Shredded Barbecue Chicken and Homemade Rolls

Hi Everyone, I thought tonight I would do a dinner remake.  A while back I posted a recipe for homemade rolls that only take 40 minutes from start to finish.  I made these rolls again, but bigger then normal, because my husband wanted them for lunch and he likes a fat roll, I don’t blame him for that.  The rolls turned out perfect. I believe when I made these before, I weighed the dough to be 2 oz each, but this time around, I made them 4.5 oz each.  Last time I thought they were a perfect size for sliders or dinner rolls, but these babies were big!!  I wasn’t going to eat one, but you know me and bread, I just had to!!  But I did take a smaller roll, made just for me!!  This is what I ate. Yah baby yah!!  This was a FAT Barbecue Chicken Sandwich.  Nothing fancy here.  It’s so easy, all I did was thrown in 1lbs of frozen chicken in my crockpot with 12oz of BBQ Sauce.  I used Chipotle BBQ Sauce from Tahoe House.  It was amazing!  Soft fresh hot bread, and spicy shredded chicken with sauce dripping on it.  Oh my, it was amazing.  The calories are higher than I’d like, but hell it was worth it!!!  I saved my eating today just so I could have this for dinner.  This sandwich is what got me through my day! I made a lighter version of the chicken before, which used only 1/2 cup barbecue sauce and chicken broth, but honestly I like this version better, it’s more saucy!  But you can check out the other recipe here.

40 Minute Old Fashion Hamburger Rolls

Ingredients
  • 2 tablespoons active dry yeast
  • 1 cup plus 2 tablespoons warm water (110° to 115°)
  • ⅓ cup vegetable oil
  • ¼ cup sugar
  • 1 egg
  • 1 teaspoon salt
  • 3 to 3-3/4 cups all-purpose flour
Instructions
  1. In a large bowl, dissolve yeast in warm water.
  2. Add oil and sugar; let stand for 5 minutes.
  3. Add the egg, salt and enough flour to form a soft dough.
  4. Turn onto a floured surface; knead until smooth and elastic, about 3-5 minutes. Do not let rise.
  5. Divide into 12 pieces; shape each into a ball Place 3 in. apart on greased baking sheets. Cover and let rest for 10 minutes.
  6. Bake at 425° for 8-12 minutes or until golden brown. Remove from pans to wire racks to cool.
  7. Just freeze them, pull them out the day you want them and they'll defrost, pop in the oven for a few minutes to warm and they'll taste as fresh as the day you made them.
Notes
I made these bigger so I only got 8 Rolls. Calories per roll for 8 rolls (4.5 oz each): Calories: 282, Fat: 9, Sodium: 9, Potassium: 8.4, Carbs: 44, Fiber: 2, Sugar: 8, Protein: 6

Not great stats but it was because Hubby doesn't care about calories and he wanted his rolls big. So if you make them, use your judgement on size 2 oz, is a slider, 3 oz is average roll and 4.5 is a fat roll. These are 4.5 oz sizes. The smaller ones, makes for a great dinner roll (you'll get 17 out of this batch).

Saucy Barbecue Chicken in the Crockpot

Serves: 4 servings
Ingredients
  • 1 lbs frozen chicken breasts, boneless, skinless
  • 12 oz barbecue sauce - your favorite
  • Cooking Spray
Instructions
  1. In a crockpot spray the bottom and side with cooking spray. Add your chicken and barbecue sauce. Cook on low for 8 - 10 hours or on high for 4 - 5 hours. During the last hour of cooking, I like to shred the chicken with two forks. Just pull them apart. The chicken should shred very easily.

Makes 4 4oz servings Calories per serving: 255, Fat: 2, Cholesterol: 65, Sodium: 735, Potassium: 0, Carbs: 33, Fiber: 0, Sugar: 30, Protein: 26

Calories depend on the barbecue sauce you use. Mine was 2 tablespoons for 50 calories. A little higher than I like, but I think that's about the average. I scoped all my sauces and the lower 35 calorie one's are for 1 tablespoon, sneaky, sneaky, they sure no how to get you! Also my sodium was pretty high.

Don’t worry tomorrow I will have a healthier recipe, but this wasn’t to bad, just the bread was high (but I used a 3.5 oz one, not enough dough to make a bigger one) and the sodium was high in the sauce.  All in all my dinner could have been worse, I also had a spinach salad with cherry tomatoes, and on the sandwich I used 3 oz of chicken and the whole meal was about 498 calories.  That’s a lot of food for under 500 calories.  I’m ok with that.     I’d say any dinner under 500 calories is a pretty healthy one! and chicken is lean, so you can go a little bit over on the bbq sauce 😛

Happy Tuesday! One thing you guys know about me is Happy Tuesday! One thing you guys know about me is that I love Target. It’s my happy place. I get so excited each season to see all the new things that come out.

One thing I always love is there faux vase/pot flowers and plants. They are always so pretty and I want to buy them all. But there a couple of things that stops me. The biggest one is that I have no storage for them. Two, they seemed to have gone up in price. They seemed a little pricy to me.

For my arrangement, I used one of my canisters for the bathroom. I used floral foam to stick the stems in and I used the paper towel as a filler because I only had very little bit of moss. If I had more moss and I would probably not use the paper towel. This arrangement cost me $5.99.

Tip: If you look at Targets faux foliage stems only, they have a lot that are same of what use in there vases. The one I used was Hearth and Hand and was only $5.99 for a stem. The exact ones they used in there pots.

I’m sharing heart shaped cinnamon rolls that I made this weekend. I got the idea to make them from my friend Heidi @eleanorrosehome. She made the most delicious looking cinnamon rolls, that I couldn’t resist to make. So perfect for Valentines Day and sooooo easy!

I took a can of Trader Joe’s cinnamon rolls and unraveled them, if that makes sense, and rolled them up like a palmier cookie. So fun! You could add food coloring to the frosting to make it pink and add sprinkles. Super cute! You can follow step by step recipe on Heidi’s Instagram page!
