Banana Bread with Chocolate Chips

Hi Everyone,

I’m back, well kind of.  As some of you know I have been working with switching to self web-hosting and it has been a nightmare and I mean a nightmare!!!  First I lost all my information I imported from my other blog, then I had to manually enter it, oh, let’s just say to get back up and running, it took me about 7 hours and that was day one!  That was my exciting Friday night and I spent over 12 hours on Saturday trying to re-do my side bars and everything.  The worse part was trying to configure Facebook, that took 4 hours of hell!  Everything is pretty normal now, except I am sad to say I lost all of my subscribers through e-mail.  That just saddens me.  I e-mailed everyone and hope they’ll come back.  I just hate being a pain in the butt to others.  I’m so sorry!

You’ll notice my blog looks pretty much the same, except for my fonts.  I am going to work on trying to get a more peppy font, but I’m not sure how.  I am not a technical person at all. This just has been so stressful.  I decided this evening to give myself a break and do what I like and write my blog and on Sunday I plan on baking and cooking.  I need a break from the computer.

On the upside I am working with someone to help me design a new header and hopefully she can help make my blog beautiful, but until then your stuck with boring.  Thank you so much for being faithful and coming back to me.  I appreciate your visits, comments and more.  Thank you, thank you!

Ok, enough of this mush talk and technical talk, let’s get to talking about good things, like bread!  Yup!  I’m back with the bread thing again, but this bread is so good, ok there all good!  It’s actually my most requested bread for me to make.  I have been making this for months, but I never got to take any pictures of this moist delicious banana bread with little chocolate chips, because it would get eaten.


I actually made another kind of banana bread, same basic recipe, but I added oil amongst some other things and it wasn’t as healthy as this one, and I was told by several’s that they like this bread better.  I was shocked!  People like the healthier bread over the fatty one?  Amazing!  See healthy things can taste good!!  Just look at the banana in it! (it’s that mushy looking spot)

I just put a little bit of chocolate chips, just to give it that special pop!  I did afterall want to keep it more healthy!  But if you want, there’s nothing wrong with adding more chocolate.  Mmmm, chocolate!

I tried something new this weekend and I must share it with you.  Peanut Butter Cherrios!  Oh my are they good!  I kept eating them by the handful and I put them in my yogurt.  They are perfect!  Thanks Averie from Love Veggies and Yoga!  She mentioned them on her blog and I had to find them and sure enough my faithful Target had them!  Needless to say, I’m buying another box for work this week!  So good, you have to try them!

Have you tried anything new lately?  Care to share?  I love trying new things.  Normally cereal isn’t my thing, but these one’s are.  Dam Cherrio’s!  Now I’m thinking of having another handful!  That box is going to be gone soon!

Banana Bread with Chocolate Chips

Ingredients:

2 or 3 very ripe bananas

4 tablespoons butter, soften (I used Brumble & Brown)

2 eggs or 1/2 cup egg substitute

1/2 cup sugar

1 cup all-purpose unbleached flour

1/3 cup whole wheat pastry flour

3/4 teaspoon salt

1/2 teaspoon baking soda

1/4 teaspoon baking powder

1/2 teaspoon cinnamon

1/4 cup mini chocolate chips

cooking spray

Directions:

Preheat the oven to 350.

Spray either 1 loaf pan or two mini loaf pans with cooking spray, set aside.

In medium bowl add the banana.  Using a potato masher, fork, or spoon to squish the banana. It is alright for there to be small chunks of banana in the batter, but you want most of the banana to be reduced to mush.  Add the butter and eggs and mix well together.

In an another bowl combine sugar, flours, salt, baking soda, baking powder and cinnamon.

Combine the flour mixture with the banana mixture and mix until the ingredients are blended together.

Fold in chocolate chips.

Pour the dough into greased baking pans and bake until a toothpick inserted in the center comes out clean.

Small loaves take around 30 minutes, a regular size loaf takes around 40-50 minutes.

Remove from the oven.

After they have cooled for 5 or 10 minutes the loaves can be removed from the pan to cool. Once they are cool they can be eaten or individually wrapped and frozen.

Calories per slice:  123,  Fat:  2.8,  Sodium: 96,  Potassium:  90,  Carbs:  23,  Fiber:  1,  Sugar:  11.4,  Protein:  2.3

    I bought a box of peanut butter cheerios last week! SO. ADDICTIVE. I find myself sneaking handfuls way too often. My recent “new buy” was Plum Amazins (dried plums, fewer calories/sugar than regular raisins) and I have to say they weren’t my favorite. I much prefer the taste of raisins…I like that they’re sweeter, but I do have a sweet tooth the size of the universe!

    However, this banana bread looks delicious! I’ll have to try soon!

      Hi Anna, I know I about those cheerios! I bought two boxes today, on sale at Target, one for home and one for work. I love that cereal and I was never a fan of cheerios! I’m not super crazy of dried plums, but I do use them when I make a raw cookie dough, there sweet enough and they process nice and goes well with chocolate chips!! I need to squeeze in healthy where ever I can, but then again I do add chocolate! 🙂 Have a super great night!!!

    Such a pain isn’t it!? If you need a little help finding your way around, check out Blogging with Amy. I was on her site 10 times a day when I switched over from Blogger because she had so many great tutorials. It’ll all be worth it in the end, I promise!! So far it’s looking great!

    I am not a techy person either and when I was redoing my design last summer, I seriously think I spent every waking hour on it! And frustrated with it! This bread would definitely have been a welcome break 🙂 I love bananas and chocolate!

    I had three bananas that were on their deathbed and decided to use them for your banana bread. It turned out so moist and delicious. I omitted the chocolate chips because for some reason I was just craving plain banana bread and it was still delicious. Thank you for a yummy recipe!

Happy Tuesday! One thing you guys know about me is Happy Tuesday! One thing you guys know about me is that I love Target. It’s my happy place. I get so excited each season to see all the new things that come out.

One thing I always love is there faux vase/pot flowers and plants. They are always so pretty and I want to buy them all. But there a couple of things that stops me. The biggest one is that I have no storage for them. Two, they seemed to have gone up in price. They seemed a little pricy to me.

For my arrangement, I used one of my canisters for the bathroom. I used floral foam to stick the stems in and I used the paper towel as a filler because I only had very little bit of moss. If I had more moss and I would probably not use the paper towel. This arrangement cost me $5.99.

Tip: If you look at Targets faux foliage stems only, they have a lot that are same of what use in there vases. The one I used was Hearth and Hand and was only $5.99 for a stem. The exact ones they used in there pots.

I’m sharing heart shaped cinnamon rolls that I made this weekend. I got the idea to make them from my friend Heidi @eleanorrosehome. She made the most delicious looking cinnamon rolls, that I couldn’t resist to make. So perfect for Valentines Day and sooooo easy!

I took a can of Trader Joe’s cinnamon rolls and unraveled them, if that makes sense, and rolled them up like a palmier cookie. So fun! You could add food coloring to the frosting to make it pink and add sprinkles. Super cute! You can follow step by step recipe on Heidi’s Instagram page!
