Cinnamon Apple Pancakes

February 20, 2012 By Jennifer @ PB and P Design 25 Comments

EDIT:  I changed my recipe, it seems I forgot to add the cinnamon and milk in my directions, but all fixed now.  6:09am.  Sorry – Jen

Hi Everyone,

I am continuing celebrating Pancake week with my Cinnamon Apple Pancakes.  I don’t know if there is any better way to start off a morning then with a stack of yummy pancakes.  As you can see from yesterdays post I kind got a thing for pancakes.  Whats even better, is their guilt free. I love that!!

I meant to share with you yesterday that iHop is celebrating National Pancake Day on February 28th by giving away a small stack of buttermilk pancakes.  In return, guests are asked to consider leaving a donation for Children’s Miracle Network Hospitals© and other designated local charities.  It’s for a good cause.  No I won’t be going, personally I am not an iHop fan, but I thought I would share that with you for those who are.  You can get more information here.

Now for today’s Pancakes, I made Apple Cinnamon Pancakes.  There are so good, a Hubby favorite.  They are chock loaded and I mean loaded with fresh apples.  When you look at the picture above you wouldn’t know, but then you cut into them and this is what you see.

I made these the same as my regular pancakes, but I realized from yesterdays pancakes that I thought it was the wheat flour in comparisons to the whole wheat pastry flour, is what made my batter thicker, it wasn’t, it was the Chobani yogurt.  Today I used Trader Joe’s plain Greek Yogurt and I had more of a pancake batter, it wasn’t so thick.  I noticed that Trader Joe’s Greek yogurt isn’t quite as thick as Chobani yogurt, so that’s why the constancy is a little different.  The best advise I can give, is if your batter seems to thick, add a little bit of milk to it.  That will thin it out and your pancakes will be perfect!!

With the left over apples, I decided to put them in a bowl, add a pinch of cinnamon and a teaspoon of brown sugar and a splash of water, cover and microwave for 1 minute.  I used that as a little extra bonus topping.  It was good, tastes like apple pie.  I do that for dessert to, top with a little bit of frozen yogurt, yum!  I really love apples.  That reminds me I need to get more.

I am so loving pancake week.  Did you know you can freeze pancakes?  I froze some of the Blueberry Lemon Pancakes, that way I can take them to work next week and have a good hearty breakfast.  Funny, I don’t think there is anything I don’t freeze?  I have been begging my Husband for a freezer, but it’s been no, hopefully someday.

Apple Cinnamon Pancakes

Ingredients:

1/3 Cup Plain Greek Yogurt (I used Trader Joe’s)

2 egg Whites

1/2 tsp. Vanilla Extract

1/2 cup. White Whole Wheat Flour

1/2 tsp. Baking Soda

1/2 tsp. Sugar

1 dash salt

1 tsp. ground cinnamon

1/4 cup non-fat milk

1/2 cup apples, peeled and diced

Notes: The thickness of your greek yogurt may make the batter thick, just add a pinch of milk at a time to make more of a pancake batter.

Directions:

Mix greek yogurt, egg whites & vanilla extract into a small bowl

In a separate bowl combine flour, baking soda, sugar, cinnamon & salt.  Combine and whisk till evenly mixed.  Add milk and fold in 1/2 cup apples

Spray a nonstick skillet with cooking spray and place 1/4-cup batter onto skillet and cook till bubbles start appearing through the top of the pancake and then flip. NOTE: Cook on medium heat and I flattened out my batter with the spatula to cook more evenly. I spray cooking spray between each batch of pancakes.

About 1-2 minutes on each side

Note: Optional topping: If you have leftover apples, place them in a microwave safe bowl, add a dash of cinnamon and 1 tsp of brown sugar and a splash of water. Cover and microwave for 1 minute, place on top of pancakes.

Makes 8 pancakes – serves 2

Pancakes need Maple Syrup

Oh yah, more please!

Is that all, give me more baby!!

Perfect!!

I hope you have liked my latest addition of celebrating Pancake week!  Now I can’t make more pancakes this week, however I have a sneaky trick up my sleeve, ha ha, but shhhhh, family can’t know.  I know a secret way of getting them to eat pancakes at night, but I’ll share more of that with you later this week, just hope my creation in my head works.  If not I’ll show ya the flop!!  Hey, I’m only human and I’m still learning!

