Healthy Raisin Bread

It’s Friday, it’s Friday!  Doing the happy dance, woohoo it’s Friday, it’s Friday, la la la la la

Oh hello everyone!  Don’t mind me, I am just so happy the weekend is here.  It’s been a busy week at work, and I am just so glad it’s over.  I am exhausted!!  Any big plans for the weekend?  Not me, all I know is I get the house to myself on Saturday!  Woohoo!!  I love that!  Now I can dance around in my underwear and do what I want.  Ok, I won’t dance in my underwear, I’ll probably blog, bake, do a Trader Joe’s run and just maybe I’ll do some exercises!  Exciting huh?

Well today’s recipe is a new one for me, and I couldn’t be more pleased, I was a little concerned at first, but to my surprise it turned out bakery quality.  First let me tell you last week Little Jenny and went to a local bakery and I always order the fruit salad with grilled chicken and on the side they gave me a slice of raisin bread.  I LOVE raisin bread, but they only gave me one slice.  Normally I get two or three, but one!  That does not satisfy my raisin bread craving, if anything it made me want it more!!  They teased me with one slice, and because I am not a give me type of person I didn’t ask for more bread, I should have, but I didn’t.  So with that, I made my own!

Jessica from How Sweet it Is told me to get a dough hook for my mixer to make bread, it will change my world.  Boy was she right!  Now I can’t stop!!  This bread feels heavy but when I sliced it and ate that first piece, pure raisin bread heaven.  it was light on the inside. I thought for sure it was going to be dense but I was so wrong, so wrong!  This bread actually tasted like the bread I crave from the bakery.  This satisfied my cravings for sure!!


This recipe makes two nice size loaves, I took one to work with me and I froze the other.  I was a little sad when I took it to work.  I brought it in so I could have toast for breakfast and when I left work, there was quarter of the loaf left and when I came in the next day, it was gone.  So sad!  I like to share, but I can get a little selfish when bread is involved.  he he  Oh and this bread toasted is phenomenal!  Amazing!  It got crispy on the outside but when you bit into it, it was soft.  Perfect!!

What I like about this bread is that it is a sweet, but not to sweet, it’s a basic raisin bread not a cinnamon roll type of bread.  It makes for good sandwich, you know with banana and cream cheese or peanut butter and apples.  Want to hear something outrageous?  My family thinks raisins in bread is weird!  What?  Are they crazy?  Who ever heard of such nonsense?  I guess that means I get to eat the whole other loaf.  Don’t think I can’t do it, because I will!  Come on double dog dare me!  🙂

When I was a kid my Mom would buy raisin bread as a special treat, so whenever I have it, I think of my childhood.  Mom would toast it, put butter on it and it would melt into every nook and cranny of the bread.  Yum!!  thanks Mom, for the wonderful memories.

Raisin Bread

Ingredients:

1 package active dry yeast

1/4 cup warm water

1/2 cup scalded non-fat milk (I microwaved for 1 minute, directions below)

1/4 cup soft butter (I used brumble & brown)

1/4 cup granulated sugar

1 1/2 teaspoons salt

1 cup raisins

1 3/4 cups all-purpose flour

1 1/2 white whole wheat flour

1 tbsp. ground cinnamon

2 eggs, beaten (I used egg substitute)

cooking spray

Directions by hand:

In a large bowl, dissolve yeast in warm water.

Meanwhile in a microwave safe measuring cup, add your milk. Heat for about one minute until hot. In the measuring cup, add butter, sugar, salt and stir until sugar is dissolved. Add the raisins.

Add milk mixture to yeast mixture with 3/4 cups of whole wheat flour, 3/4 cups all purpose flour and cinnamon. Mix with a spoon until combined.

Add the beaten eggs; mix to blend well.

Add enough of the remaining flour to make a soft but stiff dough.

Turn out onto a lightly floured surface and knead for about 10 minutes, until dough is smooth and elastic.

Spray large bowl with cooking spray. Place dough in the bowl, turning once to grease the surface. Cover with a clean dish cloth; let stand in a warm place until doubled in bulk, about 1 1/2 hours.

Punch dough down and divide into 2 portions. Cover and let rest for 10 minutes.

Shape into 2 loaves; place in 2 greased 8x4x3-inch loaf pans. Cover and let rise again for about 45 to 60 minutes, until almost double.

Bake at 375° for 25 minutes, placing foil over loaves the last 10 minutes, if loaves are getting too brown.

Remove loaves from pans and let cool on racks.

