Last years extreme summer heat took a major toll on my garden. I lost quite a few plants. 😫 For some reason I lost my Butterfly Bush. I plan on adding another one in the same spot. A lot of my lower flowers like Hummingbird Mint and my Coneflowers didn’t survive. We will be looking at the sprinkler system to make sure the plants are getting enough water.

At least this garden is mainly annuals, so it should fill up with some color soon. I’m unsure what to do with my other gardens as my dogs have destroyed them. They keep on digging in the dirt. Maybe I should get them a sandbox to play in?
