Strawberry Yogurt Ice Cream

Hi Everyone,

Happy Sunday!  Today’s post is a delicious one.  Something my friend Connie told me I should do, I took her idea and ran with it!  he he It’s so good!  But first, you know what I did on Saturday?  I went to Trader Joe’s!!  It’s been almost two weeks since I shopped and that’s not a good thing.  I was running out of everything!  I’m trying to do better on my food budget, since I spend so much, but because I was out of stuff, I spent almost $150.00, eck!!!  Oh well, it’ all good stuff and stuff that will get me through the week!

Whenever I hit up Trader Joe’s I always try to get at least a few new items, so there are a few hidden in there.  Can you guess what ones?  You catch them on my Trader Joe’s page!   I bet from the picture you can tell some of the recipes I’ll be sharing this week.  I bet you can tell I have been craving fruit.  I don’t know what wrong with me, I just want fruit!  Lots of sweet fruit!

Now for my creamy delicious strawberry yogurt ice cream.


One thing you must know about me, when it comes to food I have no patience!  You should let this ice cream sit out for about 20 – 30 minutes for it to get real creamy and soft, but I couldn’t wait for that, I had to try it.  So if you make this, wait if you can!!

The reason I created this, was I wanted ice cream, I wanted mousse and I didn’t want to go to the store.  So I took 1 strawberry container of Chobani Strawberry Greek Yogurt and 1 container of Chobani Vanilla Greek Yogurt, mixed it with one tub of fat-free Cool Whip and threw in some diced strawberries, popped it in the freezer and a few hours later I have this!

This ice cream will be perfect for when the summer months come!  It tastes just like strawberry ice cream.  I am so happy with this, that I can’t wait to make another one in a different flavor.  However I don’t know if I can top strawberry.  As you may be able to tell, it’s one of my favorite, if not my favorite fruit!!

You know what else I love about this recipe?  No ice cream maker needed!  I do plan on buying one, I just haven’t had the chance.  I saw a nice one by Cusinart at Bed Bath and Beyond, I’m just waiting for my 20% off coupon that I’ll get in the mail.  Imagine all of my crazy concoctions that I get to eat and share with you!!  Do you see peanut butter ice cream?  Dam it, now I guess that is the next one I’ll make, but this style!  I can’t wait for an ice cream maker to have peanut butter ice cream!!!

Strawberry Yogurt Ice Cream

Ingredients:

  • 1 6oz container Vanilla Greek Yogurt
  • 1 6oz container Strawberry Greek Yogurt
  • 1 8oz container Cool Whip, fat free
  • 2 drops of red food coloring
  • 1/2 cup strawberries, diced

Directions:

  • Line a bread pan with freezer paper. Over lapping the sides.
  • In a bowl add yogurt and cool whip and carefully mix until combined. Add food coloring and lightly fold mixture until pink in color.
  • Carefully fold in strawberries
  • Spoon mixture into bread pan and smooth out the top.
  • Place in the freezer for about 4 hours or over night.
  • Carefully lift the paper, let it rest for about 20 minutes or until soft and slice and serve.
  • Place any left overs back in the freezer and cover with plastic wrap.

Serving Size: 6 slices

Calories per serving:  110,  Fat:  .01,  Cholesterol:  0,  Sodium:  45,  Potassium:  21,  Carbs:  19,  Fiber:  .03,  Sugar:  10,  Protein:  5.1

Wasn’t that easy?  Love easy!  Love fast and I love tasty!!  I love my new found love for flavored yogurt!  Certainly beats just eating plain!

I also got my PB2 in the mail and it’s weird.  I am not sure what to do with it.  I haven’t tried it because, well I’m kind of scared to, but I will.  I’m thinking of some recipes that I want to make with it.  Have you ever used PB2?  Will I like it?  After making my own Peanut Butter, not sure if anything will top or match it.  But if I don’t try I’ll never know and it’s only 45 calories for 2 tablespoons, which is pretty nice.

I’m also pleased to announce that this week I finally went over my calorie burned for exercising this week.  I cheated and went on the scale to see if I lost anything, notta!  I have till Monday to lose a pound, if I don’t, than real peanut butter here I come.  This was a very hard strike for me!!!  Thank goodness I got those cookies from Spiffy Cookie on Friday.  It helped with the cravings.  I guess that could be considered a cheat?