Have a great week, and now get out there and make pancakes!!!

Happy Monday! I’m sharing with you a rare view o Happy Monday! I’m sharing with you a rare view of my kitchen. What’s so rare about it! It’s clean. 🤣
.
So this weekend our refrigerator broke. The freezer no longer works and the fridge is not getting cool enough. Ugh!! We bought our Whirlpool refrigerator about 4 years ago and spent near $3000 for it. It sure didn’t last long.
.
After reading reviews on a million refrigerators, they all seem like crap. I need your help! Do you have a refrigerator that you recommend?
.
I saw a Frigidaire one that we are debating on, but not sure? The reviews are good, but says, they were collected from a promotion. So I’m not sure how much I trust that? Anyway, any recommendations that you have would be great!
.
Have a great day!

Hi Everyone! I hope you had a great weekend. I mus Hi Everyone! I hope you had a great weekend. I must say I was disappointed in the Super Bowl. I really wanted the 49ers to win. Anyway, this weekend I refreshed my guest bathroom.
🐰
I have to say my new favorite item is the towel holder. It’s so cute and practical. I don’t have a hand towel rack and I hated leaving my towels on my counter. I saw the towel holder from Target and had to get it. It’s the Hearth and Hand brand.
🐰
I added some bunnies for Spring and a touch of pink for some color. The hand towels are from Homegoods. They have so many bunnies and Easter decor. I had to control myself because I was with my husband. I may go back.
🐰
Have a great day!!

Happy Monday!! I have to confess to you. I still h Happy Monday!! I have to confess to you. I still have Christmas in my kitchen.😳 I don’t know where to put it, so I haven’t taken it down. It’s not a lot, but just enough to where I can’t fit it. Ugh! Please tell me I’m not the only one.
💕
I did do one little spot for Valentines, which I think is so cute. I love decorating with Valentines candy. I can’t resist the pinks and the conversation hearts. I do not plan on going all out decorating this season, as time is going so fast, but I may add some hearts here and there.

Hi Everyone! With spring around the corner, now is Hi Everyone! With spring around the corner, now is the time to get your chores done, so when the warmer weather arrives you can enjoy it. My goal is to refresh my bedroom. I am slowly getting rid of stuff that I no longer need and slowly adding new decor. So hopefully in a few weeks it will be done. #twopageshome
♥️
The first thing I added are these stunning customized curtains that I was gifted from @twopagescurtains. Guys, I’m in love! The curtains are just so pretty! I am loving the way it shades the sun, but still lets the light in. Exactly the look I was going for.
♥️
The curtains I chose are the “Liz Linen Drape Soft”. They are a linen curtain that is environmentally friendly, hypoallergenic, long lasting, dust preventative, and breathable. They are also wrinkle free. I didn’t have to steam them. They came right out of the package ready to hang. They also come in 38 colors and 7 shadings to choose from. There is an option for everyone.
♥️
I’ll be honest I was intimidated on ordering custom curtains. I was so afraid I would order them wrong, but I didn’t. Two Pages has a measurement finder that asks you a few easy questions and boom you have your custom curtain size. It was so simple.
♥️
If you are looking for some new curtains or shades for your home, I highly recommend Two Page Curtains. I absolutely love them. They were kind enough to give my followers an 8% discount code: PBANDP. Link in bio
♥️
Are you planning on refreshing any spaces?

Happy Friday! Hope you had a wonderful holiday sea Happy Friday! Hope you had a wonderful holiday season. I am slowly working on taking my Christmas decor down. I still have my tree up, but I love the twinkling lights, and the real reason is I need my husband to get the box out of the garage. lol
💙
I am going with blues in the living room. I just find blue calming and peaceful. The first area I styled is the coffee table. Sorry about the views. I have a small, thin living room.
💙
I decided to go light on the decor and add some fresh faux greenery. I hate leaving the remote controls out, so I decided to store them in a decorative box. Everything here, but the white box was bought at Target.
💙
Have a wonderful weekend!

I want to say sorry for lack of posting. It’s just so time consuming engaging. I hate spending countless hours on my phone. It has made me physically lazy and it hurts my eyes.