Stand Mixer Directions:

Place yeast and warm water in bowl of your stand mixer. Let it rest until foamy about 10 minutes.

Meanwhile in a microwave safe measuring cup, add your milk. Heat for about one minute until hot. In the measuring cup, add butter, sugar, salt and stir until dissolved. Add raisins.

Add milk mixture to yeast mixture with 3/4 cups of whole wheat flour, 3/4 cups all purpose flour and cinnamon. Mix with a spoon until combined.

Place the dough hook on mixer, add eggs and beat until combined.

Add remaining flour and beat until smooth and elastic about 6 to 8 minutes.

Take dough out of bowl, and spray bowl with cooking spray, place dough back in bowl, and turn once until greased.

Place a kitchen towel or plastic wrap over the bowl and set aside until double in size. About 1 1/2 hours.

Punch dough down and divide into 2 equal portions, let it rest for 10 minutes.

Shape into 2 loaves; place in 2 greased 8x4x3-inch loaf pans. Cover and let rise again for about 45 to 60 minutes, until almost double.

The last 15 minutes of rising, preheat oven to 375.

Bake for 25 minutes, placing foil over loaves the last 10 minutes, if loaves are getting too brown.

Remove loaves from pans and let cool on racks.

Makes two big loaves

24 slices total (actually more if you cut a normal size slice)

Calories per slice:  99,  Fat:  1.1,  Cholesterol:  .01,  Sodium:  172,  Potassium:  87,  Carbs:  20,  Fiber:  1.5,  Sugar:  5.9,  Protein:  3

I am betting you could get about 15 – 20 slices per loaf, but like I said, I cut big!   You can never have too much bread, well maybe you can.  Love the calories on this one!!!

I hope my directions were clear enough.  Sometimes it’s hard to write a recipe down.  Now, please, don’t let bread intimidate you.  You must really, at least once try making homemade bread.  It makes you feel good, when you take flour and yeast and turn it into something wonderful.  Bread is easy, as long as you can wait out the rise times.  I do this normally on Sunday’s when I know I’ll be home doing house work and baking other goodies.  The whole bread process is pretty basic.  So please make bread!  It’s cheaper than buying it and tastes way better.  Just think of the aroma in your home of freshly baked bread.  Then the anticipation of waiting for it to be done, so you can have a slice.  It’s all in the fun!!

    I totally had an EWWW raisins mentality when I was a kid so I didn’t appreciate all the raisin bread my mom used to buy. But now it’s a favorite. Definitely need to try this recipe!

    YUM!!! I adore raisin bread and really really like it (dont think this is too weird) with gucamole and turkey – something about the sweet and savoury combination is just awesome.

    Where abouts in Northern Cali do you live!?!

      That is an odd combination, but I bet it would taste good. For me I wouldn’t mind turkey with cream cheese on the raisn bread. Now I want to make a sandwich and I’m stuck at work! 🙁 I live East of San Francsico. Are you in the Bay Area?

    She’s right…a dough hook WILL Change your life! I make a whole wheat bread for the family as our daily bread….I can’t imagine buying bread on a regular basis any more!

    This bread looks terrific and I’d LOVE some chicken salad on it! Enjoy the weekend – especially your quiet Saturday!

    I’m new to making bread so just some quick questions:
    Would this work with regular 100% stone ground whole wheat flour?

    Also, would there be a difference in measurements (i.e. liquids etc…) if I was to use completely whole wheat flour instead of your mix of whole wheat and regular all purpose flour?

      Hi, It would work using 100% stone ground whole wheat flour. I am not sure about measurements, I would think they would remain the same. If you decided to use all whole wheat flour, take in mind that your bread may become heavy. If you don’t want to use all purpose flour, you can use bread flour or if you want to use whole wheat flour, I would sift it to make it lighter.

My patio area is kind  of an awkward space because we used to have a large pool that we took out a few years ago. We built our space around the pool. So we have lots of odd corners, but it works for us. I really like my backyard.

I went with light cool colors for my backyard space because of the heat and sun. I have always loved the coastal look. I do love to add a pop of color with flowers. Give me all the flowers! 

I hope you check out everyone’s outdoor space. I love this time of year and I can always use more outdoor inspiration.

Happy Wednesday! My friend Kelly @farmtotablecreat Happy Wednesday! My friend Kelly @farmtotablecreations made a gorgeous DIY Tabletop Firepit and I had to run out and got all the pieces to make one of my own. Kelly’s is so gorgeous and fun. Perfect for evenings outside.

