Breaded Chicken Fingers

Hi Everyone!

So far this week is going pretty good, and were half way through it!  Yah! Just to give you an update, I had my physical on Friday my results came in today and they said everything is normal.  Normal, me normal?  Huh, that’s new!  🙂

For workouts, I have been doing my kickboxing and strength training at least five times a week.  The weekends I have given myself a break, especially since I have been working on updating my blog.  I am happy to report this month I lost 2lbs.  I am 3lbs. away from my weight I had in November.  Dam, December was hard on me.  I have been eating more natural foods, and I haven’t had to many cookies, still making them, but more healthier.

Today’s recipe is breaded chicken fingers.  I made they wonderful little tenders with corn flakes.  I like cornflakes better than bread crumbs because you get more of a crunch and it tastes pretty close to being fried.


I used 1lbs of chicken breasts, I cut them horizontally and then I cut them into strips.  Dipped in egg whites and then the cornflakes mixture.  Bake for about 20 minutes and there done.  These would be so perfect for a party, like the Super Bowl.

For dips, I used ranch dressing and of course Franks Hot Sauce.  When I think chicken fingers, the first thing that comes to mind is Franks Hot Sauce!  Yum!!!  Check out my dinner plate!  Oh and those are Alexia Sweet Potato Waffle Fries!  I love them!!

Breaded Chicken Fingers

Ingredients:

1 lbs. boneless chicken breasts

1 egg white

1 Tbsp. water

1 1/2 cups cornflakes,crushed

2 tsp. Parmesan cheese

1/4. tsp italian seasoning

1/4 tsp. paprika

1 dash cayenne pepper

cooking spray

Directions:

Preheat oven to 400 degrees

Line a baking sheet with parchment paper or line the bottom with foil and place a cookie rack on top and spray with cooking spray, set aside

In a shallow bowl add egg whites and water

In another shallow bowl add cornflakes, cheese, and seasonings, stir until combined

Cut chicken breasts horizontally and then cut into strips.

Dredge the chicken in egg whites, then dip into cornflake mixture. Place on baking sheet. Do the same for all the chicken.

Bake for 18 minutes or until chicken is done.

Serving Size: 2.5 pieces each (I got 10 tenders total)

Calories per serving (4 oz):  170,  Fat:  2.4,  Cholesterol:  66,  Sodium:  215,  Potassium:  13,  Carbs:  9.8,  Fiber:  0,  Sugar:  .08,  Protein:  28.5

The calories for one tender is 68, not too Shabby!!!

These fingers were a hit for dinner, they were all gone in a matter of minutes.  There super easy to make too!!  If you have the time, you could soak the chicken overnight or for a few hours in buttermilk with hot sauce added for more of a Kentucky Fried Chicken taste.  I have done that and it’s so good, chicken is super tender, but tonight I didn’t have time.  If you do soak them, you can omit the egg whites and just dip the chicken in the cornflake mixture.

I am having so much fun with making these appetizers, hmm what can I make next?  Well my Friends, time for dinner cleanup, yuk!  Have a great day!!!

    GO YOU for hte two pounds of weight GONE. I did really well in December but January is kicking my ass. Hard. Ugh.

    I love the breading on these chicken fingers. You got the perfect amount of crunch in there!

      Thanks Joanne! It’s so hard getting back into the swing of things. Funny January is your rough month, normally thats my going to do it month, but it’s February now and I already broke out my cranberry biscotti that I had in my freezer. So stupid, why do I torcher myself? Funny how we do that!

    Always on the look out for something healthy my 5 yr old daughter will enjoy. She doesn’t like most of my chicken recipes! Going to try these minus the cayenne. Thanks for sharing and good luck with the weight loss. I have been struggling to get back into my workouts since the Holidays too!!!

      Oh I am sure your daughter will love them. Crispy finger food is the best! Plus it makes good use for crumbs at the bottom of the cornflakes box that no one eats. 🙂

    I am really into making homemade chicken fingers as well. Not a fan of the boxed version with cheap chicken and a zillion ingredients. I really need to do the combo of hot sauce and ranch next time!

      I’m not either, I like the homemade stuff. The ingredients in some of the packaged stuff is weird. Do you ever look at breaded fish? It say fish parts, yup it actually uses the word fish parts. How gross is that? I’ll take homemade anytime!

    I haven’t played around with using cornflakes instead of breadcrumbs, but I wouldn’t turn these down if there was Frank’s on the side!

I’m sharing with you my new centerpiece on my dining room table. It has a peach theme to match with my carrot cart. The beautiful white trays are from my friends at @feltcreativehome. I staggered the smaller tray onto the big tray by putting some candles under it. I think it looks pretty cool this way. You will be seeing these trays again as they are the perfect size for styling my decor. The trays come in a set of two. You can find them on Amazon under Felt Creative Home.

Even though it may not feel like Spring,  there is no reason why we can’t start prepping for it. It’s going to be time soon to plant flowers, add a floral wreath to the front door and of course a welcome mat to invite everyone to your home.

Happy Monday! I did a little bit of Spring cleanin Happy Monday! I did a little bit of Spring cleaning this weekend. I wanted to give my kitchen counters the less is more look.

I did have a very hard time taking my sink tray off the counter. I’ve had the tray there for years, so I thought I would change it up. Don’t be surprised if the sink tray makes its way back. 😂 I may add some herbs to my window sill for some fresh green color.

I used @cloth.bristle to clean my kitchen counters and sink. I love cleaning my sink with it. It makes it so sparkly and smells good too! Love that it’s all natural.

Happy Friday! Our next winter storm is here! It is Happy Friday! Our next winter storm is here! It is just awful out there. Heavy rain, high winds and hail. This is not a winter that we are used to in California.

My husband and I are not fancy when it comes to eating dinner. Since it’s just the two of us, we never use the dining room table, but always eat at the kitchen counter.

There is no reason why we can’t eat fancy at the kitchen counter. I am using my new placemats that I got from @vmathome. They are thick, water, stain resistant and can handle heat up to 350F degrees. I love the color and style of the placemats. They have a wide variety of styles and colors, along with matching table runners.

I styled my table with bright spring colors that I was inspired by carrots. I still have bunnies on the brain. lol I had fun with this place setting, it’s so nice to have dinner with a little style then having it on a plain plate and paper napkins.
