Hi Everyone!
Oh boy Sunday evening already! I’m not ready for the work week yet, it’s going to be a busy one! Ick! Well hopefully that means time will go by fast, hoping here! This weekend as you know I worked on changing my blog around, more good changes coming in a couple of weeks, but I decided to take a break on Sunday and catch up on some baking! Cooking and baking is so therapeutic for me! I just love to create!
I made some wonderful items, which I’ll share with you this week, I also made 4 batches of Peanut Butter! One for an auction I was in, so I’ll send that out tomorrow and the others, well, there for me! After lasts week Peanut Butter and Jelly Bars, I cleaned out my cupboards of Peanut Butter. That was scary!! Me, with no Peanut Butter? Crazy, I tell ya! I also made some Almond Coconut Granola and this!
Whats this your wondering? Buffalo Chicken Wing Wontons! And Holy Hot Dam were they good! I ate four for lunch and my Husband ate 15 of them! He must of liked them!! These are so simple to make and great for a Super Bowl party or as appetizers with your dinner! Hell their good to eat for no special reason.
Sorry I had to take a two minute break here. I have Food Network on and there show is about Hamburgers. I keep hearing about gooey cheese, soft buns and hunky meat! I don’t have anything to make a burger, but I had to go throw in a big batch of sweet potato fries! Yum!! Normally Sunday’s I make a nice dinner, but from all that cooking I did today, I’m not to hungry, nor do I feel like cooking dinner. Now baking cookies, well that’s a whole different story! 🙂
I made these Wontons with already cooked chicken, that I picked up from Trader Joe’s, used fat free cream cheese, lite cheddar cheese and of course Franks Hot Sauce! Anything that is supposed to be Buffalo wings, you must use Franks Hot Sauce! It’s the best!! You can make the mixture ahead of time, so when you need it, just place in your Wontons and bake for 15 minutes. Eazy Peezy!
Remember when I made Crab Wontons? It’s the same wonton wrappers. Did you know you can freeze them? I place them in a freezer bag and when I’m ready to use them, I place on the kitchen counter, they defrost fast! What I don’t use, I place in the fridge and in about a week, if I don’t use them, I place them back in the freezer. I love that!
Buffalo Chicken Wonton Wraps
Ingredients:
4 oz chicken, cooked, diced small.
1/4 cup Franks Hot Sauce (depends on how hot you like it)
1 oz Fat Free cream cheese
1 oz Lite Cheddar Cheese
20 Won Ton Wrappers
Spray Butter (I used I can’t believe it’s not butter spray)
Directions:
Preheat oven to 350 degrees
Line a baking sheet with parchment paper.
Cut your chicken into tiny pieces, as small as you can get it.
In a medium bowl add chicken, cream cheese,cheddar cheese and hot sauce. Mix together until well combined.
In a tiny bowl, add some water. This is for sealing the edges of your wontons.
Place 11/2 tsp. of chicken mixture in wonton wrapper, take your finger and dip in water and place along the edges of the wrapper (this will be the glue to seal the wrappers together). Fold wrapper over into triangle place on baking sheet. Do the same for the rest of the wrappers. Spray each wonton with about two sprays of butter.
Bake in over for 15 minutes, until lightly brown.
Serve with Light Blue Cheese or Ranch Dressing on the side.

Do you ave any plans for the Super Bowl? Having a big party? I have no idea what I am doing, probably nothing to exciting, but we shall see. I am sure it will be appetizer day for us! I love finger food, it’s totally my favorite!! I think it’s because I feel like I can eat more picking at everything, but it also can be dangerous because I can easily overdo it!!
