Well were one step closer to Friday! Woohoo! Plans for the weekend? Not me as of yet! Probably just some good old baking and batch cooking! The batch cooking has really come in handy for me, I love it! It’s nice to grab a scoop of this, a scoop of that make a wonderful salad or top on eggs. My big batches tend to be butternut squash, rice, chicken and of course cookies and bread.
Tonight’s dish is a dish I made over the weekend. Its a wonderful tender barbecue chicken.
Look at the picture, I should dressed him up for you, but I was getting ready to chop this bad boy! This chicken is probably the most tender chicken I ever had. I don’t eat the skin, but my husband does and he said it was perfect. He looks burnt, but he’s not, it’s the BBQ Sauce I used.
I also made a side of salt potatoes to go with it. Salt potatoes are a back east potato dish I picked up at Letchworth Park. My Husband (boyfriend at the time) and I went to an art festival and it was cold and snowy, and they had these wonderful potatoes cooking in a big pot. There so good, but if your watching the sodium, this dish is not for you!
Normally the potatoes are smaller but my Husband likes the yukon gold. There a nice creamy potato. This recipe is so easy. All you do is put 1/4 cup salt in 6 cups of water, bring to a boil, add the potatoes and cook until tender. So easy! The tiny potatoes are awesome for this dish. Sorry I didn’t dress these up either, my Husband likes plain, no parsley or anything. So there kind of boring looking, but taste great!

Barbecue Roasted Chicken
Ingredients:
4 1/2 lbs. roasted chicken
salt and pepper
2 Tbsp. melted butter
2 lemons, cut in half
1/4 cup bbq sauce (whatever your favorite is)
Directions:
Take the giblets and neck out of the chicken, rinse the inside and outside of the chicken with cold water. Pat dry.
Sprinkle the inside of the chicken with salt & pepper and place lemons inside the cavity of the chicken. Place the bird in a roasting pan with an oven rack or if you don’t have a rack, place onions, celery, carrots at the bottom of the pan and let the chicken rest on that. You don’t want the chicken sitting in it’s own juices.
Rub the top of the chicken with melted butter and sprinkle with salt and pepper.
Preheat oven to 450 degrees F and cook whole (thawed) chicken for 10-15 minutes.
Then reduce the temperature to 350 degrees F (175 degrees C) and roast for 20 minutes per pound. For me it was an 1 hours 30 minutes. Temperature needs to register 165 to be done.
During the last 30 minutes of cooking, brush on the barbecue sauce.
Once chicken is done, place aluminum foil over the top and let it rest about 20 minutes.
Calories: Honestly, I don’t know how to calculate the calories for a roasted chicken.
This really was the most tender chicken I have had. It was $8.99 at Trader Joe’s, which is $1.00 more then a rotisserie chicken from the grocery store and I got way more meat and it tasted so much better. Well worth the hour and half cooking. Whats nice about roasted chicken you don’t need to do anything to it, it cooks it’s self.
Salt Potatoes
Ingredients:
1 1/2 lbs. Dutch Yellow Potatoes (baby potatoes are great for this recipe)
1/4 cup salt
6 Cups water
2 Tbsp. butter
Directions:
In a large pot bring water and salt to a boil. Add potatoes, and cook until potatoes are fork tender, about 20 minutes. Drain potatoes, add butter and let the potatoes so up the butter and serve.

Hope you enjoyed my chicken dinner, I know I did and the left overs were great in my salads. I also served dinner with a side of Brussels Sprouts.
Today in the mail was a great day! At work I got my photography book, so I’ll be reading that tonight and when I got home from work my Chris Fryteg workout DVD came out. I’ll talk more about that later. I’m just so glad my kickboxing is back! I worked up a nice sweat today and feel great I got a good workout in.
