Pineapple Coconut Bread

Hi Everyone,

I made a boo boo!  I thought tomorrow was a blog hop I am in and I was re-reading my e-mails and found out it’s not till Saturday.  Glad I caught that because my post was ready to go out tomorrow.  I would have been so embarrassed if I was the only one who posted.  I’m sure it wouldn’t have been that big of a deal, but still, I like to follow the rules!

So now what do I do?  I thought uh, oh lucky for me I have back up recipes to share with you. Sorry, this post is going to be a quicky, since it’s time for bed, but I just couldn’t go one day without sharing a recipe with you!

Last weekend when it was 70 degrees out, I was in my kitchen cooking up a storm, I had no idea it was so warm out, I found out a little to late, oh well, instead I created this wonderful, moist, delicious, pineapple coconut bread.  You know me and my bread, I wanted to come up with something different that I have never made before and I am so pleased with this recipe.  It is so moist and yummy and a little addicting!!  Muah!!


I tried to make pineapple coconut pancakes, and well it didn’t turn out at all.  It was a sticky mess.  Gross!  But I had left over ingredients and then this bread was created.  I’m disappointed when I make a flop, but tickled pink when something better comes out of it.  If it wasn’t for the flop, I would never of created this bread.  I’m still going to try the pancake recipe, but I’ll just have to change it up a bit.  I ended up eating eggs, I just wasn’t in the mood to deal with pancakes anymore.  I was too hungry to wait!!!

I used lite coconut milk, crushed pineapple and reduced fat coconut to make this bread healthy.  This bread reminds me of summer and with the winter here, it’s always nice to get a small touch of summer, I know we can all use it!!

This recipe makes for one loaf or two mini loaves  You know me, I made two mini loaves.  One for Hubby to take to work and one for me to take to my work.  If you make mini loaves you can freeze them also, just take out of the freezer and let it defrost at room temperature.  It takes about two hours to defrost.

Pineapple Coconut Bread

Ingredients:

1 cup all purpose flour

1 cup whole wheat pastry flour

1 tsp baking powder

1 tsp baking soda

1/2 tsp salt

1/4 cup earth balance or butter

1/2 cup sugar

1 egg or Egg replacer for one egg

1 tsp vanilla extract

1/4 cup coconut milk

1/2 cup pineapple tidbits, canned, don’t drain

1/2 cup reduced fat coconut flakes

Directions:

Pre-heat oven to 350 degrees and lightly grease a bread loaf pan or two mini loaf pans.

In a large bowl, combine the flours, baking powder, baking soda and salt. set aside.

In a separate bowl, whisk together the butter, sugar, egg and vanilla extract.  Add the coconut milk and mix well.

Add the butter mixture to the flour mixture and stir well to combine. Add pineapple, including some of the juice.  Stir until incorporated.

Gently fold in the coconut

Pour into bread pans, then bake in pre-heated oven for about 50-60 minutes for one loaf pan or 25 minutes for mini loaves.

Serving Size: 12 slices

Calories per slice:  128,  Fat:  4.6,  Cholesterol:  0,  Salt:  279, Potassium:  33,  Carbs:  18.9,  Fiber:  2.1,  Sugar:  2.2,  Protein:  2.3

If you’re a pineapple coconut fan you must try this bread!!  You will LOVE it!!!  I bet adding a little lime zest to it would be good to.  Don’t you hate when you make something, then afterwards you think, darn I should have added that.  I guess that’s why there is always a next time!  Now that I type this, I’m betting rum extract would be really good too!!  Then it will be a Pina Colada Bread!  Man, why didn’t I do that?  I guess this recipe is going to be re-made soon!  I want to see what it will be like with rum!  Oh, try it and let me know!!!

Ok, I ended up writing longer then I planned and now it’s past my bed time, glad tomorrow is Friday!  I hope your day goes fast and the weekend goes slow.  Mondays just come around to quick, but then again, I’m off on Monday!  Woohoo!!  Yes I’m rubbing it in for those that have to work on Monday!  Na Na!!!  🙂  Have a great day!!!

    Oh me oh my! I love anything even remotely associated with pina colada (rum or no rum) and this looks HEAVENLY…and I can make it vegan. [Or not ;)]

Happy Tuesday! One thing you guys know about me is Happy Tuesday! One thing you guys know about me is that I love Target. It’s my happy place. I get so excited each season to see all the new things that come out.

One thing I always love is there faux vase/pot flowers and plants. They are always so pretty and I want to buy them all. But there a couple of things that stops me. The biggest one is that I have no storage for them. Two, they seemed to have gone up in price. They seemed a little pricy to me.

For my arrangement, I used one of my canisters for the bathroom. I used floral foam to stick the stems in and I used the paper towel as a filler because I only had very little bit of moss. If I had more moss and I would probably not use the paper towel. This arrangement cost me $5.99.

Tip: If you look at Targets faux foliage stems only, they have a lot that are same of what use in there vases. The one I used was Hearth and Hand and was only $5.99 for a stem. The exact ones they used in there pots.

I’m sharing heart shaped cinnamon rolls that I made this weekend. I got the idea to make them from my friend Heidi @eleanorrosehome. She made the most delicious looking cinnamon rolls, that I couldn’t resist to make. So perfect for Valentines Day and sooooo easy!

I took a can of Trader Joe’s cinnamon rolls and unraveled them, if that makes sense, and rolled them up like a palmier cookie. So fun! You could add food coloring to the frosting to make it pink and add sprinkles. Super cute! You can follow step by step recipe on Heidi’s Instagram page!

Happy Tuesday! Today we have Gale force winds and Happy Tuesday! Today we have Gale force winds and rain. I’m still blown away by this crazy weather. It feels like it’s never going to end. I just hope everyone is safe.

I’m sharing with you my corner of my living room. I love how open this space looks. I added greenery to give it a fresh look. I also stuck with mostly natural colors with an exception of some blues to bring my whole living room together.