However, when I started to make mine I realized that my dogs are to interested in it, as you can see from the video. I was afraid they would try to get close to the fire and burn themselves. So I came up with another idea, where I could get the same effect without the fire.

A couple weeks ago my friend Claire @huntersridge_designs shared some solar candles that I thought were pretty, and would be great to use on my table. I’m a sucker for anything solar. 😂 So of course I ordered some. I decided to use the solar candles in my pot in place of the tiki fire. I think it turned out great. I just need to add a few more rocks to it, which I’ll get this weekend.

Happy Wednesday! I have spent so much time working Happy Wednesday! I have spent so much time working outside that I have not worked on decorating my dining room for Mother’s Day or Spring. Happy Monday! I’ve had a semi-productive weekend Happy Monday! I’ve had a semi-productive weekend in between the rain and cold. It was pretty chilly to me. I did get some plants planted and my husband added a new drip line in my big garden. Hopefully my flowers will thrive better this year.

On Friday, I watched 3 episodes of Firefly Lane on Netflix. If you like girl type series, I highly recommend. It’s so well written. It’s about best friends growing older together. Unfortunately this is the last of the series. I’ll miss it. I also read that Yellowstone will come back in November and that will be the end of the series. I’ll miss that show. At least I have Virgin River to look forward too. My husband likes Virgin River too.

Anyway, here is a view of my clean kitchen. I put together this little vignette for Mother’s Day inspiration. I love the Italian Soda from Trader Joe’s, but boy does it give me bad heartburn. I always just drink a little. Actually, anything sparkling, except regular soda, gives me heartburn. So strange.

Happy Saturday! Wow I haven’t shared on a Saturd Happy Saturday! Wow I haven’t shared on a Saturday in forever. Today we are getting rain again. Last week it was 90 and sunny and now back to the 60’s, but we are going to hit 90 by next weekend. I can’t wait. I’m over this wacky weather we are having.

I took down my Easter decor a few weeks ago and went back to using blues and greens in the living room. I think the colors look fresh and clean. Once the weather gets nicer, I’ll start to add in some yellows. I love yellow for the summer.

Happy Monday! This weekend I was finally able to g Happy Monday! This weekend I was finally able to get outside and work on my patio space, but unfortunately I don’t think I’ll be able to enjoy it this week. We are back to winter temps, high winds and rain. They are calling it “May Gray”. Such weird weather this year.

I was able to put out my new rug that you all helped me to pick out. I just love the blue. I decided to go with blues and yellows for my outdoor space. I think the yellow brightens up the space. I just need to get more flowers because after all you can never have too many flowers.

I wanted to also share with you my new side table from @vicllax_outdoor. I love the white color. It really helps to brighten this space. The table is made of metal, comes in 4 colors and is easy to put together. This table is perfect for a small space too. I couldn’t be happier.

Happy Tuesday! This weekend we had amazing weather Happy Tuesday! This weekend we had amazing weather. Sunny, light breeze and in the 70’s. I did a lot of yard clean-up. I just need some dirt and my raised beds will be ready for planting.

I planned on working on the patio area, but time just went to fast. My husband repaired the trellis that fell over from the wind. We had the Morning Glory on it, but we got rid of it because it is highly toxic to dogs. I ordered a climbing rose from Heirloom Roses that will be delivered next week.

I’m sharing with you the Beverage Tub that I bought from Target that I am using as a planter. My husband drilled 1/4” holes 4” apart on the metal insert.  I added a pot to the tub to give the flowers a lift. The handles on the tub are not bendable and I didn’t want to break the flowers and I wanted it to be easier to lift the flowers out, if I decide to change the flowers.

I love the look! Once I work on the patio area, I’ll move the table and flowers to the patio area. So excited to be working outside. Have a beautiful day!

Happy Wednesday! I am sharing with you my garden f Happy Wednesday! I am sharing with you my garden from last year. I’m gearing myself up to start working in the garden this weekend. It’s supposed to be mid 70’s. So if all goes planned you will be seeing quite a few gardening posts.

Last years extreme summer heat took a major toll on my garden. I lost quite a few plants. 😫 For some reason I lost my Butterfly Bush. I plan on adding another one in the same spot. A lot of my lower flowers like Hummingbird Mint and my Coneflowers didn’t survive. We will be looking at the sprinkler system to make sure the plants are getting enough water.

At least this garden is mainly annuals, so it should fill up with some color soon. I’m unsure what to do with my other gardens as my dogs have destroyed them. They keep on digging in the dirt. Maybe I should get them a sandbox to play in?