My exercises for last week:

Sunday:  40 minutes full body circuit training, 1 mile walk and gardening (I pulled weeds for over an hour.)

Monday:  Just walked 1.23 miles

Tuesday:  walked 1.23 miles, 40 minute upper body circuit training

Wednesday:  walked 1.23 miles, 40 minute Ab Circuit Training

Thursday:  rest

Friday:  walked 1.23 miles, 30 minutes jump roping

Saturday:  30 minute jumping jack circuit training

Wow, I did more than I realized!  My goal was to burn 1700 and I burned 2031!  Woohoo!

    I have used the PB2 for a long time. I like it – but my best suggestion is don’t go into expecting peanut butter. The texture is different, but I think it’s a good substitute for people who don’t want the extra stats. You also can control the thickness by the amount of water you add to it when mixing. Use a good water though. If you like your tap great, but I think it an affect the taste.

    Like I said, it’s not peanut butter, so don’t expect it and I think you will be pleased.

        Oh, I hated that stuff too! I tossed it as quickly as I tasted it!

    Oh man, 30 minutes jumping rope? I used to love that as a kid but now I get tired after 5 minutes! I’m sort of a wimp though. I can’t wait to try this recipe! A friend and I have a date night every Monday and she makes dinner and I bring dessert and this is next on the list! Can’t find 110 calorie ice cream anywhere else

    Hi Jennifer – glad you got the PB2! My new fav is adding a spoonful of PB2 to fat free greek yogurt plus I like a packet of splenda in that. Oh my goodness, yummy! You could be making peanut butter ice-cream dessert too!

    I’ve had my PB2 for a while and I use it when I want a PBJ sandwich now. I’m still not sure how to use it to bake; I hope you’ll post recipes if you do.
    I think it’s a decent substitute but not exactly like regular PB. When I mix it with jelly, though, it doesn’t taste different enough to bug me. Plus, I enjoy the “healthier” side of it and that it’s not full of ingredients I don’t know.

      Great idea mixing it with Jelly! I’ll try it in a recipe and see how it goes. I bet it would be fine if there are add ins. I haven’t tried it yet! The jar is staring at me.

      Lol, I was pretty stoked when I made it! Just be sure to let it sit on your counter for about 20 to 30 minutes so it softens up a little. You won’t be disappointed, it’s so good! Just had some a few minutes ago!!

    You got SO much from TJ’s! Spending $150 is not bad at all, considering it’s been 2 weeks since you last went shopping. I go at least once a week and I spend a minimum of $80! It’s bad but in the end, you’re saving TONS of money by eating in.

    Anyway, let’s talk about this ice cream. I love that you don’t need an ice cream maker for this! I do want to invest in an ice cream maker attachment for the kitchenaid but in the meantime, I will make your version of ice cream 🙂

      I agree with on TJ’s, I do normally eat it all!! How can I not? I am planning on getting an ice cream maker, just haven’t yet. This ice cream is really good. If you make it, just be sure to leave it on the counter for about 20 – 30 minutes so it softens, other wise it’s hard.

      So glad you got your package! Learned my lesson with getting tracking numbers! I have that PB2 sitting here, and I am yet to open it. I know it won’t compare, but I am betting it would be good in baking. I’ll do a post and let you Guys know what I think.

I did have a very hard time taking my sink tray off the counter. I’ve had the tray there for years, so I thought I would change it up. Don’t be surprised if the sink tray makes its way back. 😂 I may add some herbs to my window sill for some fresh green color.

I used @cloth.bristle to clean my kitchen counters and sink. I love cleaning my sink with it. It makes it so sparkly and smells good too! Love that it’s all natural.

Happy Friday! Our next winter storm is here! It is Happy Friday! Our next winter storm is here! It is just awful out there. Heavy rain, high winds and hail. This is not a winter that we are used to in California.

My husband and I are not fancy when it comes to eating dinner. Since it’s just the two of us, we never use the dining room table, but always eat at the kitchen counter.

There is no reason why we can’t eat fancy at the kitchen counter. I am using my new placemats that I got from @vmathome. They are thick, water, stain resistant and can handle heat up to 350F degrees. I love the color and style of the placemats. They have a wide variety of styles and colors, along with matching table runners.

I styled my table with bright spring colors that I was inspired by carrots. I still have bunnies on the brain. lol I had fun with this place setting, it’s so nice to have dinner with a little style then having it on a plain plate and paper napkins.
